1 cucumber, halved
2 green apples, quartered
1 lemon, halved

Steps:

  • Pour water into a glass and place beneath the spigot of a juicer.
  • Process first the cucumber, waiting about 20 seconds between halves. Do the same with each apple quarter. Finally juice the lemon halves.
  • Stir juice vigorously to blend.

My mother had a creative way of using the apple cores and peels leftover from making apple pie: to make homemade apple juice. Store-bought apple juice is tasty, but it has a strong, distinct flavor with almost a hint of bitterness. To those with sensitive palates, it can be a little strong at times. Homemade juice, however, tastes surprisingly different as it is lighter and pleasantly sweet without the kick. Besides using a juicer, this is a super-easy way of making apple juice.

3 peels and cores from red apples - seeds removed
5 cups water
¼ cup white sugar

Steps:

  • Place the peelings and cores into a saucepan, and stir in the water. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, until the water picks up the apple flavor and color, about 30 minutes. Drain the apple juice, discarding solid pieces, and stir in the sugar until dissolved. Allow to cool before drinking.

When we shared some of our homegrown citrus with neighbors-Canadians who were spending the winter here-the wife "repaid" us by giving us this recipe! The curd keeps well, and it can be used for any meal. 3 large eggs, lightly beaten
2 cups sugar
3/4 cup lemon juice
2 teaspoons grated lemon zest
1 cup butter, cubed

Steps:

  • In a large heavy saucepan, whisk the eggs, sugar, lemon juice and zest until blended. Add butter; cook over medium heat, whisking constantly, until mixture is thick enough to coat the back of a metal spoon and thermometer reads at least 170°. Do not allow to boil. Remove from heat immediately. Transfer to a small bowl; cool. Press plastic wrap onto surface of curd. Refrigerate until cold., Spread on muffins or rolls, or serve over waffles or ice cream.

2 bottles (64 ounces each) unsweetened apple juice
20 cinnamon sticks (3 inches)
1/3 cup whole cloves
2 medium lemons

Steps:

  • In a 5- or 6-qt. slow cooker combine apple juice and cinnamon sticks. Place cloves on a double thickness of cheesecloth or a coffee filter. Gather corners of cloth to enclose cloves; tie securely with string. Add to slow cooker. , Using a citrus zester, remove zest from lemons in long narrow strips. Cut lemons crosswise in half; squeeze juice from lemons. Stir zest and juice into slow cooker., Cook, covered, on low until heated through, 3-4 hours.
