1/4 c unsalted butter ((1/2 stick))
2 c long grain rice
2 tbsp red or green bell peppers (or both) (minced)
2 cloves minced garlic
1 tsp salt
1 tsp turmeric
1 tsp garlic powder
1/4 tsp paprika
1/4 tsp chili powder
pinch red pepper flakes
4 c low sodium chicken broth
2 stems cilantro

Steps:

  • In a medium saucepan set over medium heat, add the butter. Once melted, add the rice and cook for 1 minute. Add the bell pepper and garlic, cook for 2 additional minutes
  • Add salt, turmeric, garlic powder, paprika, chili powder, red pepper flakes,chicken broth and cilantro stems. Turn heat up and bring to a boil. Then reduce heat to low
  • Add lid and simmer for 15-18 minutes or until the rice is fully cooked. Remove from the heat and let sit, with the lid on for 10 minutes. Remove cilantro stems,then fluff with a fork

This is a very easy and quick recipe. There are additional variations to enhance your rice experience. To add some kick to it, add a can of mixed veggies and decrease the chicken stock from 4 cups to 3 3/4 cups. Or you can add a can of beans to it. If you add beans, do not decrease the chicken stock. You can also add meat, sausage, ham, or even shrimp. If adding meat, no need to decrease chicken stock. You can add more salt or seasonings to taste.

2 cups uncooked jasmine rice, rinsed and drained
1 tablespoon chopped garlic

2 bay leaves
3 ½ cups low-sodium chicken broth

Steps:

  • Heat butter in large, heavy saucepan over medium heat. Add shallots; cook and stir until softened and translucent, about 3 minutes. Pour in rice, garlic, salt, turmeric, coriander, cumin, and bay leaves. Continue to cook and stir for 3 minutes. Add chicken broth and bring to a boil. Reduce heat to low, cover, and cook until broth is absorbed and rice is tender, 20 to 25 minutes.

1/2 cup Achiote Oil, recipe follows
1 cup Sofrito, recipe follows
1/4 cup alcaparrado or coarsely chopped pimiento-stuffed olives
2 tablespoons kosher or fine sea salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
2 bay leaves
3 cups long-grain rice
2 cups frozen corn kernels, defrosted
5 cups chicken broth, homemade or store-bought, as needed
1 cup olive oil
2 tablespoons achiote (annatto) seeds
2 medium Spanish onions, cut into large chunks
3 to 4 cubanelle or Italian frying peppers
16 to 20 cloves garlic, peeled
1 large bunch cilantro
3 to 4 ripe plum tomatoes, cored and cut into chunks
1 large red bell pepper, cored seeded and cut into large chunks

Steps:

  • Heat the Achiote Oil in a Dutch oven or other heavy 4 to 5-quart pot with a tight fitting lid over medium-high heat. Stir in the Sofrito and alcaparrado and cook until the liquid is evaporated and the Sofrito is sizzling. Season with the salt, pepper, and cumin. Toss in the bay leaves.
  • Raise the heat to high and add the rice and corn. Cook, stirring, until the rice is coated with the oil and the grains begin to turn "chalky," about 3 minutes. Pour in enough chicken broth to cover the rice by 1-inch. Bring to a boil and cook until the level of the broth meets the level of the rice. Lower the heat to very low, stir the rice thoroughly but only once, and cover. Cook until the rice is tender but with a little bite and all the liquid is absorbed, about 20 minutes. Fluff with a fork before serving.
  • Heat the oil and achiote seeds over medium heat just until the seeds give off a lively, steady sizzle. Don't overheat the mixture or the seeds will turn black and the oil a nasty green. Once they're sizzling away, pull the pan from the heat and let stand until the sizzling stops. Strain as much of the oil as you are going to use right into the pan; store the remaining oil for up to 2 days at room temperature in a jar with a tight fitting lid.
  • Place the onion and cubanelle or Italian peppers in the work bowl of a food processor and pulse until coarsely chopped. With the motor running, add the remaining ingredients, 1 at a time, and process until smooth. The sofrito will keep in the refrigerator for up to 3 days. It also freezes beautifully.

A wonderful African inspired yellow rice dish that my Mum always makes. I have adapted her recipe slightly - and this cooks very well in a rice cooker - a gadget I would NOT be without! If you don't have any fruit chutney available, add a handful of sultanas & toasted flaked almonds and maybe a tablespoon of peach or apricot jam too. A wonderful accompaniment for most types of stews, cassroles, curries & tagines.

3 cups basmati rice, rinsed
3 cups water, to the rice cooker level
1 pinch powdered saffron (about 5 - 8 strands) or 1 pinch saffron strand (about 5 - 8 strands)
2 tablespoons fruit chutney
2 -4 cardamom pods, split & use seeds
salt
pepper
1 ounce butter
2 -4 sprigs fresh coriander (optional)

Steps:

  • Important Note: This is a recipe for a standard Rice Cooker - please adjust the fluids if cooking in a pan the conventional way.
  • Put 3 cups 0f rinsed Basmati rice into your rice cooker - using the cup provided.
  • Fill up with water to the 3 cup level in the rice cooker.
  • Add the saffron, cardamom seeds, salt, pepper & chutney to the rice & water.
  • Using the special non-stick spatula or spoon, gently mix it all together.
  • Turn the rice cooker on to the Cook cycle.
  • (This can be kept warm when the cooking cycle has finished for up to 2 hours.).
  • When ready to serve, add the butter & gently mix through.
  • Then put into a serving dish or straight onto the plates & garnish with chopped fresh coriander/cilantro.
  • You can also sprinkle some toasted flaked almonds on top if you wish.

Yellow rice is a beloved dish among many cultural traditions. A staple side in Latin American kitchens, arroz amarillo appears in various iterations across the region. The appeal of yellow rice extends to Central and South Asia, and South Africa, and its brilliant hue achieved with saffron, turmeric or achiote. This version uses widely available and economical ground turmeric, and is a canvas upon which you can incorporate other ingredients and spices. Consider adding a bell pepper to the onion and garlic, or stir in a cup of frozen peas at the very end. The amount of cooking liquid you use depends on the type and quality of your rice, and be mindful to cut down on salt if you use a salted broth. Typically served as a side dish, the dish can also be served on its own.

2 cups white basmati rice (or jasmine rice)
1/4 cup extra-virgin olive oil
1 small yellow onion, finely chopped (about 1 cup)
4 garlic cloves, finely chopped
2 1/2 teaspoons kosher salt (such as Diamond Crystal)
1 teaspoon ground turmeric
3 cups water, chicken broth or vegetable broth for basmati rice (or 2 2/3 cups, if using jasmine rice)
Handful of cilantro leaves, for garnish (optional)

Steps:

  • In a fine-mesh sieve, rinse the rice until the water runs clear, then set aside to drain.
  • In a medium saucepan or pot, heat the oil over medium. Add the onion and garlic, and cook, stirring frequently, until softened and fragrant, about 5 to 7 minutes. Take care not to burn the garlic by reducing the heat slightly if necessary.
  • Add the rice and sprinkle it with the salt and turmeric. Stir to combine, then cook the rice and spices in the oil for about 1 minute. Add the water, bring to a lively boil over high heat and then immediately cover and reduce the heat to low. Cook for about 15 minutes, until the water has been absorbed. Turn off the heat and allow the rice to continue steaming, covered, for another 10 minutes.
  • Gently fluff with a fork or a slotted spatula, taking care not to break too many grains. Garnish with the cilantro, if using, and serve.
