Number Of Ingredients 10

1 cup all-purpose flour
1 cup oats
1 cup whole wheat flour
3 teaspoons baking powder
1 cup light brown sugar
1 cup reduced-fat evaporated milk
1 cup melted margarine or 1 cup butter
4 eggs or 1 cup egg substitute
1/2 cup raisins
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a loaf pan. In a large bowl.
  • Whisk together the dry ingredients (first 5).
  • Add the milk, margarine, and eggs, mixing just until combined.
  • Fold in the raisins and pecans. Bake for 50 minutes, then test with a long skewer inserted in the center, if it comes out clean it is done. If it isn't, cover with foil and bake for 10 minutes longer and check again.
  • Let cool a few minutes and unmold.
  • Serve warm or at room temperature.

1/2 cup quick-cooking oats
3/4 cup boiling water
1/4 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1large egg, room temperature
2/3 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Place oats in a small bowl; add boiling water. Let stand for 20 minutes. , In a small bowl, cream shortening and sugars. Add oat mixture and egg; mix well. Combine the flour, baking soda, cinnamon and salt; add to creamed mixture and beat until combined. , Pour into an 8-in. fluted tube pan coated with cooking spray. Bake at 350° for 22-27 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

3 ¾ cups rolled oats
1 cup whole wheat flour
1 teaspoon white sugar
1 ¼ teaspoons salt
½ teaspoon baking soda
½ cup cold butter, cubed
¼ cup hot water, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a heavy baking sheet with parchment paper.
  • Mix oats, whole wheat flour, sugar, salt, and baking soda together in a bowl. Rub in butter with your fingers until mixture is chunky. Pour in enough water to form a thick dough.
  • Spread a thin layer of oats and whole wheat flour on a flat work surface. Turn out dough and pat to an even thickness. Cut into circles using the rim of a drinking glass. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until golden brown, 20 to 30 minutes.

1/2 cup oat bran
1/2 cup rolled oats
2 tablespoons ground flax seeds
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 cup honey
1/4 cup extra virgin olive oil
1 cup apple juice
1 tablespoon vanilla extract
4 eggs

Steps:

  • Preheat oven to 350.
  • Spray 10 inch pan with oil.
  • In bowl, combine all dry ingredients.
  • In another bowl combine all wet ingredients and mix well.
