GRILLED FLANK STEAK WITH SHALLOT AND RED WINE SAUCE

4 shallots, sliced in thin rings
4 tablespoons olive oil
1 cup red wine
1 cup beef broth
Salt and freshly ground black pepper
1 (1 1/2 pound) piece flank steak
1 tablespoon cold butter, in small chunks
Special Equipment: A grill or grill pan

Steps:

  • In a medium saucepan over medium-high heat, saute the shallots in 2 tablespoons of the olive oil until lightly caramelized, about 5 to 7 minutes. Raise the heat to high and add the red wine and reduce by half. Add the broth and reduce by half. Check for seasoning, and season with salt and pepper, to taste. Keep warm on low heat.
  • Brush the flank steak on both sides with 2 tablespoons of the olive oil and season with the salt and pepper. Place on the center of grill and sear 5 to 8 minutes per side for rare to medium rare, testing by pressing the meat with a finger: The spongier the meat feels, the rarer it is cooked. Remove from the grill and allow to rest, very loosely tented with aluminum foil, 5 to 10 minutes, to allow the juices to reabsorb into the meat. Slice the flank steak on the diagonal and place on a large platter. Finish the sauce by swirling in the chunks of cold butter, then top the steak with some of the sauce and serve the rest on the side.

2 tablespoons olive oil
2 1/2 cups sliced shallots (about 12 ounces)
2 tablespoons minced garlic
1 teaspoon sugar
1 tablespoon all purpose flour
1 tablespoon minced fresh thyme
2 teaspoons minced fresh rosemary
1 bay leaf
1 teaspoon grated orange peel
Pinch of ground nutmeg
Pinch of ground cloves
3 1/4 cups canned beef broth
1 1/2 cups dry red wine
1/4 cup brandy
Tenderloin
2 tablespoons fresh rosemary leaves
2 tablespoons fresh thyme leaves
4 large garlic cloves, peeled
2 bay leaves
1 large shallot, peeled, quartered
1 tablespoon grated orange peel
1 tablespoon coarse salt
1 teaspoon ground black pepper
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 tablespoons olive oil
2 2-pound (large end) beef tenderloin pieces, trimmed
1/4 cup ( 1/2 stick) unsalted butter, room temperature

Steps:

  • For sauce:
  • Heat oil in large saucepan over medium-low heat. Add shallots and garlic; sauté until tender, about 10 minutes. Stir in sugar; sauté until shallots are golden, about 15 minutes longer. Add flour, herbs, orange peel, nutmeg and cloves; stir 1 minute. Pour in broth, wine and brandy. Boil until sauce is reduced to 1 3/4 cups, about 20 minutes. Discard bay leaf. (Can be made 2 days ahead. Chill.)
  • For tenderloin:
  • Grind first 10 ingredients in processor. With machine running, add oil and blend well. Spread mixture evenly over all sides of tenderloins. Place beef in large glass baking dish. Cover with foil; chill at least 6 hours. (Can be made 1 day ahead. Keep chilled.)
  • Preheat oven to 400°F. Place beef on rack in large roasting pan. Roast until meat thermometer inserted into center of beef registers 125°F for rare, about 35 minutes. Remove from oven and cover with foil; let stand 10 minutes.
  • Transfer beef to cutting board. Pour any accumulated juices from roasts into sauce. Bring sauce to boil. Remove from heat; whisk in butter. Season with salt and pepper. Slice beef. Serve with sauce.

CALF'S LIVER WITH SHALLOT AND WINE PAN SAUCE



Calf's Liver with Shallot and Wine Pan Sauce image

I can't resist a piece of calf's liver when I see it-all too infrequently-in the meat counter. It's even better if you get it from a considerate butcher who will cut an even-sized 1/4-inch slice and spare you the finicky job of removing the outside membrane. Liver in a winey sauce is particularly good on a cold winter night; somehow I always feel my red corpuscles are strengthened by its rich meatiness. I like it with some potatoes alongside. If you have a couple of cooked potatoes, you can brown them in a little butter while the liver cooks, or if you don't have them on hand, try grating a medium raw potato through the coarse holes of a grinder and make a quick potato pancake.

A generous sprinkling of all-purpose flour
Salt
1 tablespoon butter
A slice of liver, 1/4-inch thick
1 fat shallot, finely chopped
2 good splashes of red wine
Freshly ground pepper
A scattering of chopped parsley leaves

Steps:

  • Sprinkle the flour and a pinch of salt on a piece of wax paper. Dredge the liver, cut into two pieces if it is large, in the flour. Heat 1 teaspoon of the butter in a small heavy skillet over moderately high heat. When it starts to sizzle, drop the liver into the pan. Sauté quickly, still over quite high heat, for about 1 minute on each side, then remove to a plate. Clean out the burned butter left in the pan, let the pan cool a little, and melt the remaining butter over moderate heat. Toss in the shallot. Cook, stirring, until it softens, and splash a little wine into the pan. Let it reduce quickly and then add another splash and return the liver to the pan. Cook to warm through. Check to see if the liver is done to your liking by cutting into a piece; I like it still rosy. Salt and pepper the liver lightly, remove to a warm plate, spooning the shallot and pan sauce over it, and sprinkle parsley on top.
  • I find the usual supermarket-packaged piece of liver too big for me so I set aside a piece, about 2 ounces, to make an unusual and delicious pasta (see page 182).

Mmmm. This is a healthier version of a sauce for sauteed fish that's usually made with butter. It's delish on fish! Recipe is from Cook's/America's Test Kitchen...one of their "Light" books, but I can't remember which one.

