1/2 cup real mayonnaise (use Hellman's or Best Foods)
1/3 cup tomato ketchup
1/3 cup prepared horseradish
1/4 cup prepared yellow mustard
1 tablespoon granulated sugar
2 teaspoons lemon juice

Steps:

  • COMBINE all ingredients in a resealable container.
  • SERVE with onion rings, burgers, sandwiches, crab cakes, batter-fried fish and prawns; ENJOY!
  • STORE in same container in refrigerator for up to 1 week.

1 1/2 teaspoons prepared horseradish
1/2 cup low-fat mayonnaise
1/2 teaspoon sugar

  • Mix ingredients together in a bowl with a tight lid.
  • Refrigerate for an hour.

1 lb ground beef
1 c italian bread crumbs
1/4 c milk
4 eggs
3/4 c parmesan cheese
vegetable oil
DIPPING SAUCE
1 jar(s) roasted red pepper 7oz
1/2 c catalina dressing
italian seasonings

Steps:

  • 1. Preheat oven to 400. Mix ground beef with 3/4c breadcrumbs, parm,3 eggs, and milk. Shape into 1inch balls.
  • 2. Set up 3 bowls one w/cup flour s&p, 1 w/1 egg and 2tsp water and wisk, one w/1/4 cup bread crumbs. Drench meatballs thru drenching station, set on baking sheet. Prepare frying pan with veg oil. Fry a few meatballs at a time til golden.
  • 3. Place on baking sheet in oven for 15min.
  • 4. Red dippping sauce 1 7oz jar roasted red pepper 1/2 cup catalina dressing 1tsp italian seasonings Combine ingredients and puree. Serve on side for diping meatballs.

* For Crabcakes:
1 * 1 lb. Lump Crab Meat, picked over
1 * 1 C. Nacho Cheese Tortilla Chip Crumbs (Doritos) (*see note), divided
2 * 2 T. Poblano Chile, stemmed, seeded, finely chopped
2 * 2 T. Green Onions, chopped
1 * 1 T. Cilantro, chopped
1/4 * 1/4 C. Mayonnaise
2 * 2 T. Bottled Salsa
* Juice of Half of a Lime
1 * 1 Egg, slightly beaten
* Dash of Tabasco Sauce
3 * 3 T. Butter or margarine (not spread-type)
3 * 3 T. Canola Oil
*
* Mango-Chipotle Sour Cream Dipping Sauce
1 * 1 Chipotle Chile, canned in adobo sauce
1 * 1 t. of the Adobo Sauce
1 * 1 Mango, peeled, seeded and diced into 1/2-inch pieces, divided
1 * 1 t. Honey
3/4 * 3/4 C. Sour Cream
* Juice of Half a Lime
1 * 1 T. Cilantro, chopped

Steps:

  • Combine crab meat, 1/4 C. tortilla chip crumbs, poblano chili, green onions, cilantro, mayonnaise, salsa, lime juice, egg and Tabasco sauce. Refrigerate about 45 minutes. Shape into 24, 1 1/2-inch miniature crab cakes. Roll in remaining tortilla chip crumbs. Heat butter or margarine and oil in a heavy skillet. Fry crab cakes until golden brown. Drain on paper towels. Serve with Mango-Chipotle Sour Cream Dipping Sauce: Place chipotle chili, adobo sauce and 1/2 of the mango pieces in a food processor bowl. Process until pureed. Stir in honey. Place sour cream in a medium bowl and stir in mango-chipotle puree, lime juice, the remaining chopped mango and remaining 1 T. cilantro. Refrigerate until ready to use. *Note: Process tortilla chips in food processor until of fine crumbs.

1 tablespoon extra-virgin olive oil
1 teaspoon minced garlic (1 clove)
1 can (8 ounces) tomato sauce
1 tablespoon fresh lemon juice
Kosher salt and freshly ground pepper

Steps:

  • Heat oil in a small saucepan or skillet over medium. When it shimmers, add garlic and cook until fragrant and just beginning to turn golden, about 2 minutes.
  • Add tomato sauce and 2 tablespoons water; simmer for 1 minute. Remove from heat, stir in lemon juice, and season to taste. Transfer to a bowl and serve warm. This sauce can also be made and refrigerated in an airtight container up to five days ahead. When ready to serve, gently reheat until warm.
