50g flaked almonds
2 tbsp mixed seeds (we used pumpkin, sunflower and linseed)
800g Brussels sprouts, halved and finely shaved on a mandoline
1 small red onion, halved and thinly sliced
small bunch of mint, leaves picked and finely chopped
50g dried cranberries
1 lemon, zested and juiced
1 tbsp white wine vinegar
1 tbsp honey
2 tsp tahini paste
3 tbsp extra virgin olive oil

Steps:

  • Combine the dressing ingredients in a large bowl with a pinch of salt. Toast the almonds in a dry frying pan over a low heat until golden, about 1-2 mins, then tip onto a plate and leave to cool. Toast the seeds in the same way for 1-2 mins until they pop, ensuring they don't catch. Leave to cool with the almonds.
  • Tip the sprouts into the bowl with the dressing. Add the onion, mint, cranberries, almonds and seeds, then toss to coat. If making ahead, toss the salad ingredients together, then dress just before serving.

1/2 cup pecans
1 1/2 pounds Brussels sprouts, trimmed
6 tablespoons mayonnaise
3 tablespoons dijon mustard
2 tablespoons honey
6 tablespoons vegetable oil
1 teaspoon grated orange zest
1/4 cup champagne vinegar
2 tablespoons orange juice
Kosher salt and freshly ground pepper
1/4 cup pomegranate seeds

Steps:

  • Preheat the oven to 375 degrees F. Place the pecans on a baking sheet in one layer and bake until golden, 6 to 8 minutes. Let cool, then coarsely chop; set aside.
  • Shred the Brussels sprouts using the large holes of a box grater or a mandoline. Coarsely chop any ungrated pieces with a knife.
  • Combine the mayonnaise, mustard, honey, vegetable oil and orange zest in a large bowl and whisk to combine. Whisk in the vinegar and orange juice until smooth. Add the shaved Brussels sprouts and toss to combine. Season with salt and pepper. Transfer to a serving dish and scatter the pecans and pomegranate seeds on top. Refrigerate 2 to 4 hours before serving.

8 cups shredded cabbage (mixture of red and green are nice)
4 large carrots, grated
6 small green onions, diced
2 cups mushrooms, sliced thinly
minute chinese noodles, broken up (keep the spice package for dressing)
1/2 cup chopped almonds
1/2 cup shelled sunflower seeds
1/4 cup vegetable oil or 1/4 cup olive oil
2/3 cup rice vinegar (white will do also)
1/4 cup soy sauce
1/4 cup brown sugar
1 clove chopped garlic
1 teaspoon chili oil or 1 teaspoon wasabi
1/2 teaspoon ginger

Steps:

  • In a large bowl, combine all ingredients for salad except noodles.
  • Stir well to combine.
  • In another bowl, add all ingredients for dressing, including reserved spice package from noodles, mixing well till sugar is dissolved.
  • Pour the dressing over the slaw, toss to coat well.
  • Let marinate for at least 15 minutes.
  • Add noodles just before serving.

2 cups shredded green cabbage
1 cup shredded carrots
1/2 cup shredded red cabbage
4 cups of any combination of the following: onion sprouts, radish sprouts, alfalfa sprouts, crunchy sprouts like lentil or mung bean sprouts, garlic sprouts
1/2 cup dressing (see recipe)

Steps:

  • Mix shredded vegetables and sprouts. Add 1/2 cup dressing, and chill for 30 minutes. (Moisture will seep from cabbage and sprouts.) Check after 30 minutes, and add more dressing if necessary. Let chill 1 to 1 1/2 hours more.
