2 cups torn red leaf lettuce
1 small tomato, cut into wedges
4 cucumber slices, halved
2 radishes, sliced
1 red onion slice, quartered
2 tablespoons sliced ripe olives
1 tablespoon crumbled feta cheese
DRESSING:
1 tablespoon red wine vinegar
2 teaspoons water
2 teaspoons olive oil
1 garlic clove, minced
1/4 teaspoon sugar
1/8 teaspoon salt
Dash pepper

Steps:

  • In a small bowl, combine the lettuce, tomato, cucumber, radishes, onion, olives and feta cheese. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat.

This recipe is on the Near East plain couscous box. I'm certain that most of the couscous flavors would work just as well in this recipe. It's a bit different than the others posted, so I'm adding it to Recipezaar.

Number Of Ingredients 9

1 (7 5/8 ounce) package couscous
1/4 teaspoon black pepper
2 tablespoons lemon juice
3 tablespoons olive oil
2 large tomatoes, chopped
1 medium zucchini, thinly sliced
1/2 cup fresh basil, cut into strips
1/3 cup green onion
3/4 cup feta cheese

Steps:

  • Prepare couscous according to package directions, omitting butter or olive oil, and adding black pepper to water.
  • In large bowl, combine prepared couscous, lemon juice and olive oil.
  • Allow to cool to room temperature.
  • Add tomatoes, zucchini, basil and green onions.
  • Chill at least four hours.
  • Just before serving, stir in feta cheese. Or, you may top with feta cheese as a garnish.
  • May be served over romaine lettuce or fresh spinach.
  • May be used as a vegan recipe if served without the cheese.
  • Cooking time is minimum chilling time.

This recipe is a modification from the winner of a couscous contest put on by Near East. We left out the green onions. We also used grape tomatoes instead of regular to add flavor. Very good!

1 cup couscous, prepared according to box
1/4 teaspoon black pepper
2 tablespoons lemon juice
3 tablespoons olive oil
1 pint grape tomatoes
1 medium zucchini, halved and thinly sliced
1/2 cup fresh basil, cut into strips
3/4 cup crumbled feta cheese

Steps:

  • Can be served hot or cold. If served hot, put zucchini in with couscous as it is being cooked (we prefer it hot). If served cold, chill for 4 hours before serving.
  • Prepare couscous according to box directions using chicken broth or water, adding the black pepper, lemon juice, and olive oil.
  • Once couscous has reached proper consistency, add remaining ingredients.

Greek Pasta Salad with a creamy, garlicky dressing, and crunchy vegetables. Gets better after the flavours mingle for a day. Keeps several days in the fridge - I make it on Sunday for lunches for the week.

1 cup olive oil
4 tablespoons white wine vinegar
6 garlic cloves, minced
1 1/4 teaspoons dried oregano
1 1/4 cups crumbled feta cheese (with herbs, if possible)
1 1/3 cups milk (or buttermilk)
ground black pepper, to taste
1 lb penne pasta (or any other chunky pasta)
1 red pepper, chopped
1 yellow pepper, chopped
1 orange bell pepper, chopped
2 pints cherry tomatoes
1 red onion, chopped
1 English cucumber, chopped
1/2 cup kalamata olive, sliced and pitted (more, to taste)

Steps:

  • Combine dressing ingredients, and use blender or immersion blender to combine.
  • Cook pasta, drain, and rinse.
  • Add dressing and salad ingredients; toss well to coat pasta and vegetables.
  • Refrigerate until ready to serve.
