BEEF TENDERLOIN WITH RED WINE GLAZE



Beef Tenderloin with Red Wine Glaze image

Number Of Ingredients 12

1 pound cippolini onions
One 6- to 7-pound beef tenderloin, trimmed
Sea salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
2 onions, roughly diced
1 head of garlic, cut in half
1 bunch fresh thyme
10 medium carrots, peeled
4 tablespoon unsalted butter
1 quart beef stock
One 750-milliliter bottle red wine
Watercress, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • For the cippolini onions: Slice off the root end of the cippolinis. Put the cippolinis on a sheet pan and bake for 10 minutes in their skins. Remove from the oven, allow to come to room temperature, peel and reserve.
  • For the beef tenderloin: Tie the beef tenderloin and season it generously with salt and pepper. Heat a large skillet over medium-high heat. Add the olive oil, then the tenderloin. Sear in the skillet on all sides, about 2 minutes per side. Arrange the onions, garlic, thyme and carrots around the beef and add 2 tablespoons butter. Transfer to the oven and roast until the internal temperature registers 125 degrees F, about 15 minutes.
  • Remove the tenderloin from the skillet and let rest. Add 1 cup each of the beef stock and wine to the vegetables, along with the cippolini onions, and bring to a simmer, basting the vegetables occasionally. Cook until the liquid begins to reduce and thicken, about 15 minutes. Remove and reserve the carrots and cippolini onions and strain the liquid into a clean medium saucepan.
  • Add the remaining beef stock and red wine to the liquid in the saucepan and cook over medium-high heat until it reaches a glaze-like consistency, 10 to 15 minutes. Reduce the heat and, while whisking, add remaining 2 tablespoons of butter. Whisk until the butter is fully absorbed and the glaze has a nice sheen. Season with salt and pepper.
  • Cut tenderloin in half and submerge each piece in the red wine glaze, coating well. Remove beef, take off string and slice into 1-inch pieces. Arrange sliced beef on a platter and top with the reserved carrots, cippolini onions and watercress.

1 cup (2 sticks) unsalted butter, cut into pieces, plus more for pan
1/3 cup all-purpose flour, plus more for pan
8 ounces bittersweet chocolate (at least 70% cacao), chopped
1 cup sugar
4 large eggs
3/4 teaspoons kosher salt
Glaze and assembly:
8 ounces bittersweet chocolate (at least 70% cacao), finely chopped
1/4 cup (1/2 stick) unsalted butter, cut into small pieces
1/2 teaspoon kosher salt
1/2 cup powdered sugar
1/2 cup red wine (such as Pinot Noir)

Steps:

  • For cake:
  • Preheat oven to 325°F. Lightly butter and flour pan. Heat chocolate, sugar, and 1 cup butter in a heatproof bowl set over a saucepan of simmering water (bowl should not touch water), stirring, until chocolate is almost completely melted, about 3 minutes; remove from heat and continue to stir until chocolate is completely melted. Let cool completely.
  • Using an electric mixer on medium speed, add eggs to chocolate mixture 1 at a time, beating to blend after each addition. Beat until mixture has a mousse-like consistency. Reduce speed to low and add salt and 1/3 cup flour; mix until smooth. Scrape batter into prepared pan; smooth top.
  • Bake cake until top is firm and edges are slightly darkened, 55-65 minutes (rely on visual cues; a tester inserted into cake's center will come out clean before cake is truly done). Transfer pan to a wire rack and let cake cool completely in pan before turning out.
  • For glaze and assembly:
  • Heat chocolate, butter, and salt in a heatproof bowl set over a saucepan of simmering water (bowl should not touch water), stirring, until chocolate and butter are melted, about 5 minutes. Whisk in powdered sugar.
  • Meanwhile, bring wine just to a boil in a small saucepan.
  • Remove chocolate mixture from heat and whisk in wine; let cool until slightly thickened and a rubber spatula leaves a trail in mixture when stirring, 8-10 minutes.
  • Set cake on a wire rack set over a rimmed baking sheet. Pour glaze over cake and spread it across the top and over the edges with an offset spatula. Let cake stand at room temperature until glaze is set, 2-3 hours.
  • DO AHEAD: Cake can be made and glazed 2 days ahead. Chill. Bring to room temperature before serving.

