PORK STEW
4-5 boneless pork chops cut into medium cubes
1 medium onion diced
3 green onions sliced
7-8 celery stalks chopped
1 1/2 c *each*- fresh parsley and fresh dill chopped
1/4 c olive oil
1 tsp *each*- salt & pepper
water
LEMON SAUCE
2 lemons squeezed or 1/3 c bottled lemon juice
2 extra large eggs separated (yolk from egg white)
pinch of salt & pepper

Steps:

  • 1. Cut and cube your pork chops and set aside.
  • 2. Dice your celery and set aside.
  • 3. Chop your onion and set aside.
  • 4. Finally chop up your fresh parsley and dill and set aside.
  • 5. In a sauce pan of choice, turn burner to medium high and add your olive oil. When your oil is heated add your cubed pork and saute a few minutes. Once the meat is just starting to not look pink anymore, add your salt & pepper.
  • 6. Now add your onion, and again saute for another minute or so. Add your celery and saute for 1 more minute.
  • 7. Finally, add your fresh herbs, saute for just about 1 minute.
  • 8. Add enough water to roughly cover the pork (about 4-5 cups). Turn down heat to low, cover and let simmer stirring occassionaly for about 45-60 minutes, or till pork is fork tender.
  • 9. At the last 15 minutes of cooking for the stew, prepare your lemon sauce. Gather your ingredients. Eggs, separated, lemon juice, pinch of salt & pepper.
  • 10. In a medium bowl, place your egg whites and using a whisk, whisk them till light and frothy.Once they are light and frothy, add your freshly squeezed lemon juice, or bottled juice and incorporate. Add your pinch of salt & pepper.
  • 11. The stew should be completely done now. Turn off the heat, and using a ladle, ladle 2-3 ladle fulls of broth ONLY to the beaten frothy eggwhite and lemon mixture. This is tempering the eggwhites so the eggs will not become scrambled when added to the stew. Once you have tempered the eggwhites, add the egg yolks, and beat well.
  • 12. Turn the heat back on the stew, and pour the eggwhite/lemon mixture back into the sauce pan. Let the stew cook for 1 more minute or so, to ensure eggs are cooked thru.
  • 13. Turn off heat, and place in bowls or plates with your comfort side of choice... and our is potatoes!! Enjoy!

1 1/2 tablespoons flour
1/2 teaspoon salt

4 ounces trimmed and sliced portabella mushrooms
2 cups sliced onions
1 cup dry white wine

Steps:

  • Toss the pork cubes in flour, salt, pepper and paprika, and in a large saucepan, brown them in the olive oil

  • Stir in the wine, basil, coriander and rosemary, scraping up any browned bits on the bottom of the pan

2 Anaheim peppers
1 red bell pepper
4 Roma tomatoes
1 onion, outer "paper" skin removed
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon red chili flakes
2 1/2 pounds pork shoulder (or pork butt), cut into small chunks
2 tablespoons flour
Olive oil, plus a drizzle
4 cloves garlic, chopped
1/2 cup tequila (optional)
1/2 cup chicken stock, warm
3 tablespoons cilantro leaves, chopped, divided use
2 teaspoons lime zest
2 tablespoons fresh lime juice

Steps:

  • To fire-roast the peppers, the tomatoes and the onion, place them directly onto the burners of your gas stove (no oil), and with a medium flame, allow the flames to char the skins, turning the vegetables every few minutes with tongs, for roughly 10-15 minutes (you can also use a grill or grill pan and grilling them until the skins are completely charred).
  • Once vegetables are charred, place them into a big bowl, cover with plastic wrap, and allow them to steam for about 20 minutes; after 20 minutes, pull the skins from all of the vegetables, including the outer, charred layer of the onion, and remove the seeds/membranes and core/stem from peppers, and give everything a rough chop, keeping the peppers and onions separate from the tomatoes; set aside for a moment.
  • In a small ramekin, combine the sea salt, cracked black pepper, cumin, smoked paprika and red chili flakes with a fork, and set aside for a moment; this will be your "seasoning mix".
  • Place the pork shoulder chunks into a small bowl, and add about half of the seasoning mix from the ramekin to the pork; add the flour next, and toss all the ingredients well, to coat all the pieces.
  • Place a heavy bottom pot (or braising pot) over high heat, and add about 2 tablespoons of olive oil; once the oil gets hot, add the pork pieces into the oil, and allow the meat to sear and caramelize until golden brown, about 4 minutes per side; once browned, remove the meat from the pot, and set aside for a moment.
  • Next, add a drizzle more olive oil to the pot, and add in the chopped peppers and onions, along with the remaining half of the seasoning mix from the ramekin, as well as the garlic, and stir to combine and allow to lightly caramelize for a minute or two.
  • Then, if using the tequila, deglaze the bottom of the pot by carefully adding in the tequila (keep it away from the flames), and allow it to reduce for about a minute, scraping up the browned bits from the bottom of the pot with your spoon.
  • Once slightly reduced, add in the chopped fire-roasted tomatoes, as well as the browned pork pieces with their juice, and add in the hot chicken stock and stir to combine; cover and gently simmer the stew for 2 - 2 1/2 hours hours, or until the meat is fork tender; use a fork the shred/break the meat up into the sauce a little bit, leaving some bigger chunks for texture.
  • To finish the stew, add in 2 tablespoons of the chopped cilantro, the lime zest and lime juice, and stir; serve the stew over the roasted potatoes or rice, and garnish with a sprinkle of the remaining 1 tablespoon of the chopped cilantro.

