Tony's ridiculously easy homemade salsa recipe with fresh tomatoes and a kick of heat from jalapeño. This homemade salsa is bursting with flavor and comes together right in your blender or food processor! Make it chunky or smooth and serve it with chips, on nachos, in burritos and more.

1 1/2 pounds tomatoes (vine-ripe, roma or heirloom), cored and quartered -- I like Roma best for texture
1/2 medium yellow onion, roughly chopped
1 green onion, ends trimmed
2-3 cloves of garlic, finely chopped
2 jalapeños (with seeds If you like heat!), diced
1 heaping handful of cilantro (about 1/2 cup)
Half a lime, juiced
Pinch of cumin
Pinch of sugar
Salt, to taste

Steps:

  • Add all ingredients to a blender or food processor and pulse until it gets to the desired consistency; you can make it chunky or smooth! I like a little bit of texture so I go with slightly chunky. Add salt to taste. Chill salsa for 1-2 hours or overnight to let flavors come together. Serve with chips, on nachos, on chili, or anything you like!

This is the best salsa recipe I've found so far and I've tried about a dozen. I got it from one of the local hospital cookbooks that are sold in my area. I changed it a bit and have been canning it for years. The reason I plant a garden is for this salsa. We would be lost without it. Hope you like it as much as we do. One of our members who is a food scientist took this salsa to work, tested the pH and found it measured under 4.0 (well within the safety limit for boiling water bath processing).

8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
6 garlic cloves, minced
2 teaspoons cumin
2 teaspoons pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 (15 ounce) can tomato sauce
1 (12 ounce) can tomato paste

Steps:

  • Mix all together and bring to a slow boil for 10 minute.
  • Seal in jars and cook in hot water bath for 10 minute.
  • This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces.
  • Yields 3-6 quarts or pints.

3/4 cup Italian parsley, chopped
1/2 cup olive oil
1/4 teaspoon dried red pepper flakes (optional)
coarse salt
fresh ground pepper
1 loaf crusty bread, baquette preferably

Steps:

  • In a medium bowl combine garlic, parsley, and olive oil. Season with salt, pepper, and red pepper flakes if using.
  • Tear baquette into bite sized pieces and use for dipping into salsa. This could also be served with grilled chicken or other meats.

I am a salsa lover and Paul Newmans has a peach salsa that is great, so I went in search of a peach salsa (more tomato then peaches) and couldn't find any. I canned Wonderful Salsa, recipe #9272 last year and decided to try and can my own peach salsa. I would like to thank Jazze22 for sharing her orginal recipe. I thought that with the changes and the fact that I coudln't find one posted, I should post it in case others might be looking for a peach salsa. To reduce the heat, take out the veins and seeds in the peppers. Remember to wear gloves when handeling the peppers. I hope you enjoy it as much as I do.

The ease of preparation and the versatility of this sauce make this a dependable go-to ingredient as well as a nice table salsa.. It also freezes well, so make extra. If you do any canning, it also holds well in the pantry. Makes a wonderful cooking or baking sauce for enchiladas, Mexican lasagna, eggs or meatloaf. This recipe was recently selected as a prize-winner in a national contest for tomato products (honorable mention, but still...whoo-hoo!).

2 (14 1/2 ounce) cans diced tomatoes
1 (7 1/2 ounce) can chipotle chiles in adobo
10 garlic cloves (or more)
2 tablespoons dried oregano
1 teaspoon ground cumin
1/4 cup lemon juice, from 1 large lemon
salt and pepper, to taste

Steps:

  • Place tomatoes, with their juice, in a medium non-reactive saucepan. Finely chop or puree the chiles with their liquid and add to the tomatoes. (If a milder sauce is desired, only use half the chiles.) Bring to a boil over medium heat. Reduce heat and simmer, stirring occasionally, about 30 to 45 minutes until reduced by about one--quarter.
  • Meanwhile, thinly slice or mince the garlic cloves. Add with the remaining ingredients during the last 10 to 15 minutes of cooking time. When the salsa has reached the desired consistency, remove from the heat and let cool slightly. Adjust seasoning. and let cool to room temperature. Store in the refrigerator, tightly covered, up to one week or freeze up to 3 months.
  • NOTE: For a smoother consistency, puree all or part of the tomato-chile mixture before adding the other ingredients.

Steps:

  • Slice peeled elephant garlic into 1/4 inch sliced.rub with oil and sprinkle with salt, pepper and sugar.

  • Remove and cover with foil to continue cooking and keep warm.
