2 medium scallions, chopped
1/2 medium sweet red pepper, chopped
1/2 medium bell pepper, chopped
1 (15 ounce) can black beans, rinsed and drained
2 ears corn on the cob, kernels removed
2 tablespoons fresh lime juice
1 tablespoon corn oil
8 ounces skinless chicken breasts, cooked and chopped
2 tablespoons reduced-sodium taco seasoning mix
4 tablespoons fresh cilantro, chopped
4 tablespoons nonfat sour cream

Steps:

  • Combine scallions, peppers, beans and corn in large bowl; toss until well mixed.
  • Add lime juice and oil to bean mixture; toss to coat.
  • Add chicken, taco seasoning and cilantro; toss.
  • Top with sour cream and serve.

My mom's favorite dish ever! You may want to add more lettuce, but my mother is more about the "extras" then the greens. These are extra good topped with Recipe #222159! Also for chicken I use Recipe #217675 a lot.

1 boneless skinless chicken breast (poached and shredded or Parmesan Chicken cut up into strips)
1 cup frozen corn (cooked in microwave)
1 cup cheddar cheese
3 cups lettuce
salsa (to taste)
1 1/2 tablespoons taco seasoning mix
1/2 cup drained kidney bean (or your favorite)
1/2 cup crushed tortilla chips
1 tomatoes, chopped
ranch dressing (optional)

Steps:

  • Poach chicken then shred.
  • Mix cooked corn and chicken in a bowl with taco seasoning mix.
  • Divide lettuce, beans, tomato, corn and chicken mixture among two bowls.
  • Top with salsa cheese and crushed chips.
  • Top with ranch dressing if you please.
  • You can multiply this recipe to suit your needs!

1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) black beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 celery ribs, sliced
1 medium red onion, diced
1 medium tomato, diced
1 cup frozen corn, thawed
DRESSING:
3/4 cup thick and chunky salsa
1/4 cup canola oil
1/4 cup lime juice
1-1/2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon ground cumin

Steps:

  • In a large bowl, combine the beans, celery, onion, tomato and corn. In a small bowl, combine the salsa, oil, lime juice, chili powder, salt and cumin. Pour dressing over the bean mixture; toss to coat. Cover salad and chill for at least 2 hours.
