1 tablespoon olive oil
3 cloves garlic (peeled and smashed)
1 (15 ounce) can tomato sauce (high-quality)
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon Salt

Steps:

  • Heat oil in a small saucepan over medium-high heat until shimmering. Add garlic cloves and sauté until browned, stirring occasionally to prevent scorching, about 3 to 4 minutes. Remove garlic and discard.
  • Stir in tomato sauce, basil, oregano, and salt. Reduce heat to medium and simmer until flavors have blended, about 10 minutes. Keep warm over low-heat until serving time, or cool completely and store covered in the refrigerator.

It would also be a good accompaniment to many of the purhcased (frozen) appetizers such as chicken fingers, cheese sticks etc. Found on another site, but was originally from Gourmet magazine.

Number Of Ingredients 12

1/3 cup onion, finely chopped
1 clove garlic, finely chopped
1 1/2 teaspoons fresh ginger, peeled and finely chopped
3/4 teaspoon cumin
1/2 teaspoon hot paprika
1/4 teaspoon cinnamon
1 pinch cayenne
1 pinch ground cloves
1 tablespoon olive oil
1 1/2 tablespoons cider vinegar
1 (15 ounce) can tomatoes, coarsely chopped (reserve juice)
2 tablespoons brown sugar

Steps:

  • Saute onion, garlic, ginger and spices in olive oil in large saucepan over moderately low heat.
  • Stir frequently until onion is softened, about 4 minutes.
  • Stir in vinegar and simmer over moderately low heat about 1 minute.
  • Add tomatoes with juice and brown sugar.
  • Increase heat slighly and simmer, stirring occasionally until slightly thickened, about 30 minutes.
  • Cool slightly.
  • Puree sauce in blender or food processor until smooth.
  • Be careful when blending hot liquids.
  • Serve at room temp or slightly warmer.

1/4 cup KRAFT Zesty Italian Dressing
1/2 cup chopped onions

Steps:

  • Fill Dutch oven with water; bring to boil. Meanwhile, cut small "x" in bottom of each tomato. Carefully add tomatoes to boiling water; cook 20 sec. Drain. Remove and discard peels and seeds from tomatoes. Finely chop tomatoes; set aside.
  • Heat dressing in same pan on medium heat. Add onions; cook 5 min., stirring frequently. Add tomatoes; cook 20 min. or until thickened, stirring frequently.

4 pounds roma (plum) tomatoes, chopped
1 cup butter, cubed
6 cloves garlic, chopped
¼ cup chopped fresh thyme
2 tablespoons cracked black pepper
2 teaspoons kosher salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper or aluminum foil.
  • Toss tomatoes, butter, garlic, and thyme together in a bowl; pour onto prepared baking sheet.
  • Roast in the preheated oven until tomatoes are slightly charred and have reduced in size, about 1 hour.
  • Transfer tomato mixture to a blender; add black pepper and kosher salt. Blend until smooth.

Number Of Ingredients 7

2small fresh red chillies , seeded
2 red peppers , seeded and roughly chopped
2 garlic cloves , crushed
1 shallot , roughly chopped
400g can chopped tomato with juice
100g dark muscovado sugar
3 tbsp sherry vinegar

Steps:

  • Blend the chillies, peppers, garlic, shallot and tomatoes in a food processor until smooth.
  • Pour the purée into a stainless steel saucepan, add the sugar and vinegar, then bring to the boil, stirring from time to time. Reduce the heat and simmer for 40-60 mins until thick, stirring regularly, especially in the latter stages of cooking.
  • Pour into large, warm sterilized jars then cool. This will keep for up to 2 weeks in the fridge.
