WONTON WRAPPERS
For those of us who like to make EVERYTHING ourselves -- an original wonton wrapper recipe. Use the wonton wrappers to form tasty little dumplings stuffed with your favorite fillings.

Steps:
- In a medium bowl, beat the egg. Mix in the water.
- In a large bowl, combine the flour and salt. Create a well in the center of the mixture and slowly pour in the egg and water. Mix well. If the mixture is too dry, increase the amount of water one teaspoon at a time until a pliable dough has formed.
- On a lightly floured surface, knead the dough until elastic. Cut dough into two separate balls. Cover the balls with a damp cloth for a minimum of 10 minutes.
- Cut each ball into four equal pieces. Roll the pieces into 10 1/2 by 10 1/2 inch squares. Cut each into nine 3 1/2 by 3 1/2 inch squares. Use in any recipe that calls for wonton wrappers.

WONTON WRAPPERS
I have posted this in response to a request. I have made them once, and found that they work fine. However, I usually find it easier to just buy them. Still, it's a handy recipe to have around.

Steps:
- Mix the salt and the flour.
- In a small bowl, add 1/4 cup water to the egg and beat gently.
- Make a well in the middle of the flour, and add the egg-water mixture.
- Mix into the flour, adding remaining water as needed.
- Knead the dough into a ball.
- Keep kneading until smooth (several minutes).
- Place the dough in a large bowl, cover with a damp cloth and let rest for 1 hour.
- Cut the dough into quarters.
- Place one of the quarters on a well-floured surface, and roll out with a rolling pin until very thin.
- Cut the dough into the desired shapes (usually squares or circles).
- If stacking, dust the wrappers lightly with flour or cornstarch to keep them from sticking together.
- Keep cut wrappers covered with plastic wrap to keep them from drying out too much.
- Repeat with the other quarters.
- If not using immediately, wrap in plastic wrap and store in the refrigerator or freezer.
EGGLESS WONTON WRAPPERS OR SPRING ROLLS

- Sift flour and salt then stir in warm water, slowly. Dough should be very stiff.
- Knewad on floured surface until smooth. Use a towel to cover and let rest for at least 20 minutes.
- Divide the dough into half. Roll out dough making them very thin. If thicker it will reduce them number of wrappers per half.
- Cut into 3 inch squares.
- Repeat step with second ball.
- To store use cornstarch. Sprinkle on dough and keep in airtight bag in freezer or fridge.
- For Spring rolls cut bigger squares [6-8 inches].
VEGAN WONTON WRAPPERS
These buggers are tremendously challenging to find in any retail store, so I figured that it would be most prudent just to do it myself .. I have not attempted this particular recipe just yet, but plan to do so (and then follow up by using them in the "Easy Vegan Ravioli" - Recipe #177428). Steps:
- Sift together flour and salt in a bowl.
- Slowly stir in warm water - dough will be very stiff. Knead dough on floured surface till smooth, about 15 minutes. Cover with towel and let stand for 20 minutes.
- This part takes some elbow grease, be warned. Roll about a half of the dough out, as thin as you can. I'm not that strong so mine stay a little on the thick side. It should make thirty-two 3-inch squares but I'm lucky to get sixteen. Repeat for other half of dough.
- To store (if there are any leftovers, anyway) just sprinkle with cornstarch and keep in an airtight bag in the fridge or freezer.
- To make "eggless" or spring rolls just cut bigger squares, 6-8 inches or so.
- Serves: 8 servings of 4. (total of 32).

APPLE JACKS...USES WONTON WRAPPERS & PIE FILLING!
Another recipe filed away in my apple folder.. It must be over 1 inch thick! The folder I mean.. not the Apple Jacks! LOL What does it matter. It is a delicious recipe I want to share with you. My friends love them, and always ask for the recipe. WARNING! They go fast, you might want to double the recipe..

