This dish is absolutely superb! I've always loved lamb and I bought it at the store not knowing what to do with it so I used my imagination. It's moist and tender, full of flavor and served best complimented with sauteed zucchini and rice.

2 lamb chops
2 bulbs roasted garlic
½ teaspoon dried thyme
salt and ground black pepper to taste
1 ½ cups olive oil for marinating
1 cup red wine
3 tablespoons olive oil
1 small onion, chopped

Steps:

  • Place lamb chops in a shallow dish, and smear both sides with roasted garlic. Season with thyme, salt, and pepper. Cover with 1 1/2 cups olive oil, and refrigerate overnight.
  • Remove chops and marinade from dish, and scrape off the oil, which will have partially solidified in the refrigerator. Place the chops back in the dish, and cover with red wine. Refrigerate for 4 hours.
  • Heat 3 tablespoons olive oil in a large heavy skillet over medium-high heat. Saute chopped onion until tender. Place the lamb chops into the skillet, cover, and cook for 8 to 10 minutes on each side.

Crispy grilled lamb or mutton chops drizzled in honey mustard marinade. My wife likes this so much she wants me to make for Christmas dinner this year.

1/3 cup honey
1 tablespoon light soy sauce
1 teaspoon hot English mustard
1/2 teaspoon garlic
4 large lamb chops (I prefer mutton) or 4 large mutton chops (I prefer mutton)
1 tablespoon salted butter

Steps:

  • Put honey, soy, garlic & butter into a small dish & heat gently till it blends easily with a fork.
  • Add mustard to taste. It needs to balance the sweetness & saltiness so you can add quite a bit before it gets hot. Mix well.
  • Coat meat thoroughly with sauce & place under the griller or in an oven (uncovered) at about 200c. (Save a little sauce for when you turn the meat over.).

4 lamb chops
2 tablespoons of either prepared sweet corn relish or 2 tablespoons chutney

Steps:

  • Place lamb chops on tray.
  • Put 1/2 tablespoon of chosen topping on each chop and spread to cover.
  • Put in oven at 180 degrees celcius for 15 mins.
  • Also works well with beef steak, chicken breasts and turkey chops.

I can't remember where I got this recipe but I'll never forget the wonderful flavor. I think the combination of the mint and mustard really enhances the taste of the lamb. I hope you enjoy this quick and easy recipe.

4 lamb chops
2 Tbsp dijon mustard
2 Tbsp fresh mint, minced or 2 teaspoons dried mint flakes
4 tsp honey
1/2 tsp coarsely ground black pepper

Steps:

  • 1. Combine all ingredients except for the lamb chops.
  • 2. Trim any excess fat from the chops.
  • 3. Broil for 5 minutes per side.
  • 4. Brush mustard mixture over chops. Broil chops 2 minutes on each side or until desired degree of doneness, basting occasionally with mustard mixture.
