1 cup whole kernel brown buckwheat
1 Tbsp olive oil or canola oil
2 cups reduced sodium broth (I used reduced sodium "Better Than Bouillon" 2 tsp in 2 cups boiling water)
1/2 tsp salt (omit salt if using regular broth)
3-4 mushrooms (sliced)
1/2 medium onion (finely diced)
1 Tbsp unsalted butter

Steps:

  • Chop mushrooms and finely dice onion. Rinse the buckwheat and drain well.
  • Heat a large skillet over medium heat. Once it's hot, add 1 Tbsp olive oil. Add buckwheat and saute, stirring occasionally for 3-4 minutes. Transfer to a medium pot.
  • In the same skillet, Add 1 tbsp oil. Add onions and Saute for 1-2 minutes. Add mushrooms and continue to saute until mushrooms are soft.
  • Add your mix to the buckwheat and stir.
  • Pour your broth over the buckwheat mix. Stir in 1/2 tsp salt and top with 1 Tbsp butter. Bring everything to a boil then reduce heat to low and cover with a tight fitting lid. Simmer for 15 minutes or until kernels are soft and fluffy. 6.Remove from heat and let it stand covered for an additional 10 minutes.

BUCKWHEAT KASHA WITH WILD MUSHROOMS AND ONIONS



Buckwheat Kasha with Wild Mushrooms and Onions image

A simple recipe for roasted buckwheat kasha with caramelized onions, wild mushrooms, butter and herbs. It's dense enough to be a main dish by adding a salad, some leftover meat, and a dollop of sour cream. Serves 4-6

¼ teaspoon salt (plus more to taste)
2 cups water
1 cup roasted kasha/buckwheat groats*see note
4 tablespoons animal fat (especially duck or chicken fat, or unsalted butter)
8 oz yellow onion (1 large diced ½ inch)
12 oz wild mushrooms
Fresh chopped dill or your favorite herb (optional)
Unsalted butter (softened, for serving)

Steps:

  • Bring the kasha and water to a boil in a small pot the the ¼ teaspoon of salt, then turn the heat to low, cover, and cook until the kasha is tender, about 15-20 minutes, then keep warm.
  • Meanwhile, in a large pan, cook the onion on medium high heat in the fat until starting to brown and fizzle around the edges, then remove from the pan and reserve (can be done ahead of time). I like my onions with a touch of black on them. Leave some fat behind in the pan.
  • Add the mushrooms to the pan with 1/4 cup water and cook on medium heat, stirring occasionally, until the pan is dry and the mushrooms are wilted and cooked. Add another spoonful of fat if needed.
  • Season the mushrooms to taste with salt and pepper, then add ¾ of the onions to the pan, along with the kasha, double check the seasoning, adjust until it tastes good to you.
  • Stir in the dill, and serve with the remaining onions spooned on top, along with extra chopped dill and soft butter at the table. It reheats very well.

1 ounce dried cepes, porcini or other wild mushrooms
2 pounds white mushrooms
1/2 pound shiitake mushrooms
1 sprig fresh thyme
1/2 teaspoon black peppercorns
3 quarts cold water

Steps:

  • Combine all the ingredients in a large pot over medium low heat. Simmer for 2 hours and strain.
  • Discard the mushrooms. The broth will keep for up to one week in the refrigerator or up to two months in the freezer.

1/4 pound oyster mushrooms (pleurotes)
1/4 pound fresh shiitakes
1/4 pound chanterelles
1/4 pound white button mushrooms
1 package enoki mushrooms, for garnish
3 tablespoons butter
2 tablespoons dark soy sauce
2 tablespoons sake
1/2 cup dashi stock (see recipe)
1 pound mushroom-flavored or regular soba (buckwheat noodles) available in Japanese groceries and health-food stores
2 tablespoons chopped parsley, for garnish

Steps:

  • Wash all mushrooms and pat dry. Remove stems, and cut all mushrooms (except enoki garnish) into bite-sized pieces.
  • Melt butter in a large skillet. When butter is hot, add the mushrooms, except the enoki, and saute over medium-high heat for a few minutes. Add soy sauce, sake and dashi. Reduce heat to low, cover, and cook 15 minutes. Add more dashi if necessary.
  • Bring an ample amount of water to a boil. Add the soba, stir well and cook until al dente. Drain in a colander, and transfer to serving bowl.
  • Pour mushroom sauce over the soba and toss well. Garnish with enoki tops and chopped parsley.

A surprisingly easy dried porcini broth plus a mix of fresh wild mushrooms gives this soup its rich flavor and stunning look.

