Onion-Roasted Potatoes image

Slightly crisp on the outside and tender on the inside, these potatoes are a hit with the family. This side dish is one of my favorites because the soup mix glazes the potatoes so nicely and it's very simple to prepare. -Schelby Thompson, Camden Wyoming, Delaware

2 pounds red potatoes, sliced 1/2 inch thick
1/3 cup canola oil
1 envelope onion soup mix

Steps:

  • Combine all ingredients in a large plastic bag; shake until well coated. Empty bag into an ungreased 13-in. x 9-in. baking pan. Cover and bake at 350° for 35 minutes, stirring occasionally. Uncover and bake 15 minutes longer or until potatoes are tender.

1 can Cream Soup
2-3 chopped Green Onions
8 oz. Sour Cream
16 oz. Shredded Cheddar
1/2 tsp. Salt
1/4 tsp. Pepper
1/4 cup Melted Butter
--
2 lb. bag Southern Hash Browns
2 cups Corn Flakes
2 tbl. melted Butter

Steps:

  • In large bowl, combine first section of ingredients. Now, the empty sour cream container works good to melt butter in, then throw away. Mix partially thawed Hash Browns and other indregients in a 9x13" baking dish. Top with crushed Cornflakes and 2 tablespoons Butter. Bake at 350° for one hour. Serve with green vegetable and sliced Cubed Ham or Pork.