2 1/4 pounds beef tenderloin, trimmed and tied
8 sprigs fresh rosemary
16 shallots, trimmed and peeled
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 cup dry red wine
1/2 cup homemade or canned low-sodium chicken stock or water

Steps:

  • Let tenderloin come to room temperature, about 45 minutes. Heat oven to 425 degrees with rack in center. Arrange 7 rosemary sprigs in a medium roasting pan; place tenderloin on top. Arrange shallots around tenderloin. Rub meat and shallots with oil; sprinkle with salt and pepper.
  • Roast 25 minutes. Turn shallots for even browning; if roast is dry, baste with more oil or pan juices. Cook until shallots are golden, 10 to 15 minutes more; transfer to a small bowl; reserve. Meat should register 120 degrees with instant-read thermometer; timing will vary with thickness of meat. Transfer beef to a medium platter. Let sit 20 minutes at room temperature before carving.
  • Meanwhile, chop remaining rosemary into small pieces. Place roasting pan over high heat. Add wine and stock. Cook, scraping bottom of pan to collect any cooked-on bits, until liquid has reduced by half, 6 to 8 minutes. Pass through strainer. Serve beef with gravy and reserved shallots.

  • Preheat the oven to 400 degrees F.
  • Combine the honey, sugar, wine, and cinnamon in a 9-inch baking dish. Add the fruit and toss to coat. Roast until tender, 20 to 30 minutes. When the fruit is cooked, remove it from the pan, and reduce the oven temperature to 350 degrees F.
  • Meanwhile, toss the almonds and sugar together, then add the egg white, and mix well to coat. Lightly grease a baking sheet and spread the almond mixture on it. Bake the almonds, turning them with a spatula every 5 minutes, until golden brown and caramelized, about 10 to 12 minutes.
  • Serve the fruit warm or at room temperature, with the almonds sprinkled on top.

  • Pat filets dry and season with salt and pepper. In a small bowl whisk together Port, vinegar, and mustard until combined well.
  • In a non-stick skillet heat oil over moderately high heat until hot but not smoking and cook filets 4 minutes. Turn filets and cook 4 minutes more for medium-rare. Transfer filets to a warm platter. Pour Port mixture carefully down side of skillet and boil, stirring, until reduced to about 2 tablespoons. Serve filets with glaze.

1 tablespoon freshly chopped sage leaves

2 tablespoons olive oil
Red Wine Cranberry Glaze, recipe follows
1 cup dried cranberries
3 cups dry red wine
2 oranges, zested and juiced
1 cup sugar

Steps:

  • In a medium saucepan over medium heat, bring the salt, sugar and 2 cups water to a boil and simmer until salt and sugar dissolve. Remove pan from heat. Add juniper, sage and red pepper flakes. Let steep 5 minutes. Pour 4 to 5 cups water and 2 cups ice into the brine. When brine is chilled, submerge chops into mixture for at least 6 hours and up to overnight, refrigerated. When ready to cook, preheat oven to 350 degrees F. Remove pork from liquid and pat dry. Heat oil in a medium saute pan over medium heat. Cook pork until nicely caramelized about 6 minutes per side. Remove to oven to cook through completely, about 10 minutes. Let rest 5 minutes before slicing.
  • Serve with Red Wine Cranberry Glaze.
  • Combine all ingredients into a medium saucepan over medium heat. Bring to a simmer. Reduce heat to low and reduce liquid by half.
  • Yield: 2 cups

