This soup was a lunch time staple for me while I was on Weight Watchers. I am a little picky with my veggies but this is the version I make for myself. Feel free to add any of your favorite free veggies.

6 cups nonfat beef broth
3 cups green cabbage, Diced
1 1/3 cups carrots, Sliced
1 cup onion, Diced
4 garlic cloves, Minced
1 cup green beans
2 tablespoons tomato paste
3 stalks celery, Diced
1 bell pepper, Diced
2 cups mushrooms, Sliced
2 cups broccoli, Chopped

Steps:

  • Add all the ingredients into a large pot or slow-cooker.
  • Feel free to add any other Zero Points Vegetables (Weight Watchers).
  • Simmer until Veggies are cooked.
  • Season to taste.
  • Note: Depending on my mood I will exchange the Beef broth for Fat-Free Chicken Broth or Fat-Free Vegetable Broth.

2 cups fresh green beans, cut into bite-size pieces
3 fresh garlic cloves, minced
2 small zucchini, cubed
1 cup tomatillo, chopped
1 medium jalapeno pepper, finely chopped
14 ounces canned Mexican-style tomatoes, Mexican-style preferred
1/2 medium poblano chile
1 medium Spanish onion, chopped
1 medium green pepper, chopped
1/2 teaspoon cumin
1 teaspoon fresh oregano
6 cups vegetable broth
2 roasted red peppers, packed in water
1 tablespoon chipotle chile in adobo
3/4 teaspoon salt
2 tablespoons fresh lime juice
1/2 cup chopped fresh cilantro

Steps:

  • Put snap beans, garlic, zucchini, tomatillos, jalapeno, diced tomatoes, green chili pepper, onion, green pepper, cumin, oregano and vegetable broth into a large soup pot.
  • Puree roasted peppers with chipotle in adobo sauce in a blender or food processor, and add to soup; stir to combine.
  • Cover and bring to a boil over high heat. Reduce heat to low, and simmer, partly covered, for about 10 minutes.
  • Stir in salt, lime juice and cilantro. Serve.
  • Serving Size: about 1 cup.

2 cups bok choy, chopped
2 cups Chinese cabbage, chopped
3 medium garlic, clove(s) minced
1/4 cup gingerroot, thinly sliced and julienned
4 small raw oyster mushrooms, chopped
2 cups scallions (chopped)
1 cup canned water chestnut, sliced (8 oz can)
1/2 cup sweet red pepper, thinly sliced
1/4 teaspoon crushed red pepper flakes
6 cups vegetable broth
2 cups snow peas, stringed
2 tablespoons low sodium soy sauce
1/2 cup fresh cilantro, finely chopped

Steps:

  • Put bok choy, Chinese cabbage, garlic, ginger root, mushrooms, scallions, water chestnuts, red pepper, red pepper flakes and broth into a large soup pot; stir to combine.
  • Cover and bring to a boil over high heat. Reduce heat to low and simmer, partly covered, for about 10 minutes.
  • Toss in snow peas during the last 3 to 4 minutes of simmering.
  • Stir in soy sauce and cilantro.
  • Yields about 1 cup per serving.

200 g sugar snap peas
3 fresh garlic cloves, minced
2 small zucchini, cubed
1 jalapeno pepper, finely chopped
400 g diced tomatoes, canned
25 g green chilies
1 medium onion, chopped
1/2 teaspoon cumin
1 teaspoon fresh oregano
1440 ml vegetable stock
2 roasted peppers
2 tablespoons chipotle hot sauce
3/4 teaspoon salt
2 tablespoons fresh lime juice
25 g fresh coriander, chopped

Steps:

  • Put sugar snap beans, garlic, zucchini, chopped tomatoes, green chilli, onion, green pepper, cumin, oregano and vegetable into a large soup pot. Puree roasted peppers with chipotle sauce and jalepeno in a blender or food processor, and add to soup.
  • Cover and bring to a boil over high heat.
  • Reduce heat to low, and simmer, partly covered, for about 10 minutes.
  • Stir in salt, lime juice and coriander.
  • Serve.

