With its unique, deep blue color and effervescent charm, this Champagne cocktail is perfect for New Year's Eve or any other festive occasion. The subtle floral hints of crème de violette pair perfectly with the bright, seasonal citrus and your favorite gin. Leftover crème de violette can be stirred into glazes for pastry or used to macerate berries.

Number Of Ingredients 6

Lemon slice, clear sanding sugar or edible glitter, and lemon twists (for serving; optional)
4 ounces crème de violette
2 ounces fresh clementine or orange juice
2 ounces fresh lemon juice
2 ounces gin
Champagne or sparkling wine (for serving; about 10 ounces)

Steps:

  • Rub half the rim of 4 stemmed glasses (preferably coupe glasses) with lemon slice and dip into sanding sugar, if using. Chill glasses until ready to use.
  • Combine crème de violette, clementine juice, lemon juice, and gin in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 30 seconds. Strain into prepared glasses, top off with Champagne, and garnish with a lemon twist, if using.
  • Do Ahead
  • Cocktail base (without champagne) can be made 1 day ahead; cover and chill.

Fresh juice, such as pink grapefruit, blood orange, pomegranate or cranberry-apple
Citrus-flavored club soda, very cold
Grapefruit and orange zest, for garnish
Pomegranate seeds, for garnish
Red apple slices, for garnish

Steps:

  • Fill a large goblet halfway with white wine€, and then fill another quarter with your juice of choice, and finish with club soda. Garnish according to the juice, using zest, pomegranate seeds or apple slices.

3 medium carrots, halved and thinly sliced
3/4 cup chopped celery
1 medium onion, chopped
2 green onions, thinly sliced
1 tablespoon butter
1 tablespoon olive oil
1 garlic clove, minced
7 cups reduced-sodium chicken broth or vegetable broth
3 cups cubed peeled potatoes
2 cups cubed peeled butternut squash
2 large tart apples, peeled and chopped
2 medium turnips, peeled and chopped
2 parsnips, peeled and sliced
1 bay leaf
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
Additional thinly sliced green onions, optional

Steps:

  • In a Dutch oven over medium heat, cook and stir the carrots, celery and onions in butter and oil until tender. Add garlic; cook 1 minute longer. , Add the broth, potatoes, squash, apples, turnips, parsnips and bay leaf. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. , Stir in the basil, thyme and pepper; simmer 15 minutes longer or until vegetables are tender. Discard bay leaf before serving. Garnish with additional green onions if desired.

2 tablespoons butter
1 pound Yukon Gold potatoes, diced
½ pound fresh shiitake mushrooms, diced
1 red bell pepper, diced
1 small acorn squash, diced
1 shallot, finely chopped
2 teaspoons garlic powder
1 pinch salt
1 pinch ground black pepper
1 cup chopped kale
4 sprigs fresh sage

Steps:

  • Place oil and butter in a large skillet over medium heat. Melt butter and mix in potatoes, mushrooms, pepper, squash, and shallot. Season with garlic powder, salt, and pepper. Cook 25 minutes, stirring occasionally, until potatoes are tender.

2 cups fresh or thawed frozen cranberries
1 cup sugar
1 cup vodka
Two 750ml bottles of champagne

Steps:

  • To make, puree cranberries, sugar, and vodka in a blender until smooth. Strain and chill until cold, or up to 1 week. Fill a flute with 3 tablespoons cranberry-vodka mixture and about 1/2 cup bubbly per glass. For the ombre effect, tilt flute and gently pour Champagne down one side into glass. Serve immediately.
