EASY PASTA PRIMAVERA RECIPE
Simple pasta primavera with roasted vegetables and dressed in a light sauce using the pasta cooking water, extra virgin olive oil, lemon zest and a little Parmesan cheese. I use a medley of vegetables, and you can feel free to change them up depending on what is in season! This is a great way to keep your primavera exciting and delicious. If you want to add some extra protein, throw in some quick lemon chicken or grilled shrimp skewers.

Steps:
- Heat oven to 450 degrees F.
- Place the vegetables in a large mixing bowl. Add garlic, oregano, and thyme. Season with a big pinch of kosher salt and black pepper. Drizzle a good amount of extra virgin olive oil. Toss to coat.
- Transfer the vegetables to a large sheet pan (or two if needed). Spread them out well. Roast in heated oven for about 20 minutes (stirring half-way through).
- While the vegetables are roasting, cook the pasta in salted boiling water according to package (about 10 to 12 minutes). Reserve some of the pasta cooking water. Drain pasta.
- Transfer pasta to a large bowl and season with salt and pepper, and if you like, a little oregano and fresh thyme. Add the vegetables in. Add the tomatoes and lemon zest. Add a bit of the pasta cooking water, a bit of extra virgin olive oil. Toss to combine.
- Sprinkle Parmesan cheese and serve immediately.

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, heat oil in an extra-large skillet over medium-high heat. Add onion; cook until softened, 2 to 3 minutes. Add asparagus, mushrooms, and squash; cook until just tender, about 5 minutes. Add tomatoes, carrot, garlic, oregano, black pepper, salt, and red pepper flakes; cook until tomatoes begin to soften, about 1 minute.
- Drain penne; stir into vegetable mixture along with 1/4 cup Parmesan cheese. Top servings with remaining cheese and serve with lemon wedges.

- Heat the olive oil and garlic in a large skillet over medium heat. When garlic is tender, remove from skillet and set aside. Place the broccoli and carrot in the skillet, and cook 2 minutes, just until heated through.
- In a pot, bring the vegetable broth to a boil. Stir in the penne pasta and heated crushed garlic clove. Cook for 5 minutes, or until pasta is almost al dente. Remove and discard garlic clove.
- Transfer the partially cooked pasta and broth to the skillet. Mix in the peas. Cover skillet, and continue cooking 10 minutes over medium heat, or until pasta is al dente and vegetables are tender. Toss with the Parmesan cheese to serve.

PASTA PRIMAVERA
Steps:
- Heat the oil in a large saute pan over medium-high heat. Cook garlic until soft, about 1 minute. Add peppers and cook until they begin to soften, about 3 minutes. Add mushrooms, asparagus and tomatoes and cook until softened, an additional 5 minutes. Stir in flour and cook for 1 minute more. Add chicken stock, milk, salt and pepper and bring to a boil; reduce to a simmer and cook until liquid has thickened slightly, about 5 minutes. Stir in carrot strips.
- Meanwhile, cook pasta according to package directions; drain, reserving 1/2 cup pasta water. Toss pasta with vegetables and sauce. Add pasta water, if necessary, to loosen mixture. Serve garnished with Parmesan, parsley and basil.

Steps:
- Toast pine nuts in a dry skillet over medium heat until all the nuts are slightly browned, about 2 minutes. Set aside.
- Cook pasta according to package directions; drain.
- While pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add carrots; cook for 30 seconds while stirring. Add zucchini and squash; cook, stirring, until tender, about 3 minutes. Remove vegetables from skillet.

- 1. COOK Whole wheat pasta ,according to package directions. ADDING asparagus, bell peppers and peas during last 2 to 3 minutes of cooking. DRAIN , it and save (reserving 1/4 to 1/2 of pasta water for later. RETURN ...pasta to pot.
- 2. MEANWHILE ,sprinkle chicken with 1/2 tsp. salt 1/2 of the pepper. HEAT. 1tablespoon.. of olive oil,in a large cast iron fry pan, over medium heat-- high heat until hot....COOK chicken 8 to 10 minutes or until no longer pink in the center. Turning once ,remove chicken .COVER Loosely witfoil.
- 3. HEAT remaining 1- tsp.oil in the cast iron pan ,until hot.... COOK and stir shallots i minute or until .CRISP- Tender ADD sour cream; bring to a boil.,add 2,crushed cloves fresh garlic. Stir in the Reserved cooking pasta water.
- 4. ADD chives, basil ,lemon peel and the remaining salt and pepper for taste. POUR OVER ..... PENNE PASTA THINLY SLICED CHICKEN; Toss with the penne. IF using shrimp only cook the shrimp just for a few minutes until no longer pink.(so it want be overcooked.(cook shrimp last until ready to mix everything together .

WHOLE WHEAT PASTA PRIMAVERA
I love to find new and interesting vegetarian pasta dishes. The carmelized roasted vegetables in this dish add a really nice depth of flavor. This is a variation of a recipe I saw made on Giada DeLaurentis' "Every Day Italian". I like to try and use whole wheat pasta whenever I can in most of my pasta dishes. Not a BIG fan of zucchini, so I decided to substitute broccoli instead, cuz I LOVE it sooo much!. I also roasted a head of garlic in with the veggies, but that, of course, is optional. The original recipe added the cherry tomatoes in, UNROASTED, at the end. I did not read carefully enough, and roasted them right in the pan with everything else. They ended up being just fine roasted, but you may do either way. I catagorized this recipe under "vegan", but left in the grated cheese in as an option!

- Preheat oven to 450 degrees.
- In a large bowl, toss all the vegetables (minus the cherry tomatoes) with the olive oil, salt, pepper, italian spices, garlic powder and crushed red pepper, if using.
- Arrange the vegetables on 2 large baking sheets, making sure they are in an even layer.
- Bake until carrots are tender, and remaining vegetables begin to brown slightly, and carmelize.
- It is a good idea to lightly toss the vegetables after about 10 minutes of cooking.
- Cook pasta according to package directions in boiling salted water.
- Drain pasta and reserve about 1 cup of the cooking liquid.
- Toss the pasta and vegetables in a large bowl.
- Add the cherry tomatoes and any of the reserved cooking liquid is pasta seems dry.
- Season again with salt and pepper to taste.
- Sprinkle with grated cheese of your choice and fresh basil leaves.
PASTA PRIMAVERA WITH SMOKED GOUDA
What better way to get your veggies in than with a savory Italian dish like Pasta Primavera. My version combines a little bit of heat from red pepper flakes with fresh vegetables, herbs and the smokey flavor of a smoked Gouda cheese. It's a wonderful combination of crunchy and creamy.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil.