1 bok choy, chopped
1 small Chinese cabbage, chopped
3 garlic cloves, minced
2 teaspoons ginger, minced
340 g mixed mushrooms
4 green onions, chopped
1/2 teaspoon red pepper flakes
3 liters vegetable stock
140 g bean sprouts
350 g sugar snap peas
4 tablespoons low sodium soy sauce

Steps:

  • Put bok choi, Chinese cabbage, garlic, ginger, mushrooms, green onions, red pepper flakes and vegetable stock into a large soup pot.
  • Cover and bring to a boil over high heat.
  • Reduce heat to low and simmer, partly covered, for about 10 minutes.
  • Toss in beansprouts and sugar snap peas during the last 3 to 4 minutes of simmering.
  • Add soy sauce.
  • Serve.

2 cups fennel bulbs, thinly sliced (one bulb)
6 cups vegetable broth
28 ounces canned diced tomatoes, preferably fire-roasted
1/4 teaspoon crushed red pepper flakes
2 teaspoons fresh thyme, finely chopped
1 teaspoon fresh oregano, finely chopped
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley, chopped
1/4 cup fresh basil

Steps:

  • Put escarole, garlic, onions, spinach, zucchini, red pepper, fennel bulb, vegetable broth, diced tomatoes, red pepper flakes, thyme and oregano into a large soup pot; stir to combine.

6 cups vegetable broth (I used 6 cups water and Better Than Bouillon)
14 ounces canned diced tomato, Mexican-style preferred
2 cups fresh green beans (start with 8 ounces, then trim and snap into bite-size pieces)
3 cloves garlic, minced
2 small zucchini (about 8 ounces before trimming)
1 cup tomatillo, cubed (start with about 4 ounces or 2 medium tomatillos)
1/2 medium poblano chili pepper, chopped
1 medium jalapeño, membranes and seeds removed, minced (I used several rings of homemade pickled jalapeños)
1 medium red or yellow (Spanish) onion, chopped
1 green pepper, chopped
1/2 teaspoon cumin
1 teaspoon fresh oregano (I used 1/2 teaspoon dried oregano)
2 roasted red peppers packed in water (I used these jarred peppers from Zergut)
1 tablespoon chipotle peppers in adobo sauce (these are found in small cans in the 'Mexican' section and boy, and be careful, they are hot!!!! I used only a scant teaspoon)
Salt to taste (Weight Watchers says 3/4 teaspoon 'salt', I used a good couple of teaspoons of kosher salt)
2 tablespoons lime juice (from 2 limes)
1/2 cup fresh cilantro, chopped

Steps:

  • Heat a large pot or Dutch oven on MEDIUM HIGH. Add the vegetables and spices (canned tomatoes through as oregano) as they're prepped. Add the broth when it's ready. Whiz the red peppers and chipotle pepper in a mini food processor and stir in. (I love mine that came with an immersion blender. Could you skip this step? Yes but do make sure to mash the chipotle pepper to distribute as finely as possible throughout the soup.) Cover and bring to a boil. (Because I used boiling water, the soup was just starting to boil when I added the last ingredients.) Once at a boil, partly uncover the soup, reduce the heat to maintain a slow simmer and simmer for about 10 minutes. Stir in salt, lime juice and cilantro. Serve immediately. ZERO POINTS ONION SOUP - WEIGHT WATCHERS

6 large onions (Vidalia, use only soft layers - discard hard outer ones)
Butter flavored PAM or Crisco spray (zero points)
I can't believe its not butter spray (zero points)
1 can (49 1/2 0z)College Inn or Swanson fat free chicken broth
1 can (14 oz) College Inn fat free beef broth
Salt & pepper to taste
Spray stock pot with butter flavored PAM.
Slice onions, spray onions with good portion of "Can't believe
butter"
Saute until onions are softened
Add chicken & beef broths
Cook for 30 minutes
Place in individual crocks
Points for soup alone is 0 per serving
OPTIONS:
Add 1/2 point for 1/8 cup (or less to taste) fat free mozzarella cheese
Add 1/2 point for 1 slice of WW bread (use a water tumbler the size of the top of the crock to cut a circle of bread to float cheese)
Place soup in crock add cheese and bread and toast under broiler.
