1/4 cup extra-virgin olive oil
1 medium red onion, finely chopped
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
5 cups thinly sliced cremini mushrooms
2 tablespoons finely chopped fresh rosemary
1/4 cup unbleached, nonbromated flour
1/2 cup dry red wine
4 cups beef stock or chicken stock
1 cup pearled barley
1 cup unsweetened oat milk
Fresh dill, for garnish

Steps:

  • Place a large heavy-bottomed Dutch oven over medium heat. Add the olive oil and heat to shimmering, then add the onion, garlic, and a pinch of salt. Cook until aromatic and just starting to soften, about 2 minutes.
  • Add the mushrooms and rosemary and cook, stirring occasionally, until the mushrooms have given up most of their liquid and are beginning to brown, about 5 minutes.
  • Add the flour and cook for 1 minute, stirring constantly. Add the red wine and stock to deglaze the pan, scraping with a wooden spoon to loosen the browned bits on the bottom. Bring to a boil and then reduce the heat to medium-low to maintain a gentle simmer. Add the barley and cook, stirring occasionally, until it's tender, about 1 hour.
  • Stir in the oat milk. Taste and add salt and pepper if needed. Garnish with dill and serve.

5 cups sliced assorted fresh wild mushrooms, such as portabella, shiitake, oyster and/or porcini (about 10 oz total)
3 medium carrots, sliced (about 1 1/2 cups)
2 leeks, trimmed, cut in half lengthwise, rinsed and sliced crosswise (about 1 1/2 cups)
2 large cloves garlic, finely chopped
1/2 cup uncooked pearl barley
5 1/4 cups Progresso™ beef flavored broth (from two 32-oz cartons)
1/2 cup dry sherry or Progresso™ beef flavored broth
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In cooker, mix ingredients.
  • Cover; cook on Low heat setting 8 to 10 hours. Stir well before serving.

1 liter water or 4 1/4 cups water
30 g dried mushrooms or 1 1/2 ounces dried mushrooms, any variety
1 tablespoon butter
1 onion, finely diced
1 stalk celery, finely diced
1 carrot, finely diced
1/4 cup sherry wine
1/2 liter vegetable stock or 1/2 liter chicken stock
1 cup pearl barley
2 teaspoons thyme, chopped

Steps:

  • Heat water to steaming and add mushrooms.
  • Cover and let stand for at least 20 minutes until soft.
  • Strain, reserve broth and chop mushrooms.
  • Melt butter, add onion, reduce to low and cook, stirring often until caramelized (15 minutes).
  • Add celery and carrots, cook 5 minutes.
  • Add mushrooms, cook 2 minutes.
  • Add Sherry and cook until almost evaporated.
  • Stir in mushroom broth (reserved liquid from soaking), stock & barley.
  • Simmer 30 minutes until almost tender.
  • Stir in thyme, salt & pepper.
  • Simmer 5 to 10 minutes until tender.
  • For Vegetarian use the Vegetable stock.

1-2 T. garlic
3 T. butter (or olive oil)
¾ cup onion, finely diced
¾ cup leek, sliced
1 cup carrots, sliced
1 cups parsnips, diced
1 pound mushrooms, cleaned and sliced
1 oz. dried ---in addition to white mushrooms----put in 1 c. hot water to soften
1 t. kosher salt
2-3 t. sage, finely chopped
½ cup dry Madeira
1/3 cup wild rice
¼ cup pearl barley
5 cups of vegetable stock or chicken stock or non-chicken stock
1 scallion, thinly sliced---for garnish
Saute onions, leeks, carrots, parsnips and garlic until softened, about 5 minutes. Add the mushrooms, salt, pepper and sage. Cook until the mushrooms have softened.
Add the madeira and reduce by half over high heat. Stir in rice, barley and stock. Bring to a boil, reduce the heat, and simmer covered for about 40 minutes or until the rice is tender. Serve garnished with sliced raw scallions.
NOTE: to store the soup, strain the broth from the solids and refrigerate separately. Otherwise all the liquid will be absorbed into the grains.

1.5 Cups diced onions
1.5 Cups sliced or diced carrots
1/2 cup diced celery
3 large portobello mushrooms, diced
1 cup sliced shiitake mushrooms
1 cup sliced chanterelle mushrooms
1.5 cups pearl barley
2.5 quarts chicken or beef stock
2 cups Burgandy wine
1 teaspoon dried oregano
1 tsp dried basil
3 Tbls tomato paste
1 cup enoki mushrooms
2 tsp balsamic vinegar
Kosher salt and fresh ground pepper

Steps:

  • Heat a stockpot over medium-high heat. Add olive oil and garlic. Stir quickly, then add the onions, carrots, and celery. Saute for 5 minutes. Add portabellas, shiitakes, and chanterelles. Saute for 5 minutes more. Add barley, stock, wine, oregano, basil and tomatoe paste. Stir to combine. Bring to boil. Reduce heat to medium and simmer 45 minutes to 1 hour. Remove from heat. Stir in enoki mushrooms and season with vinegar, salt and pepper.