  • Make brownies:
  • Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with wax paper or greased foil.
  • Melt chocolate and margarine in a metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove from heat and cool 5 minutes.
  • Beat eggs, sugar, and salt in a large bowl with an electric mixer on high speed until pale and thick. Beat in chocolate in 3 batches on low speed. Stir in zest, matzo meal, and nuts just until blended.
  • Spread batter in baking pan and bake in middle of oven until firm and a tester comes out clean, 25 to 30 minutes. Cool in pan on rack, then invert onto a platter and remove paper or foil.
  • Make glaze:
  • Whisk together sugar, cocoa, and wine in a small saucepan. Bring to a boil, whisking, then simmer 2 minutes, whisking occasionally. Add chocolate and whisk until melted. Remove from heat and whisk in margarine until smooth. Chill glaze, stirring occasionally, until spreadable.
  • Spread glaze over brownies and arrange walnut halves on top. Cut into 16 squares with a large knife, wiping it off with a damp cloth between cuts.

4 garlic cloves, minced

1/2 lb ground pork

vegetable oil, for brushing
1 1/4 cups dry red wine
1/4 cup sugar
1 tomatoes, finely chopped
1 teaspoon unsulphured molasses
1 pinch ground allspice

Steps:

  • Preheat the oven to 350°F
  • In a large bowl, combine the bread pieces with the milk and mash to a paste.
  • Add the whole egg, egg yolk, chopped parsley, sage, thyme, salt, black pepper, nutmeg and cayenne and stir until smooth.
  • Add the Parmigiano-Reggiano and dry bread crumbs and stir until thoroughly combined.
  • In a medium skillet, melt the butter.
  • Add the onion and cook over moderate heat until softened, about 7 minutes.
  • Add the garlic and cook just until fragrant, 1 minute longer.
  • Let cool, then transfer to the bowl.
  • Add the lamb, pork and veal and knead until evenly combined.
  • Brush a medium oval baking dish with oil or cooking spray
  • Transfer the meat loaf mixture to the dish and pat it into a 4-by-12-inch oval loaf.
  • Bake for about 50 minutes, or until firm but not quite cooked through.
  • Meanwhile, in a medium saucepan, combine the red wine with the sugar, chopped tomato, molasses and allspice and bring to a boil over moderate heat, stirring to dissolve the sugar.
  • Boil until the glaze is thick and syrupy, about 15 minutes.
  • Brush half of the glaze over the meat loaf.
  • Continue baking for about 20 minutes longer, until an instant-read thermometer inserted in the center registers 150°F; brush once more with the remaining glaze during baking.
  • Let the meat loaf rest for 15 minutes, then thickly slice and serve.

2 tablespoons honey
2 tablespoons light brown sugar
2 tablespoons light-bodied red wine (recommended: Beaujolais)

3/4 cup almonds, sliced
1/4 cup granulated sugar
1 large egg white

Steps:

  • Preheat oven to 400 degrees.
  • Quarter the fruit and remove all the seeds and pits. Combine the honey, brown sugar, wine and cinnamon in a 9-inch baking dish. Add the fruit and toss to coat. Bake until tender, 20 to 30 minutes. When the fruit is done, remove it and lower the oven temperature to 350 degrees. Meanwhile, toss the almonds and granulated sugar together, then add the egg white and mix well to coat. Lightly grease a baking sheet and spread the almond mixture on it. Bake the almonds, turning them with a spatula every 5 minutes until golden brown and caramelized, 10 to 12 minutes. Serve the fruit warm or at room temperature, with the almonds sprinkled on top.

