We grow potatoes and found this recipe is a great way to use up leftover mashed potatoes. This dish is a favorite among our family and friends.

3 cups mashed potatoes (prepared with milk)
1 large egg, beaten
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted
1-1/2 teaspoons salt
1 can (8 ounces) pizza sauce
3 ounces sliced pepperoni
4 fresh mushrooms, sliced
1 cup shredded mozzarella cheese

Steps:

  • In a bowl, combine potatoes, egg, Parmesan cheese, butter and salt. Press onto bottom and up the sides of a greased 10-in. pie plate. Spread pizza sauce over potato mixture to within 1/2 in. of edges. Top with pepperoni and mushrooms. Sprinkle with mozzarella cheese. Bake at 400° for 25-30 minutes or until heated through and cheese is melted.

10 oz. POLLY-O Fresh Mozzarella Cheese, divided
2 cups tomato sauce
1 cup POLLY-O Original Ricotta Cheese
1 lb. ziti pasta, cooked, drained
1/2 tsp. salt
1/4 tsp. black pepper
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Preheat oven to 350°F. Chop 6 oz. of the mozzarella cheese; place in large bowl. Cut remaining 4 oz. mozzarella cheese into thin slices; set aside for later use. Add tomato sauce and ricotta cheese to chopped cheese; mix well. Add pasta, salt and pepper; mix lightly.
  • Pour into lightly greased 2-quart baking dish; top with sliced cheese. Sprinkle with Parmesan cheese.
  • Bake 15 to 20 minutes or until heated through.

1 large potato, cooked and mashed
15 g butter
1 tablespoon grated tasty cheese (Mature Cheddar)
1 small tomatoes, sliced
3 sliced hot salami
4 button mushrooms, sliced
1/4 green pepper, chopped
60 g grated mozzarella cheese

Steps:

  • Place potato, butter and tasty cheese (mature cheddar) in a bowl and mix to combine.
  • Place the potato mixture in a greased nonstick frying pan and spread to cover the base.
  • Arrange the salami, tomato mushrooms and green pepper over potato.
