This is from a WW cookbook called "15-Minute Cookbook" dated 1998. I have notes in it saying "really good". Dijon mustard has a strong, distinctive flavor. You can us honey mustard, sweet-hot mustard, or spicy mustard. Enjoy!

1 (8 ounce) orange roughy fillets (or flounder, perch or sole)
butter-flavored cooking spray
1 tablespoon Dijon mustard
1 1/2 teaspoons lemon juice
1 teaspoon reduced-sodium Worcestershire sauce
2 tablespoons Italian seasoned breadcrumbs

Steps:

  • Heat oven to 450 degrees.
  • Arrange fillet in an 11X7 inch baking dish coated with cooking spray.
  • Combine mustard, lemon juice, and Worcestershire sauce, stirring well; spread mixture evenly over fillet.
  • Sprinkle breadcrumbs evenly over fish.
  • Bake, uncovered, at 450 degrees for 12 minutes or until fish flakes easily when tested with a fork.
  • Cut fillet in half, and serve immediately.

4 (4 ounce) salmon fillets (with skin on)
4 tablespoons Dijon mustard
salt (to taste)
lemon pepper (to taste, or use black pepper)
1 cup dry Italian seasoned breadcrumbs (about 1/4-1/3 cup for each fillet, can use more)
8 tablespoons melted butter (can use more)

Steps:

  • Set oven to 400 degrees F.
  • Line a shallow baking pan/sheet with foil, lightly grease the foil.
  • Place the salmon fillets skin-side down on the foil.
  • Spread about 1 tablespoon of Dijon mustard over the top of each fillet then season with salt and lemon pepper (or use black pepper in place of the lemon pepper).
  • Top each fillet with about 1/4-1/3 cup dry bread crumbs (pushing down gently to adhear to the fish).
  • Drizzle about 2 tablespoons (or more) of melted butter on top.
  • Bake for about 15 minutes or until the fish flakes easily with a fork.
  • Delicious!

1 pound flounder fillets
½ teaspoon salt
ground black pepper to taste
1 tablespoon lemon juice
2 teaspoons melted butter
1 teaspoon minced onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place flounder in a baking dish; season with salt and pepper. Mix lemon juice, butter, and onion together in a bowl; pour over flounder.