Port Wine Glaze
1 1/4 cups port wine
2 medium cloves garlic , peeled and cut into thin slivers
4 sprigs fresh thyme
Crisp Roast Duck
1 whole Pekin duck (about 4 1/2 pounds), neck and giblets discarded, prepared according to illustrations 1 and 2 below
Table salt and ground black pepper

Steps:

  • For the glaze: Bring all ingredients to boil in small saucepan. Reduce heat to medium-low and simmer until slightly thickened and reduced to scant ¼ cup, 25 to 30 minutes. Remove and discard garlic and thyme; set glaze aside until ready to use. For the duck: Meanwhile, set V-rack in large, high-sided roasting pan and position duck, breast side up, on rack. Add water to just below bottom of duck. Bring water to boil over high heat, cover pan tightly with aluminum foil (or pan cover, if available), adjust heat to medium (to maintain a slow, steady boil), and steam, adding more hot water to maintain water level if necessary, until skin has pulled away from at least one leg. For duck with very moist, tender meat and slightly crisp skin once roasted, steam about 40 minutes. Steam 10 minutes longer for somewhat denser meat and very crisp skin after roasting. Transfer duck to carving board and, when cool enough to handle cut into six pieces. Adjust oven rack to bottom position and heat oven to 425 degrees. Season pieces on both sides with salt and pepper to taste and position skin side down in lightly oiled roasting pan. Roast, carefully pouring off fat if more than two tablespoons accumulate in pan, until skin on breast pieces is rich brown color and crisp, about 25 minutes. Transfer breast pieces to platter and cover with foil to keep warm. Again, pour off excess fat from pan, turn leg/thigh and wing pieces skin side up, and continue roasting until skin on these pieces is deep brown and crisp, 15 to 20 minutes longer. Again, pour off excess fat from pan. Return breast pieces to pan and brush both sides of every piece with glaze. Roast until glaze is hot and richly colored on duck pieces, 3 to 4 minutes. Serve immediately. Cooled duck, either whole or cut into pieces, can be wrapped in foil and refrigerated overnight.

1 (3 ounce) box instant vanilla flavor pudding and pie filling

1 (18 1/4 ounce) butter recipe cake mix
1/2 cup vegetable oil
4 eggs

1/4 cup chablis
1/4 cup water
1/2 cup butter

Steps:

  • Heat oven to 325 degrees. Grease and flour Bundt pan. Place nuts in bottom of pan. Mix pudding mix, wine, water, cake mix oil and eggs in bowl and beat 2 minutes. Pour batter over nuts in cake pan.
  • Bake 55 to 60 minutes. Remove from oven. Poke holes all over cake.
  • Combine topping ingredients in saucepan. Bring to boil and boil for 2 minutes. Spoon hot topping over hot cake. Let cool before serving.

2 pounds of Chinook Salmon cut into 4 equal pieces. (leave skin on)
2 cups of quality port
6 tablespoons of Hoisin sauce
1 lemon sliced in half and seeds removed
1/2 cop soy sauce
1/2 cup fish sauce
Kosher Salt
Fresh ground black pepper

Steps:

  • Glaze: In a medium saucepan, mix all ingrediants except Salmon and lemon. Cook on low heat until a low boil and stir constantly to spread hoisin sauce. Divide lemon in half. One component will be sliced and used in final presentation and the other half will be used in the glaze. Squeeze lemon's juice into mixture and add lemon body to mixture. Low boil until mixture becomes a syrup (35 minutes approximately). Watch carefully and do not let burn. Upon reaching syrup point, pour into a container and store in refrigerator for 1 hour. Salmon: Rinse fresh salmon under cold water, pat dry, and inspect for any bones. Place salmon in bowl with the skin side down. Proceed to salt and pepper the fish according to your taste. Next, spread the glaze over the salmon with a pastry brush. Put in the refrigerator covered for 1/2 hour. Prepare grill accordingly. Allow the grill to heat for 1/2 hour prior to placing fish. Place fish on grill skin side down. Spread more glaze on surface of fish. Allow to cook for 7 minutes per side. (Depends on thickness, fish should be 145 degrees when done) Allow fish to rest 3 minutes prior to serving. Prior to presentation, Drizzle glaze on fish. Proceed with adding lemon slices to plate and serve with rice or risotto and your favorite vegetable.