1 medium white onion, quartered
2 cloves garlic
1/2 chipotle in adobo sauce, plus 1 tablespoon of the sauce
2 tablespoons vegetable oil
1 large pork tenderloin, trimmed and cut into 1-inch chunks (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper

One 8-ounce sweet potato, peeled and cut into 1/2-inch chunks

Steps:

  • Puree the tomatoes, onions, garlic, chipotle and adobo sauce in a food processor until completely smooth.
  • Heat the oil in a large Dutch oven or pot over medium-high heat until nearly smoking. Add the pork in a single layer, season with 1 teaspoon salt and 1/2 teaspoon pepper and cook, undisturbed, until beginning to brown, about 2 minutes. Turn the pieces and cook until brown, about 1 minute more. Dust the meat with the chili powder, and add the tomato puree, sweet potatoes, chicken broth, 1/4 teaspoon salt and a few grinds of pepper. I've long adored hominy, the earthy dried corn kernels you find in pozole, the chile-laced Mexican stew. When I saw dried heirloom hominy for sale online, I bought some. I knew that having it in the cupboard when a hominy craving struck was the best insurance against cheating and buying the canned version. Like dried beans, dried hominy needs a good long soak and a lengthy cooking. But there's nothing difficult about the process. Many pozole recipes call for the finished stew to be garnished with shredded cabbage. But after bingeing on cabbage recently, I decided to take a different route, and stirred slivered collard greens into the pot at the end of cooking. They turned silky and soft and offered a nice contrast to the chewy hominy, the brawny pork and the spicy thick broth.

1 pound dried hominy
3 pounds boneless pork butt, cut into 2-inch-square chunks
1 tablespoon kosher salt, plus more to taste
1 teaspoon black pepper

1 tablespoon New Mexican chile powder (or less, to taste)

Steps:

  • Soak the hominy in plenty of water overnight. Drain.
  • Season the pork all over with 1 teaspoon salt and the black pepper. Heat the oil in a large pot over medium-high heat. Sear the meat in batches until well browned on all sides. Transfer to a plate.
  • Add the onion to the pot and cook until soft, 5 to 7 minutes. Add the garlic, chile powder, cumin, oregano, bay leaf and cinnamon. Cook 1 minute. Return pork to pot. Stir in the chipotle, hominy, beer, 6 cups water and 2 teaspoons salt. Simmer, covered, for 1 hour. 2 pounds boneless pork butt, trimmed of fat, cut into 1-inch cubes
2 tablespoons cider vinegar
1 tablespoon vegetable oil
Coarse salt and freshly ground black pepper
1 medium red onion, finely chopped
1 tablespoon finely chopped garlic
1 tablespoon cocoa powder
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 cup coarsely chopped chipotle chiles, in adobo sauce
1 sweet potato, peeled and cut into 1/2-inch pieces
1 medium turnip, peeled and cut into 1/2-inch pieces
Cooked basmati rice, for serving (optional)
1 plum tomato, seeded and chopped, for garnish
Coarsely chopped fresh cilantro, for garnish

Steps:

  • Place pork in a shallow baking dish and pour over vinegar; turn to coat. Let stand for 15 minutes and up to 2 hours.
  • Preheat oven to 350 degrees. Heat vegetable oil in a Dutch oven. Season pork with salt and pepper and, working in batches, add to Dutch oven. Cook until browned on all sides; transfer pork to a plate and set aside.
  • Add onion, garlic, cocoa powder, cumin, cinnamon, cardamom, and chipotle chiles to Dutch oven. Cook until onion is soft and spices are fragrant, adding a little water if mixture begins to stick to the bottom of the pot.
  • Return pork to Dutch oven; stir to combine. Add 1 cup water, sweet potatoes, and turnips; do not stir. Cover and transfer to oven. Cook until pork is tender and vegetables are soft, about 1 1/2 hours. Serve hot with rice, if desired, and garnished with tomato and cilantro.