For the Mushroom Broth:
1 1/2 ounces dried porcini mushrooms
6 garlic cloves, gently smashed
1 small bunch thyme
2 bay leaves
1/2 teaspoon whole black peppercorns
For the Mushroom Soup:
1 1/2 cups medium egg noodles
Kosher salt
12 ounces wild mushrooms, cut into 1/4" pieces if large
2 medium carrots, peeled, cut into 1/8"-thick slices
2 stalks celery, cut into 1/8"-thick slices
3 scallions, thinly sliced, green and white parts separated
Freshly ground black pepper
2 tablespoons celery leaves, coarsely chopped

Steps:

  • Make the Mushroom Broth:
  • Submerge porcini mushrooms in 3 quarts cold water in a large bowl. Let stand at room temperature at least 2 hours or chill overnight.
  • Pour mushrooms and liquid into a fine-mesh sieve set over a wide heavy pot, gently pressing mushrooms to extract as much liquid as possible. Reserve mushrooms for another use.
  • Add garlic, thyme, bay leaves, and peppercorns to pot and bring to a simmer over medium-high heat. Reduce heat to medium-low and gently simmer, stirring occasionally, until broth is reduced to 6 cups, about 1 hour. Strain broth through fine-mesh sieve into a large bowl; discard solids. Return broth to pot.
  • Assemble the Mushroom Soup:
  • Cook noodles in a large pot of boiling salted water, stirring occasionally, until just al dente, 7-8 minutes. Drain; rinse under cold water.
  • Meanwhile, bring Mushroom Broth to a simmer over medium-high heat. Add wild mushrooms, carrots, celery stalks, scallion whites, 1 tsp. salt, and 1/8 tsp. pepper; simmer until tender, about 5 minutes.
  • Add noodles and scallion greens to soup; season with salt and pepper. Transfer to a large serving bowl and top with celery leaves.
  • Do Ahead
  • Soup (without noodles) can be made 3 days ahead. Let cool, transfer to an airtight container, and chill.

KOREAN CHILLED BUCKWHEAT NOODLES WITH CHILLED BROTH AND KIMCHI



Korean Chilled Buckwheat Noodles With Chilled Broth and Kimchi image

This recipe is inspired by the signature Korean summer noodle dish, naeng myung. The traditional dish is made with a strong beef broth. I'm using a vegetarian broth I make with dried mushrooms and kelp, adapted from a recipe in Deborah Madison's "Vegetarian Cooking for Everybody." You could also use chicken stock. The dish can include chicken or meat, or it can be vegetarian, as this version is, with tofu standing in for chicken. It can also be vegan if you omit the boiled eggs. Make the broth a day ahead so that it will be nice and cold.

6 dried shiitake mushrooms or a small handful of dried porcinis or other dried mushrooms
1 bunch scallions, sliced, or 1/2 cup chopped chives
1 4- to 6-inch stick of kombu
1 medium carrot, sliced thin
A handful of mushroom stems, or a couple of dried shiitakes
5 cups water
Soy sauce to taste
Salt and sugar to taste
9 ounces soba noodles (1 package imported)
2 tablespoons dark sesame oil
1 cup, tightly packed, cabbage kimchi, cut in thin strips (more to taste; we love it)
6 ounces firm tofu, cut in small cubes
1 bunch scallions, cut lengthwise into threads
1/2 European cucumber (about 6 ounces), cut into fine 4-inch long julienne
1/2 Asian pear or firm, ripe plum or pluot, peeled (pear only), seeded and cut into 2- or 3-inch long julienne
2 hardboiled eggs, cut into quarters
2 tablespoons seasoned rice vinegar
Korean chili powder to taste (optional)
Chopped cilantro or sprigs for garnish

Steps:

  • Make the broth. Combine all the ingredients for the broth except the salt and sugar in a saucepan and bring to a simmer. Cover and simmer 20 minutes. Strain. Season to taste with salt and sugar if desired. Place in the refrigerator until cold.
  • Cook the soba noodles. Drain well and toss with 1 tablespoon of the sesame oil. Place in the refrigerator and chill while you prepare the other ingredients.
  • Toss the kimchi with the remaining sesame oil and refrigerate. Chill all of the other ingredients.
  • Divide the noodles among 4 wide bowls. Arrange the tofu, pear or plum and vegetables on top of and around the noodles and top with wedges of boiled egg. Stir the vinegar into the cold broth. Taste and adjust salt and sugar. Ladle into the bowls. Garnish with Korean chili powder and cilantro if desired, and serve. Guests should stir the mixture so that the kimchi flavors the broth and noodles.
