1 lb yellow beans
4 garlic cloves (you can add more if you like garlic)
2 tbsp sunflower oil
salt and pepper to taste
chopped parsley and dill (optional)

Steps:

  • Roughly chop beans
  • Smash garlic cloves
  • Heat the oil and add half the garlic and saute a little
  • Add the beans and saute for 2-3 minutes
  • Add 1 cup water and cook for 20 minute
  • Just before removing from stove, add the rest of the garlic
  • Add chopped dill and parsley (optional)

5 slice precooked bacon, chopped
1 Tbsp butter
1/2 c onion sliced thin
1 tsp each salt and pepper
1 Tbsp granulated sugar
2 tsp minced garlic
1/2 c white mushrooms, diced (about 4)
1 1/2 Tbsp white wine vinegar
2 can(s) 15 oz. each yellow wax beans, drained
SAUCE
1 Tbsp butter
1 Tbsp bacon grease
1/3 c french onion dip(ready to serve-not dry package)
1 1/2 tsp white wine vinegar
2 tsp granulated sugar

Steps:

  • 1. Place drained beans in a buttered casserole dish. Set aside.
  • 2. In a skillet add the chopped bacon, onion, mushrooms, salt, pepper and sugar. Slowly saute until onion start to shrink, about 20 minutes.
  • 3. Add garlic and saute another minute. Srizzle in the white wine vinegar. Stir to blend, season with more salt and pepper if needed.
  • 4. Pour mixture over beans in casserole and gently fold in. Set aside covered while making the sauce.
  • 5. Sauce: Combine the butter, bacon grease, onion dip, white wine vinegar and sugar in the slillet over medium heat . Stir to blend and combine well. Drizzle over bean mixture and fold in gently until well coated. Heat in warm oven or micro-wave until heated through. Note: You can place in the refrigerator until dinner and heat up until heated through about 25 minutes.

1 14oz. can green beans
1 can yellow wax beans
1 teaspoon onion powder
2-3 tablespoons sour cream
1/2 cup shredded mozzarella cheese
1 cup diced ham

Steps:

  • Drain the liquid from the cans of beans into a bowl. In a saucepan, make a thickening with 1 tablespoon margarine and enough flour to form a paste. Add 1/2 of each of the bean liquids and onion powder. When starting to thicken, add the sour cream and stir until it is thick enough to coat the beans. Put 1/2 of the beans in the bottom of a casserole dish. Add the ham and pour half of the sauce over the dish. Add 1/2 of the cheese. Repeat for the second layer. Bake at 350 degrees or until the cheese is melted.

6 tablespoons all-purpose flour
1-1/2 cups chicken broth
1/2 cup milk
1 to 2 teaspoons soy sauce

2/3 cup shredded Parmesan cheese, divided
8 cups cut fresh green or wax beans, cooked and drained
2 cups cubed cooked chicken

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth. Gradually add broth, milk, soy sauce, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat. , Stir in 1/3 cup Parmesan cheese until melted. Add beans and chicken; toss to coat;. , Transfer to a greased 2-qt. baking dish; sprinkle with the remaining cheese. Bake, uncovered, at 375° for 15-18 minutes or until golden brown.

My Polish grandmother never used recipes. This so simple dish was the most difficult to duplicate because of it's simplicity. There are versions of this in Polish cookbooks using bread crumbs but they lacked the slightly sweet, butter baked flavor of cracker crumbs that accent the mild taste of the yellow beans. I haven't posted this recipe before because it sounds "too simple" but it's one of my most favorite!

1 1/4 lbs fresh yellow wax beans
2 tablespoons butter
1/4 cup crushed Ritz crackers or 1/4 cup townhouse cracker (about 6 crackers)

1 ½ pounds bulk mild Italian sausage
2 medium onions, chopped
1 cup chopped celery
1 cup condensed tomato soup
1 cup white sugar
1 tablespoon prepared yellow mustard
½ tablespoon chili powder
1 (16 ounce) can lima beans, drained
1 (16 ounce) can baked beans with pork
1 (15 ounce) can kidney beans, drained
1 (14.5 ounce) can yellow wax beans, drained
1 (12 ounce) can tomato paste
3 slices bacon, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a skillet over medium-high heat. Cook sausage into the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to a roasting dish. Saute onions and celery in the hot skillet until onions are translucent, about 5 minutes. Drain and discard excess grease; transfer vegetables to the roasting dish.
  • Combine tomato soup, sugar, mustard, and chili powder in a bowl. Stir into the sausage mixture. Add lima beans, baked beans with pork, kidney beans, and wax beans to sausage. Mix to combine. Spread tomato paste over casserole. Top with bacon strips.
  • Bake in the preheated oven until bacon is browned and casserole is heated through, about 1 hour.
