Steps:
- Cook chicken in hot oil in large skillet until lightly browned.
- Stir in broth, tomato sauce, seasoning mix, and bring to a boil.
- Reduce heat, cover, and simmer 5 minutes.
- Stir in corn and pepper, and bring to a boil.
- Stir in rice.
- Cover and remove from heat.
- Let stand for 5 minutes. Fluff with fork.
- Serve with cheese and tortilla chips.

ZESTY TACO SALAD
A taco salad with a twist. My grandma used to make this for me when I was a kid and just the other day I was down visiting her and she made it for a gathering and it brought back good memories.

Steps:
- 1. Combine lettuce, tomatoes, green onions, and Doritos chips in large salad bowl.
- 2. Cook the meat in a skillet and add taco seasoning per package directions. Don't forget to drain the grease.
- 3. After cooking meat spread onto ingredients in salad bowl.
- 4. Toss and then add Zesty Italian dressing and toss once more.
ZESTY TACO SALAD
Steps:
- Brown ground beef, add taco seasoning and prepare as package states.
- As ground beef is cooking, prepare lettuce and add bottle of salad dressing and cheese.
- When ground beef is finished cooking, put 1 to 1 1/2 cups of lettuce mixture on plate, 1/4 of taco meat on top of lettuce mixture. Top with crunched up cool ranch flavored chips. Very tasty!