Perfectly cooked steaks, nicely seasoned with a rich sweet and slightly spicy glaze. The rib eyes should be room temperature so bring meat out of the refrigerator 1 hour before searing. Use tongs so not to puncture the meat. This serves 12 normal adults. 1/4 pound per adult. BUT if like my Husband he'll eat the whole steak himself. I just don't know how he does it! Leftovers are nice over a bed of greens and a blue cheese dressing.

3 lbs rib eye steaks, 2 steaks 1 1/2 -2 inches thick room temperature
2 tablespoons flour
1 tablespoon blackening seasoning
oil
1 large onion, peeled and cut into half moon slices
1 -2 garlic clove, minced
1/3 cup port wine
1 tablespoon butter

Steps:

  • Preheat oven to 400 degrees.
  • Heat cast iron pan to medium high/ high heat.
  • Mix flour and seasoning together. Dry meat with a paper towel. Coat meat with the flour seasoning mix.
  • Add onions and garlic to the remaining flour and toss to barely coat.
  • Pour oil in a cast iron pan just to cover bottom.
  • Pan sear meat on one side for 3 minutes, flip to other side for 3 minutes.
  • Then place on end in pan, they are thick enough to stand on their own.
  • Add onion and garlic to pan around the meat.
  • Place thermometer in to meat and place into oven.
  • Roast till desired doneness.
  • Rare - 130 to 140 degrees F; medium-rare - 140 to 150 degrees F; medium - 150 to 160 degrees F; medium-well - 160 to 170 degrees F,.
  • Remove, tent lightly with foil and rest for 10 minutes.
  • Meanwhile add port to the onions in the pan over medium high heat to deglaze scraping all the goodness from pan. Reducing by halve. Stir in the butter to thicken and serve over the steaks.
  • Slice across the grain.
  • Serve as individual steaks or slice just before serving on warmed plates.

Red wine and peppercorns produce a rich taste. This was in the newspaper and I'm posting here so I don't lose it. Intend to try it this Easter. Total cooking time is guestimate since I haven't tried it out yet.

1 (6 -8 lb) smoked bone-in ham, shank portion
2 1/2 cups cabernet sauvignon wine or 2 1/2 cups pinot noir wine
2 tablespoons chopped shallots
1/2 teaspoon finely chopped fresh thyme
1 teaspoon cracked black pepper
5 tablespoons liquid honey (divided)
1 cup canned reduced-sodium chicken broth
1 tablespoon cornstarch
1 tablespoon butter

Steps:

  • In medium saucepan, combine wine, onion and thyme. Bring to a boil; redure heat and simmer uncovered 5 minutes. Remove from heat. Set aside 1 cup for serving sauce.
  • Place ham in a shallow baking pan; score by making diagonal cuts, about 1/8" deep, in a diamond pattern in surface of ham. Sprinkle with pepper and rub into surface cuts with fingers. Brush ham with 3 Tbsp honey.
  • Pour 1/4 c of the wine mixture over ham and bake in centre of pre-heated 350F oven for 1 1/2 to 2 1/2 hours or until an instant read thermometer inserted in the thickest portion (not touching the bone) registers 140F or 15 to 18 minutes per pound, basting every 30 minutes with 1/4 cup of the remaining wine mixture.
  • Remove ham from oven. Transfer to a cutting board and loosely cover with foil. Let rest for 10 to 15 minutes before slicing. Discard wine mixture in pan.
  • Meanwhile, in a medium saucepan, combine 1/2 cup of remaining wine mixture and chicken broth. Bring to a boil; reduce heat. Cook uncovered until reduced to 1 cup. Stir cornstarch into remaining 1/2 cup wine mixture and then stir into hot wine-broth mixture. Add remaining 2 Tbsp honey and butter. Bring to a boil; reduce heat. Simmer uncovered for 2 minutes, stirring occasionaly.
