Spanish-Style Chorizo and Romesco Burgers with Manchego Cheese image

A Spanish spin on your classic burger featuring chorizo, Manchego cheese and a zesty Romesco sauce.

Number Of Ingredients 13

4 roasted red peppers, skins removed, chopped
¼ cup sliced almonds
¼ cup chopped fresh flat leaf parsley
1 garlic clove
½ teaspoon paprika
2 Tablespoons olive oil
2 Tablespoons water
salt and pepper
½ pound chorizo, outer casings removed, cut into 1-inch pieces
1½ pounds lean ground beef
salt and pepper
1 cup shredded Manchego cheese
4 fresh rolls (we used Brioche) toasted, if desired

Steps:

  • Place all ingredients in a food processor and process until smooth. It should have the consistency of a thick pesto. If too chunky, add more water.
  • Preheat grill to medium-high heat.
  • Place the chorizo in a food processor and process until finely chopped and crumbly.
  • Transfer to a large bowl with the ground beef and loosely mix together with your hands.
  • Form the mixture into 4 (1-inch) thick patties and sprinkle each side with salt and pepper.
  • With your thumb, make a small indentation in the center of each burger, this will allow for even cooking.
  • Grill the burgers to desired doneness, approximately 5 minutes and then flip over for another 4 minutes for medium.
  • Divide the shredded Manchego cheese among the patties and cook for 1 minute longer until the cheese melts.
  • To assemble, place the Manchego-covered chorizo patties atop the bottom rolls with a generous dollop of the Romesco on top.

This is a tasty burger to add to your grill this Fourth Of July. The Salsa makes them so moist and the two cheese just make them pop. They make the potato salad and baked beans so good. I hope you will take the time to try them.

2 pound(s) lean ground chuck
1 small can of green chilis, chopped
1 medium onion,chopped
2 clove(s) garlic, minced
1 large onion, sliced
2 large tomatoes, sliced
small jar of salsa, we used medium
1 package(s) provolone cheese
1 package(s) queso fresco
1 package(s) hamburger buns

Steps:

  • Take the ground Chuck and place in large bowl. Add onion, cloves of garlic, Chili's, and Salsa. Mix together thoroughly but not a lot of kneading or you can make your burgers tough.
  • Fix your grill according to directions. Place 1/3 pound on grill. Cook approximately 6 minutes on each side. Then place on buns and add Queso Fresco and Provolone and place in warm oven until the cheese melts. Then add your onions and tomatoes. Ummmm Tasty

BACON MANCHEGO CHEESE BURGER

This bacon Manchego cheeseburger made with freshly ground beef, Manchego, and romesco sauce is brilliant, surprising, inspired, and so harmonious it's as if the ingredients were fated in the stars to be together.

12 ounces beef, preferably chuck flap* or another cut that's 15% to 18% fat
4 slices bacon
Salt and freshly ground black pepper
Two (1-ounce) slices young (aged just 3 to 6 months) Manchego cheese
2 tablespoons (1 oz) unsalted butter (at room temperature)
2 hamburger buns
2 tablespoons Romesco Sauce
1 cup arugula or mesclun ((optional))
12 to 16 slices Pickled Zucchini

Steps:

  • If the butcher didn't grind the beef for you, work the cold meat in your food processor until finely ground and then immediately place it in a stand mixer fitted with the paddle and process on medium speed for 1 minute.
  • Shape the meat into 2 equal-size patties, each one about 6 ounces and, ideally, slightly broader than the buns. Salt and pepper both sides of the patties.
  • In a medium cast iron skillet, cook the bacon over medium heat until slightly crisp. Remove the bacon. Pour off all but 1 to 2 tablespoons bacon fat from the pan and crank the heat to medium-high.
  • Cook the patties until they take on a nice char, 1 to 2 minutes, depending on the thickness.
  • Flip the patties and place first the bacon and then the cheese on the top of each burger. Cover the skillet and cook until the desired doneness, about 1 minute for medium-rare. If you prefer a less rare burger, simply cook another minute or two on each side.
  • Meanwhile, butter the buns and place them, cut side down, in another skillet over medium-high heat until nicely toasted, 2 to 3 minutes.
  • Slather 1 tablespoon Romesco on the bottom half of each bun. Place the burger patties on top and garnish with greens and 6 to 8 slices of pickled zucchini, if using. Place the top half of the bun on each stack of bacon cheeseburger spectacularness and demolish.

2 pounds ground chuck
1 pound ground sirloin
1/2 cup seasoned dry bread crumbs
1/4 cup steak sauce (recommended: Crosse and Blackwell)
3 extra-large eggs
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
8 to 10 hamburger buns
8 ounces blue cheese, sliced (recommended: Danish Blue)
Arugula and sliced tomatoes, for serving, optional

Steps:

  • Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
  • Prepare a charcoal or a stove-top grill.
  • Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

1 teaspoon salt
1/2 teaspoon pepper
8 ounces blue cheese, cut into 1-inch cubes
8 ounces Pimiento Cheese Spread, recipe follows
8 ounces mozzarella, cut into 1-inch cubes
4 hamburger buns
Lettuce
Sliced tomatoes
Grilled sweet onions
Sliced pickles
Two 7-ounce jars canned, sliced pimientos, drained
Three 10-ounce bricks sharp Cheddar, finely grated
1 cup mayonnaise

Steps:

  • Mix the ground beef, salt and pepper in a large bowl and form the mixture into 8 equal-size balls. Press a cube of desired cheese into the center of each ball and cover completely with meat. Form the balls into hamburger patties, about 1/4-inch thick. Grill burgers until desired doneness. Top with lettuce, tomatoes, onions and pickles as desired on a toasted bun.
  • Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimientos and cheese, beating until smooth. Beat in the mayonnaise.

Steps:

  • Preheat a grill for high heat.

1 tablespoon finely chopped onion
1 tablespoon ketchup
1 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound lean ground beef (90% lean)
1/4 cup finely shredded cheddar cheese
2 hamburger buns, split
Optional: Lettuce leaves and tomato slices

Steps:
