This dressing is great on my blackened Cajun and pear salad with goat cheese. The tart pop of the dressing complements chicken, grilled fish, and pear!

¼ cup extra-virgin olive oil
1 ½ tablespoons orange juice
1 ½ tablespoons lime juice
1 tablespoon honey
1 tablespoon coarsely ground herbes de Provence
1 teaspoon rice wine vinegar
½ teaspoon salt
¼ orange, zested
¼ teaspoon prepared mustard

Steps:

  • Whisk olive oil, orange juice, lime juice, honey, herbes de Provence, rice wine vinegar, salt, orange zest, and mustard together in a bowl until the oil emulsifies.
  • Cover bowl with plastic wrap and refrigerate for 2 hours. Whisk vigorously before serving.

Enchilada Soup with Zesty Lime Vinaigrette Salad image

This delicious soup and zesty lime vinaigrette salad can be packed ahead for a healthy lunch. Just toss the salad with the vinaigrette before serving.

2 tablespoons olive oil
1 1/2 tablespoons fresh lime juice
1 tablespoon chopped fresh cilantro
1 1/2 teaspoons honey
1/8 teaspoon salt
1 small clove garlic, chopped
Dash fresh ground black pepper
4 cups bite-size pieces spring salad greens
1/3 cup matchstick-cut carrots
1 medium tomato, cut into wedges
1 can Progresso™ Light cheesy chicken enchilada soup

Steps:

  • In tightly covered container, shake Lime Vinaigrette ingredients.
  • In medium bowl, toss salad greens, carrots and vinaigrette. Top with tomato wedges.
  • Heat soup as directed on can. Serve with salad.
