This simple fruit pizza is beautiful and delicious! A soft sugar cookie crust with a cream cheese frosting and topped with sliced fruit. So simple and oh-so good!

3/4 cup sugar
1 1/4 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 teaspoon vanilla extract
1 large egg
12 ounces cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla
1 1/4 cup powdered sugar
7-10 strawberries, sliced
5-6 kiwis, sliced
1 mango, sliced
1/2 cup blueberries
1 small bunch of grapes, halved

Steps:

  • Mix the butter, sugar, egg, and vanilla until well combined. (You can use an electric mixer or just mix with a spoon if your butter is melted.) Add flour, baking powder, and salt. Mix until combined. Chill the dough for 30 minutes.
  • Preheat the oven to 350 degrees. Grease a 14-inch pizza pan or round baking stone, or line with parchment. Roll the chilled dough out onto it, leaving some space around the edge. Bake for 12 minutes. Allow it to cool.
  • Using an electric mixer, combine the cream cheese, butter, powdered sugar and vanilla until smooth and creamy. Spread over the cooled cookie crust and chill again to firm up the frosting.

1 (18.25 ounce) package yellow cake mix
2 eggs
¼ cup vegetable oil
2 (8 ounce) packages cream cheese, softened
2 cups confectioners' sugar
1 teaspoon almond extract
½ cup sliced fresh strawberries, or as desired
½ cup diced pineapple, or as desired
½ cup sliced fresh peaches, or as desired
½ cup white sugar
½ cup orange juice
¼ cup lemon juice
¼ cup water
2 tablespoons cornstarch

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease two 12-inch pizza pans.
  • Mix cake mix, eggs, and vegetable oil together in a bowl until batter is just mixed; press into the prepared pizza pans.
  • Bake crust in the preheated oven until lightly browned, about 10 minutes. Remove crusts from oven and cool completely, at least 30 minutes.
  • Whisk cream cheese, confectioners' sugar, and almond extract together in a bowl until smooth; spread onto the cooled crusts.
  • Arrange strawberries, pineapple, and peaches on the cream cheese layer.
  • Combine white sugar, orange juice, lemon juice, water, and cornstarch together in saucepan over medium heat; cook and stir until glaze is thickened, 5 to 10 minutes. Remove saucepan from heat and refrigerate glaze until cooled, about 20 minutes.
  • Drizzle glaze over fruit and refrigerate pizza until chilled, at least 30 minutes.

1 (16 1/2 ounce) package Pillsbury sugar cookie dough or 1 (16 1/2 ounce) package sugar cookie mix
1 (8 ounce) package Philadelphia Cream Cheese
3/4 cup powdered sugar
fresh fruit, strawberries, bananas, blueberries, pineapples, maraschino cherries
1/2 cup fresh orange juice
1/4 cup fresh lemon juice
1/2 cup water
3/4 cup sugar
3 -4 tablespoons cornstarch

Steps:

  • Roll out cookie dough flat onto a prepared greased cookie sheet.
  • I used my 12 inch pizza stone.
  • Bake by instructions.
  • This is very good with a chewy texture.
  • Be sure not to over bake.
  • Mix in a mixer cream cheese and powdered sugar until fluffy.
  • Slice the assorted fruit while cookie is baking.
  • Allow cookie to cool then spread cream cheese over dough.
  • Arrange fruit over cream cheese.
  • Glaze:
  • Combine orange juice, lemon juice, sugar and corn starch in a sauce pan.
  • Cook on low until thickened.
  • Once sauce is thickened allow to cool completely before pouring over fruit pizza.
  • Serve right away if you have 8 hungry teenagers standing around.
  • Or refrigerate several hours before serving.

½ cup butter, softened
¾ cup white sugar
1 egg
1 ¼ cups all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon salt
1 (8 ounce) package cream cheese
½ cup white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
  • Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.

2 2 2 cups flour
1 1 1 cup butter, softened
1/2 1/2 1/2 cup powdered sugar
CREAM CHEESE LAYER:
8 8 8 ounces cream cheese, softened
1/2 1/2 1/2 cup powdered sugar
FRUIT:
CITRUS GLAZE:
3/4 3/4 3/4 cup water
1 1 1 cup orange juice
1/4 1/4 1/4 cup lemon juice
3/4 3/4 3/4 cup sugar
3 3 3 tablespoons cornstarch

Steps:

  • CRUST: Mix flour and powdered sugar with softened butter. Pat on a parchment lined jelly roll pan. I like to use a 17x12 inch sheet pan while leaving some space between the crust and the edge of the pan for easier cutting. Bake at 350°F for about 15 to 20 minutes, until just beginning to turn golden. Cool completely. Make citrus glaze so it has time to cool. The crust can be made a day ahead and left at room temperature to speed assembly. CITRUS GLAZE: Whisk dry ingredients in a heavy saucepan. Add remaining ingredients and heat to boiling. Cook about a minute, or until thickened slightly. Cool in refrigerator or in ice bath before pouring on fruit, but not overnight as it will gel up and not pour. CREAM CHEESE LAYER: Blend ingredients until smooth and spread evenly over crust. The cream cheese layer can be made a day ahead to speed assembly. Do not top crust until ready to assemble. Top with an assortment of fruit, filling up the white spaces. Generally one pan uses 1 banana, about 6 to 8 strawberries, 1/2 to 3/4 can of mandarin oranges and 1 to 2 kiwi fruit. Use what you like or what is available. Begin spooning citrus glaze all over fruits, taking care to coat all fruits, especially bananas to prevent browning. Try to keep the glaze on the pizza and not slop it all over the crust as I have shown here. Fruit Pizza is best served with a fork after being refrigerated for several hours so citrus glaze can gel a bit. The crust softens ever so slightly so it doesn't crumble when cut and everything sort of melds together. This piece was cut about 17 hours after glaze was spooned on fruit. Enjoy!! Cook's note: Place parchment on a large sheet pan (size described above), but only covering half the surface area of the pan. Use a spatula on edge of dough to make it neat and straight. I did not have fresh orange juice, but rather frozen orange juice concentrate and scooped out 2 tablespoons of concentrate and added it to a 1/2 cup measure, then filled the cup with water until I had 1/2 cup. You may also use a jelly roll pan (mine is 15.5 x 10.5 x 1 inch) and press the crust all the way to the edges of the pan, without lining with parchment. The first pieces are tricky to get out, but otherwise it comes out just fine.

Almond extract makes all the difference in this updated version of the traditional fruit pizza. Kiwi makes the topping completely fresh and adds beautiful color. Use low-fat cream cheese for a slightly lighter version. Any clear juice (apple, pear, peach, etc.) may be substituted for the pineapple.

  • Bake in preheated oven until very lightly browned, 12 to 15 minutes. Cool on a wire rack.
  • Beat cream cheese, 1/3 cup white sugar, and almond extract until smooth; spread over completely cooled crust. Arrange strawberries, blueberries, and kiwi decoratively over cream cheese mixture.
