Great salad you can serve on the side of a main dish or add roasted chicken and have as a meal! Chopped Belgian endive and radicchio can be substituted for the baby greens if you prefer a more exotic twist on salad recipes.

1 teaspoon stone-ground mustard
2 tablespoons balsamic vinegar
¼ cup olive oil
1 apple, diced
1 pear, diced
¼ cup dried cranberries
1 (10 ounce) package mixed baby greens
¼ cup crumbled blue cheese
2 tablespoons chopped walnuts

Steps:

  • Whisk the mustard and vinegar together in a small bowl. Drizzle in the olive oil while whisking to create a dressing; set aside.
  • Place the apple, pear, cranberries, baby greens, blue cheese, and walnuts into a large salad bowl. Toss gently to mix, then pour on the dressing, and toss to coat.

2/3 cup sour cream
1/3 cup mayonnaise
2 medium apples, chopped into 1/2 inch cubes (2 cups)
2 teaspoons lemon juice
1/2 cup dried sweetened cranberries (Craisins)
1/2 cup green seedless grape, halved
1/2 cup walnuts, chopped
1 celery rib, chopped (1/2 cup)

Steps:

  • To prepare the dressing stir together sour cream and mayonnaise in small bowl.
  • Set aside.
  • Gently toss apples with lemon juice in large bowl.
  • Add all remaining salad ingredients.
  • Add dressing; toss to coat.

6 cups Romaine lettuce salad
1/2 cup chopped sweetened pecans
1/2 cup Craisins
1 gala apple (chopped)
1 green apple (chopped)
1/4 cup red onion (diced)
1/3 cup Feta cheese crumbles
2 teaspoons poppy seeds
4 Tablespoons apple cider vinegar
2 Tablespoons honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
2/3 cup olive oil

Steps:

  • In a large bowl, combine the Romaine salad, pecans, Craisins, apples, red onion, and feta cheese.
  • I like to leave mine on top for presentation, but you can mix it all together.
  • In a smaller bowl, mix the poppy seed, apple cider vinegar, honey, Dijon mustard, salt, and slowly add in the olive oil, stirring constantly.
  • Pour the dressing over the salad.
  • Serve immediately.
