3/4 cup butter softened
2 tablespoons powdered sugar
1 cup flour
1/2 cup seedless raspberry or strawberry jam
1/4 cup honey
2 tablespoons brown sugar packed
1 teaspoon vanilla
1 cup quick cooking rolled oats
1 cup granola (without dried fruit)
1 cup Fisher chopped pecans
1 cup semi sweet chocolate morsels

Steps:

  • Preheat oven to 350°F. In mixing bowl cream 1/2 cup butter and powdered sugar; stir in flour. With lightly floured fingers, pat dough into ungreased 9x9 inch pan. Bake 10 minutes. Remove; cool 10 minutes. Spread jam evenly over crust. Combine in a bowl remaining 1/4 cup melted butter, honey, brown sugar and vanilla. Stir in oats, granola, pecans, and chocolate. Pat firmly over jam layer. Bake 30 minutes or until golden brown. Cool; cut into squares. Yield: 16 bars

1 3/4 cups oats
1/4 cup bob's red mill wheat bran or 1/4 cup oat bran
3/4 cup walnuts, chopped
1/2 cup unsalted sunflower seeds
2 teaspoons avocado oil or 2 teaspoons any vegetable oil
1/3 cup honey, use a good quality
3 -4 drops sweetleaf stevia, to taste
1 teaspoon vanilla extract
1/2 cup dried cranberries
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees, spray an 8 inch square baking pan with cooking spray and line with parchment paper. Spray again and set aside.
  • Place the oats, wheat bran, walnuts and sunflower seeds on a cooking sheet. Bake for about 10 to 12 minutes or until lightly toasted. Then set aside.
  • Place the honey in the microwave for about 15 seconds. Just to loosen up a little. . In a medium mixing bowl, add the honey, oil and vanilla along with the salt and SweetLeaf.
  • Add the toasted dry ingredients and mix gently to combine. Add in the dried cranberries.
  • Pour into baking pan and with wax paper, press the mixture to make sure you level out and covers the pan.
  • Bake for about 15 to 17 minutes. You will see the top will be lightly browned. Try not to over bake.
  • Place on a cooling rack. Let cool down at least 1 hour. Cut into 16 squares and enjoy!

1 1/2 c firmly packed brown sugar
1/4 c margarine or btuuer softened
2 Tbsp honey
1 large egg white
1 c all purpose flour
1 Tbsp cinnamon, ground
1/2 tsp baking powder
1 c quick cooking rolled oats
1 c rice krispies cereal
1 c rasins
1/2 c shelled sun flower seeds

Steps:

  • 1. Hear oven to 350. Prepare 9X13 pan with n0nstick cooking spray.
  • 2. In a large mixing bowel, combine brown sugar, margarine honey and egg white. Beat till well blended.
  • 3. Sift Flour, cinnamon and Baking powder together and add to mixture. Stir well.
  • 4. Stir in oats, cereal, raisins and sun flower seed. mix well.
  • 5. Press firmly into prepared 9X13 pan.
  • 6. Bake at 350 for 14-18 min or till eggs are light golden brown and center appears set.
  • 7. Cool completely, Cut into bars (36). I individually wrap mine for a grab on the go bar, or you can store in tightly covered container.
  • 8. Makes 36 bars, 90 calories, 2 grams fat and 0mg cholesterol

These Granola Bars are wonderful as a snack. We pack them in a snack sack when we travel. I use white, wholewheat flour which makes them more healthy.
