This is one of our favorite potato recipes and so quick to fix while you're grilling or cooking something else. I used a food steamer for years and my daughter talked my daughter-in-law and me into going to a Taste of Home show and the demonstrater made these an easier way. This doesn't heat up the kitchen in the summer,...

Number Of Ingredients 12

5 or 6 medium red potatoes, washed and cubed, peel if you want to
1 medium onion, sliced
minced garlic, to taste
2 Tbsp extra virgin olive oil (evoo)
butter
large zip lock steamer bag (they come in a smaller size if you don't want to cook this amount)
1 cup monterrey jack shredded cheese (cheddar is good, too)
1/2 cup shredded mozzarella cheese
1 - 2 Tbsp parsley
salt and pepper, seasoning salt, garlic salt
toppings:
butter, more cheese, oscar meyer real bacon pieces, sour cream, chopped green onions or whatever toppings you prefer

Steps:

  • 1. Put EVOO into steamer bag. Add salt, pepper, parsley and seasonings. Close bag and mash bottom of bag to dissolve and distribute seasonings into oil, add a bit more oil if you need to. Add potatoes, onion, garlic and about a tablespoon of butter. Seal bag and cook on high in microwave for 7 minutes. Carefully shake bag, cook 7 more minutes. Shake again and continue to cook for 5 more minutes. (The instructions say to cook 14 minutes, but I add an additional 5 minutes.) Open bag (careful, it's steamy) and pour potatoes into serving bowl, add cheeses and butter, carefully - so as not to mash potatoes - mix to melt cheeses and butter into potatoes. Top with bacon pieces, sour cream or your choice of toppings. NOTE: When you can find a smoked cheese, that's really good, too, it gives the potatoes a really good smoky flavor, I have cut up smoked sausage and cooked in bag with potatoes, yumm. If I'm cooking corn, broccoli, etc. for that particular meal, I'll re-use the same bag and steam that, too.

These roasted potatoes are buttery, garlicky, and roasted to yummy perfection. The lemon gives it a wonderfully light tang that helps balance out the flavors.

Number Of Ingredients 9

1 1/2 lbs red potatoes (cut into 1 to 2 inch pieces)
1/4 cup salted butter (melted)
5 cloves of garlic (minced)
2 tsp kosher salt
1 tsp freshly ground black pepper
1/4 tsp paprika powder
Juice of 1/2 of a fresh lemon
1/3 fresh chives or parsley (chopped)
3/4 cup freshly grated parmesan cheese

Steps:

  • In large heavy pot, par boil potato pieces until just barely tender when pierced, 3-5 minutes, depending on size of your pieces. Drain and run under cold water.
  • Preheat oven to 375F, with rack on middle position. Line baking pan with foil and set aside.
  • Combine melted butter, garlic, salt, pepper, paprika, fresh lemon juice, and chives (or parsley) in a large bowl. Whisk together well, and toss well with drained potatoes until completely coated.
  • Spread coated potatoes in a single layer on prepared pan. Sprinkle evenly with parmesan cheese.
  • Bake uncovered, 35 min. or until cheese is melty and bubbly and golden brown. Actual bake time will vary depending on size of cut potatoes. Serve warm.

4 medium red potatoes, cut into 1 1/2 inch pieces
1 red bell pepper, seeded, finely chopped
1 tablespoon butter
1 1/2 teaspoons garlic powder
1/4 teaspoon salt

Steps:

  • Thoroughly mix in butter with the rest of the ingredients.
  • Seal bag and shake gently to further combine ingredients and distribute butter evenly.
  • Pat ingredients into single layer, place bag in microwave.
  • Microwave on full power for 7 minutes or until potatoes are tender.
  • Allow bag to stand for 1 minute before handling.
  • Shake bag to distribute butter and seasonings.
  • Carefully open bag and remove contents.
  • Garnish with 1 tablespoon coarsely chopped parsley if desired. Salt and pepper to taste.

2 pounds red potatoes, quartered
¼ cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes in an 8x8 inch baking dish.
  • In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  • Bake, covered, in preheated oven for 30 minutes. Uncover and bake until golden brown and tender when pierced with a fork, about 10 minutes more.

1/2 cup milk (or more as desired)
2 tablespoons butter
1/8 teaspoon salt

Steps:

  • Peel potatoes if desired.
  • Cut potatoes into small (1-1½ inch) pieces of roughly uniform size.
  • Put potatoes into large Zip'n Steam™ bag and seal bag.
  • Pat potatoes into single layer and place in microwave.
  • Microwave on full power for 7½ minutes, or until all potatoes are tender and smash easily when pressed.
  • If needed, microwave for additional 30-second intervals until all potatoes are tender.
  • Allow bag to stand for 1 minute before handling.
  • Carefully open bag, but leave cooked potatoes in bag.
  • Add milk, butter, and salt to bag.
  • Squeeze air out of bag and seal.
  • Hold top edge of bag in one hand and mash potatoes by squeezing bag.
  • If needed, add additional milk (1 Tablespoon at a time) and continue mashing until you reach your desired consistency.
  • Add additional salt or butter as desired, mash until combined.

These are so good. They use the new Ziploc Zip N Steam bags. I used the large size. So simple and so good. And idiot-proof, because I used the bag upside down, and they were fine. I would think you could make these in a regular steamer, but I don't have one, so I don't know how!! Give these a try, I think you'll be as thrilled as I was!

3 large potatoes, peeled and chopped
1/2 tablespoon minced garlic
1/2 teaspoon ground black pepper
1/8 cup grated parmesan cheese
1/2 teaspoon kosher salt

  • Make sure the potatoes are all chopped about the same size, so they will cook evenly.
  • Put all ingredients into the Zip N Steam Bag, and smoosh them around so they get all good and mixed up.
