3 cups chopped cooked chicken
2 cans (10.5 oz each) condensed cream of chicken soup
2 cups shredded Cheddar cheese (8 oz)
3 cups Progresso™ plain panko crispy bread crumbs
6 tablespoons butter, melted

Steps:

  • Heat oven to 350°F.
  • Place chicken evenly in bottom of ungreased 13x9-inch (3-quart) glass baking dish. Spoon and spread soup evenly over chicken; sprinkle with cheese.
  • In medium bowl, stir bread crumbs and melted butter; sprinkle over cheese. Bake 30 to 35 minutes or until cheese is melted and bread crumbs are golden brown and thoroughly heated.

This lasagna recipe was one that we tried during The holidays about 3 years ago, and it was so delicious and easy to prepare, that we have it often. You have to try it before you crinkle your nose. Trust me. It's "wonder" full!

Number Of Ingredients 15

3 cups milk
1/2 cup flour
1 cup chicken stock
1/2 teaspoon black pepper
3 cups of shredded cooked chicken (you can use a rotisserie chicken or chicken in the can to save time)
1 large onion, finely diced
1 large tomatoes, finely chopped
1/2 teaspoon cumin
1 pinch black pepper
1/2 teaspoon salt
1 pinch cinnamon
2 tablespoons of chopped fresh dill (or 1/2 tsp dry dill)
1 cup of chopped green olives
1 loaf of your favorite white bread (all the crusts removed)
1 (18 ounce) jar mayonnaise

Steps:

  • Preheat the oven to 350 degrees.
  • Make your gravy by combining milk, flour, chicken stock and pepper and simmering on stovetop until thick and bubbly.
  • In a pan on the stovetop, fry the onions & tomatoes in a drop or two of oil and lightly simmer for about 7 or 8 minutes.
  • Add the cumin, black pepper, and cinnamon, as well as the chicken and chopped olives and the dill to the stovetop mixture.
  • Set mixture aside to cool slightly.
  • Remove the crusts from the entire loaf of white bread.
  • Spread each piece with mayonnaise,liberally.
  • Lay the first layer of bread face down (so mayo is touching glass) in a glass baking dish that has been sprayed with cooking spray.
  • Spread mayonaise on top of that first layer of bread and spread chicken mixture ontop of that.
  • Put another layer of bread, mayo face down on the chicken mixture.
  • Spread mayonnaise on top of that layer of bread.
  • Pour the flour gravy over top and spread out to evenly cover the entire casserole.
  • Bake for 30-40 minutes or until the casserole is browned and bubbly.

EASY PAPAYA CHICKEN CASSEROLE

This is a really simple meal that my husband brought back from Hawaii when he was working there 20 years ago. It's one of his all time favaorites. I credit Mrs. Haberman, for turning him on to fruit in a meat dish.

1 whole roasting chickens, cut up or 4 chicken breasts, halved
1/4 cup flour
1/4-1/2 cup butter, melted
1 cup orange juice
2 tablespoons lemon juice
1/2 cup brown sugar
1 tablespoon cornstarch
1 tablespoon soya sauce
2 cups papayas, sliced

Steps:

  • Preheat oven to 350°F.
  • Cut up whole frying chicken into pieces, or chicken breasts into halves. I like to use bone in/skin on because I think the meat is moister. I remove the skin and bones before I put the sauce over it all.
  • Dredge the chicken pieces in flour, set aside. Sometimes I use chicken coating mix, just to spice this up a bit more.
  • In a roaster or large casserole dish melt butter, dip the chicken in the butter and place buttered side up.
  • Bake the chicken for one hour or until juices run clear and the chicken is tender.
  • Carefully drain the fat out of the roaster, discard the skin and bones if necessary.
  • For the sauce: Mix remaining ingredients in a saucepan (except the papaya) and bring to a boil.
  • Once boiling and thickened add the papaya to the chicken in the roaster.
  • Pour the sauce over all, and put back in the oven for 5 minutes.
  • Let this mixture stand for 5 more minutes before serving, so the papaya can heat through.
  • If you serve this dish with rice, double the sauce recipe.
