CINNAMON-RAISIN BITES



Cinnamon-Raisin Bites image

These scone-like snacks are good right out of the oven, but they're great at room temperature when you're on the way to work or school. Hannah Barringer - Loudon, Tennessee

Yield 2 dozen.

Number Of Ingredients 9

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup fat-free milk
1/4 cup canola oil
1/4 cup honey
1/2 cup raisins

Steps:

  • In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. , In a small bowl, combine the milk, oil and honey; add to the dry ingredients and stir just until moistened. Stir in raisins., Drop by tablespoonfuls onto baking sheets coated with cooking spray. Bake at 425° for 8-10 minutes or until lightly browned. Remove to wire racks.

1 cup nonfat milk
1/4 cup canola oil
1/4 cup honey
1/3 cup raisins

Steps:

  • In a large bowl, combine the four, baking powder, salt, cinnamon, and nutmeg. In a small bowl, combine the milk, oil, and honey; add to the dry ingredients and stir just until moistened. Stir in raisins.
  • Drop by tablespoonfuls onto baking sheets coated with cooking spray. Bake at 425 degrees for 8-10 minutes or until lightly browned. Remove to wire racks.

These ooey-gooey dessert bites are made with Cheerios, raisins, nuts, cinnamon and vanilla. Ready in only 30 minutes, they're fun birthday party treats.

1/2 cup warm water
1 1/2 cups raisins
1 cup roasted whole almonds
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla
1 cup coarsely crushed Cheerios™ cereal

Steps:

  • In medium bowl, soak raisins in water 10 minutes or until plump. Drain; pat dry.
  • In bowl of food processor, add raisins and all remaining ingredients except cereal. Cover; process, stopping to scrape side of bowl if necessary, until mixture forms a thick, sticky paste. (You can add a little water if mixture is not sticky enough.)
  • Roll mixture into 12 balls with moistened hands. In shallow dish, place cereal. Roll balls in cereal to coat. Serve immediately or cover and refrigerate until ready to serve.

1 cup dry cut oats
1/2 cup almond butter
2 Tablespoons honey
1 teaspoon vanilla
1/4 cup shredded coconut (I used sweetened)
1/3 cup raisins

Steps:

  • Mix all the ingredients together, and roll into small one inch balls.
  • Place on wax paper and refrigerate until ready to serve.

This is a light recipe. They're better out of the oven or the same day. The next days, they're a bit dry. But they can be great soaked in coffee.