1 teaspoon vegetable oil
3 medium shallots, minced (about 1/2 cup)
1/4 dry white wine
1/2 cup low sodium chicken broth
3 tablespoons light cream cheese
1 tablespoon capers, rinsed and drained
1 tablespoon minced fresh parsley
1 tablespoon fresh lemon juice
salt and pepper

Steps:

  • Combine oil and shallots in small saucepan over medium-low heat.
  • Cover and cook, stirring occasionally, until softened, about 4 minutes.
  • Add the wine, increase the heat to medium-high and simmer until the pan is almost dry, about 2 minutes.
  • Add the chicken broth and continue to simmer until the mixture has reduced slightly, 3-5 minutes.
  • Off the heat, whisk in the cream cheese, capers, parsley and lemon juice.
  • Season with salt and pepper to taste and serve over sauteed or pan-fried fish.

SHALLOT AND RED WINE SAUCE

250 g shallots, sliced
2 tablespoons olive oil
1 garlic clove, slightly crushed (Not minced)
1 sprig rosemary
5 tablespoons balsamic vinegar
400 ml red wine
400 ml beef stock
2 tablespoons butter
ground black pepper

Steps:

  • Saute the shallots in a medium saucepan with the oil, over high heat for 3 minutes until lightly brown. Stir them all the time and adjust heat if they start to get too brown. Season with ground black pepper and then add the garlic and rosemary. Continue cooking for 3 more minutes. Stir all the time and adjust the heat to keep from getting too brown.
  • Pour in the vinegar and cook until it evaporates to a syrup, then pour in the wine and cook until reduced by 2/3.
  • Pour in the stock and bring to a boil. Turn down the heat and simmer until reduced by 2/3 again, to around 250 ml.
  • Remove the garlic and rosemary.
  • Add a little salt if necessary.
  • Finally whisk in the butter.
  • Serve over steak before serving.

1 cup raw-blackened hazelnuts
2 cups panko (Japanese bread crumbs)
6 to 7 ounces skinless/boneless Menemsha sole fillet
Salt and freshly ground black pepper
Flour, for dusting
8 large egg whites
4 ounces canola oil, divided
4 large baking potatoes, skinned, cut into 2 pieces
6 ounces half-and-half
6 roasted shallots, pureed
Salt and freshly ground black pepper
3/4 pound baby yellow pattipan squash, cut in 1/2
3/4 pound baby green zucchini, cut in 1/2
3/4 pound pen asparagus
Salt and freshly ground black pepper
4 tablespoons butter, optional
2 cups Marsala wine
2 tablespoons chopped shallots
1 cup heavy cream
1 tablespoon cornstarch mixed smooth with 1 tablespoon water
8 ounces softened butter
Salt and freshly ground black pepper
1 dash hot sauce
1 dash Worcestershire sauce
Freshly chopped chives, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • In a food processor add hazelnuts and pulse 4 times at 5-second intervals. Add panko to the hazelnuts and pulse again for 10 seconds. Season the sole with salt and pepper, to taste, and lightly dust the sole with flour, shaking off the excess. Dip the sole into egg whites coating entirely, shaking off excess, press into hazelnut breading. Refrigerate for 10 minutes or up to 24 hours. Heat a large saute pan on medium heat. Add 2 ounces canola oil and the sole. Cook for approximately 1 minute, checking carefully with a spatula to make sure they are golden brown. Flip and continue cooking for 1 minute longer and then transfer to sheet pan. Repeat the process with the remaining oil and sole.
  • Place the baking sheet in the preheated oven for 8 to 10 minutes (depending on thickness of fillet) or until fish is cooked through but still moist.
  • Mashed Potatoes: Cook the potatoes through in a 6-quart stock pot with 4 quarts of salted water for approximately 30 minutes. Drain potatoes well. Beat with an electric mixer on low speed. Add half-and-half, shallot puree and salt and pepper, to taste. Cover and keep warm.
  • Vegetables: In a pot big enough to hold all the vegetables, bring salted water to a boil. Drop in vegetables and cook until al dente, approximately 2 minutes, drain well. Toss back in pot, season with salt and pepper and add butter, if using. Keep warm until ready to serve.
  • Marsala Wine Buerre Blanc: Reduce the Marsala wine and shallots in a heavy bottom pan over medium-high heat and reduce to 1/2 cup. Add heavy cream and bring back to simmer. Whisk in the cornstarch and water mixture, also known as a slurry. Reduce heat to low, whisk occasionally for 1 minute longer. Remove from heat. Add softened butter, 1-ounce at a time, whisking until smooth. Season with salt, pepper, hot sauce and Worcestershire sauce. Serve immediately.
  • For assembly: Divide potatoes among 6 to 8-inch plates, placing them in the center. Place the Menemsha sole on top. Top 1 corner of the sole with 2 ounces of Marsala Wine Buerre Blanc. Arrange the vegetables around the plate, garnish with chives.

1/2 cup dry red wine
1/4 cup dry Marsala wine
3/4 cup beef or veal demiglace*
2 tablespoons red currant jelly
1 1/2 tablespoons unsalted butter, cut into bits
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Heat reserved skillet over moderately high heat until oil is hot but not smoking, then saut é shallot until golden, about 2 minutes. Add red wine and Marsala and deglaze skillet by boiling, stirring and scraping up brown bits, until liquid is reduced by about one third. Add demiglace and jelly and briskly simmer, whisking, until jelly is incorporated, about 2 minutes. Add butter, 1 bit at a time, whisking until incorporated, then remove from heat.
