4 medium scallions, chopped (green and white parts)
1 tablespoon gingerroot, fresh, chopped
2 medium garlic cloves, minced
1 lb uncooked boneless skinless chicken breast, cut into 1-inch cubes
1 (20 ounce) can pineapple, packed in juice, use tidbits
1/4 cup black bean sauce
2 cups brown rice, cooked, kept warm (regular or instant)

Steps:

  • Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add scallions, ginger and garlic; cook until soft, about 3 minutes. Add chicken and cook until lightly browned on all sides, stirring often, about 5 minutes.
  • Add pineapple (with its juice) and black bean sauce to skillet; bring to a simmer. Simmer until chicken is cooked through, about 5 minutes more.
  • Divide rice among 4 shallow bowls and spoon chicken mixture over top. Yields about 1 cup of chicken and 1/2 cup of rice per serving.

1 tablespoon olive oil
8 scallions, chopped
8 green onions, chopped
1 tablespoon gingerroot, minced
5 garlic cloves, minced
1 lb boneless skinless chicken breast, cubed
20 ounces canned pineapple
1/4 cup black bean sauce
2 cups cooked brown rice

Steps:

  • Spray large skillet with Pam, heat skillet, add olive oil.
  • Add scallions, ginger and garlic to hot skillet,cook 3 minutes.
  • Add chicken cook till brown, about 5 minutes.
  • Add pinapple, with juice and black bean sauce, let come to a boil, turn heat low and let simmer for 30 mins, or until chicken is cooked.
  • Divide rice into 4 bowls, a half cup each.
  • Spoon mixture over rice.
  • garnish with green onions.

2 tablespoons packed light brown sugar
1 tablespoon cornstarch
6 ounces crushed pineapple in juice
1/4 cup soy sauce
1/4 teaspoon garlic salt
4 small boneless chicken breasts
1/4 teaspoon ground ginger

Steps:

  • In a saucepan, combine brown sugar and cornstarch.
  • Stir in pineapple, soy sauce, garlic salt and ginger.
  • Cook and stir over low heat until thickened.
  • Place chicken in a greased 9 inch square baking dish.
  • Pour half of the sauce over chicken.
