This is from the book "Giant Book of Bread Machine Recipes" by Norman A. Garrett. I don't know how "authentic" the recipe is but it makes the house smell wonderful! Some of the ingredients and amounts were adjusted. I usually prepare two loaves of this bread-slicing up one loaf when it's day old and freezing later for french toast. Try adding chopped walnuts to this bread recipe!

Number Of Ingredients 14

1 1/2 teaspoons active dry yeast
1/2 teaspoon cinnamon
2 1/2 cups unbleached flour, plus
2 tablespoons unbleached flour
1/2 teaspoon freshly grated nutmeg
1 orange, zest of
1/2 cup powdered sugar
1 egg
2 tablespoons cooking oil
3 tablespoons butter
1 tablespoon maple syrup
3/4 cup warm milk
1/2-2/3 cup raisins (I've also used a combination of dried fruits -- cranberries, tart cherries, etc)
2/3 cup walnuts, coarsely chopped (optional)

Steps:

  • Bake bread according to bread machine manufacturer's directions.
  • Add walnuts and raisins at the beginning of the fruit/nut beep cycle.

1 1/2 tablespoons honey
3/4 teaspoon salt
3/4 cup whole wheat flour
3/4 cup unbleached flour
1/2 cup rye flour
2 tablespoons vital wheat gluten
2 teaspoons cornmeal
1 teaspoon caraway seed
1 1/2 teaspoons active dry yeast

Steps:

  • Put the ingredients in the bread pan in the order recommended by your machine.
  • Select Basic Wheat Cycle, Light setting - or equivalent.

Number Of Ingredients 9

1/2-2/3 cup water
1 cup mashed banana
2 1/2 tablespoons oil or 2 1/2 tablespoons plain yogurt
2 1/2 tablespoons sugar
1 teaspoon salt
1 1/3 cups oats
2 2/3 cups bread flour
2 teaspoons yeast
1/2-3/4 cup raisins (optional)

Steps:

  • Place all ingredients except raisins in bread machine according to manufacturer's instructions.
  • Place raisins in dispenser, if available, or set for fruits/nuts.
  • Use sweet bread and medium crust settings.
  • To make Banana Bread Stuffed French Toast:.
  • Slice bread in very thick slices.
  • Cut pocket in slices.
  • Mix cream cheese and a little milk to make spread. Add a dash of vanilla.
  • Blend.
  • Spoon about 1-2 teas. into pocket; mash edge slightly to close. Beat egg(s) with a little water in shallow pan.
  • Heat unsalted butter in heavy skillet or electric griddle over MEDIUM-HIGH until it stops foaming.
  • Dip bread slices in egg mixture; coat both side.
  • Cook French Toast on each side until golden brown.
  • Remove to warm plate and serve with melted jam of choice.

This is a based on a recipe in my Cuisinart Convection Bread Maker Recipe Booklet using the low-carb cycle. This is so delicious and healthy! Love it! The default instructions are for the 2 pound large loaf; I've listed quantities for the 1 1/2 pound medium loaf in parens. I cannot vouch that this recipe will work in a bread machine without the low-carb cycle.

1 3/4 cups buttermilk, 80 -90 F (1 3/4 cups)
1 1/4 tablespoons honey (1 tablespoon)
3/4 teaspoon salt (1/2 teaspoon)
1 1/4 cups whole wheat flour (1 cup)
2/3 cup vital wheat gluten (1/2 cup)
2/3 cup barley flour (1/2 cup)
2/3 cup almond flour (1/2 cup)
2 1/2 tablespoons soy protein (2 tablespoons)
2 1/2 tablespoons flax seeds (2 tablespoons)
2 1/4 teaspoons active instant yeast (2 1/4 teaspoons) or 2 1/4 teaspoons bread machine yeast (2 1/4 teaspoons)

Steps:

  • Place ingredients, in the order listed, in the bread pan fitted with the kneading paddle. Place the breadpan in the Cuisinart Convection Bread Maker. presss Menu and select Low Carb.
  • Choose medium crust setting, or to taste. Select dough size.
  • Press Start to mix, knead, rise and bake. When cycle is complete, remove bread to wire rack to cool. Bread slices best when allowed to cool.
