1 cup (2 sticks / 226 g) unsalted butter, (melted)
1¾ cups (350 g) light brown sugar, (packed)
3 large eggs, (room temperature)
2 tablespoons lemon juice
1 teaspoon lemon zest
2½ cups (285 g) all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking powder
½ teaspoon kosher salt
1 cup confectioners' sugar
2 tablespoons water, (or lemon juice (if want more lemon flavor))

Steps:

  • Preheat oven to 350°F and prepare a 9x9-inch pan by lining it with parchment paper (or lightly grease and flour). (You could use a 9x13-inch pan for more servings, but the bars will be thinner.)
  • In a large bowl, combine the melted butter and brown sugar. Stir well.
  • Add the eggs one at a time, stirring well after each addition.
  • Stir in the lemon juice and lemon zest.
  • In a separate, medium-sized bowl, whisk together the flour, cornstarch, baking powder, and salt.
  • Gradually stir the flour mixture into the butter and egg mixture until completely combined.
  • Spread the batter evenly into the prepared pan. Bake 35-45 minutes, or until the edges are turning golden brown. (If you are using a 9x13-inch pan, bake for 25-30 minutes.)
  • Allow brownies to cool before glazing.

1/2 cup unsalted butter, softened
3/4 cup flour
2 eggs, large
2 tablespoons lemon zest
2 tablespoons lemon juice
3/4 cup granulated sugar
1/4 teaspoon sea salt
4 tablespoons lemon juice
8 teaspoons lemon zest
1 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees.
  • Grease an 8×8 inch baking dish with butter and set aside.
  • Zest and juice two lemons and set aside.
  • In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.
  • In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined.
  • Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy.
  • Pour into baking dish and bake for 23-25 mins, should turn golden around the edges.
  • Allow to cool completely before glazing. Do not overbake, or the bars will dry.
  • Filter the powdered sugar and whisk with lemon zest and juice.
  • Spread 1/2 the glaze over the brownies with a rubber spatula and let glaze set.
  • Spread second 1/2 the glaze over the bars, and let it set (not harden like most).
  • Cut into bars and serve.

1 cup unsalted butter, softened
1 1/2 cups sugar
2 tablespoons lemon zest
4 large eggs
2 tablespoons fresh lemon juice
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 cups powdered sugar
3 tablespoons fresh lemon juice
4 tablespoons lemon zest

Steps:

  • Brownies:.
  • Preheat oven to 350 degrees and line a 9x13 baking pan with parchment paper.
  • Using a large bowl, whisk together the flour and baking powder.
  • Using a standing mixer, beat together the butter, sugar, lemon juice and lemon zest until light and fluffy.
  • Beat in eggs, one at a time until combined.
  • Gradually beat in the dry ingredients until combined.
  • Pour batter into the baking pan and bake in the oven for 25-28 minutes or until a toothpick comes out with moist crumbs. Make sure to not over bake.

  • Pour the glaze over the lemon bars and spread evenly.