- 1. Cut pie filling apples into smaller pieces. Place 1 Tablespoon of filling in to the center of each wrapper. Moisten edges of wrappers with water. Fold diagonally. Press edges with a fork to seal. Heat oil to 35o degrees..fry until golden on both sides. Drain on paper towels. Sift conf. sugar on tops when cool. Makes 18-20
- 2. Be sure they are sealed tight, so the filling does not leak out when cooking. I like to add cinnamon to the apples, before filling. TIP: For cleanup, I find it is easier to put down folded newspapers under the paper towels. .
MANDARIN NAPOLEONS WITH SUGARED WONTON WRAPPERS

- Preheat the oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- Arrange the wonton wrappers on the sheet and spray them with cooking spray. Sprinkle them evenly with the granulated sugar, and then bake until golden brown, about 5 minutes.
- Remove from the oven and arrange 4 of the wontons on a serving platter or individual dessert dishes. Top each one with 2 tablespoons of the whipped topping and then one-eighth of the mandarin sections. Top each with a second wonton wrapper. Repeat the layers (whipped topping, mandarin oranges, wonton wrapper). Sift the confectioners' sugar over the top layer and serve.
BERRY NAPOLEONS WITH SUGARED WONTON WRAPPERS

- Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- Arrange wonton wrappers on prepared baking sheet and spray the surface with cooking spray. Sprinkle sugar over wontons. Bake 5 minutes, until golden brown. Remove wontons from oven and arrange 4 on a serving platter (or individual dessert dishes). Top each wonton with 2 tablespoons whipped topping and then 2 tablespoons berries. Top with second wonton wrapper. Repeat layers (whipped topping, berries, wonton wrapper). Sift confectioners' sugar over top layer. Serve immediately.
WONTON PORK WRAPPERS
This is a recipe that I got from the Food Network. Made it for a cocktail party and they "disappeared"!

- In a medium bowl, combine the sausage, green onions, soy sauce, hoisin sauce, and garlic.
- Place 8 wonton wrappers on a clean surface and brush edges with water.
- Place 1 tablespoon of pork mixture in center of each wrapper. Gather edges of wrapper together over filling. Press edges of wrapper together, enclosing the filling completely. Repeat with remaining wrappers and filling.
- Place a collapsible metal steamer rack in a large wide pot. Fill pot with 1/2-inch water.
- Spray steamer rack with nonstick spray. Bring water to a simmer.
- Working in batches, arrange dumplings on rack 1-inch apart.
- Cover pot with lid and steam dumplings until cooked thoroughly, about 8 minutes. Watch the water level and add more as needed.
- Transfer dumplings to a platter and serve with dipping sauces.

- In a medium bowl add flour and salt and create a hole in the middle. Add the egg-water mixture and mix well. If the mixture is too dry add some more water, one teaspoon at a time, until a pliable dough has formed.

WONTON WRAPPERS - HOMEMADE
This is such an easy recipe- I thought I would share it with you all. They freeze well, lay separate on pan and freeze the stack with wax paper between and bundle as many as you wish in each freezer Ziploc bag. Thaw in refrigerator. They shrink a lot stretch each individually before filling, with your favorite ingredients; sweet or savory. Note: If you have a pasta maker. - Sift flour into a large bowl and ,make a well in the center. In another bowl whisk together the egg, salt and 1/4 cup of water; then pour egg mixture into flour well. Mix together, adding more water until mixture can form a ball(not a sticky dough though).
- On a clean surface, with a little cornstarch, knead dough until smooth and pliable. Let rest for 40-60 minutes(so gluten can relax for better rolling).
- Divide dough in half. Keep the other half covered with a damp-but not wet clean towel. Roll out the other one on a cornstarch covered surface(flour will toughen dough).
- Roll out as thin as possible.(This is where the pasta maker comes in handy, if you have one) Cut into 3 to 5 inch squares. this will make about 12 wantons with this piece of dough and 12 with the other half.Freeze until you want to use-if not using right away.
