Number Of Ingredients 10

1 cup instant brown rice
1 can (11 ounces) mandarin oranges
1/4 cup chopped cashews
1/4 cup chicken broth
2 tablespoons soy sauce
2 tablespoons teriyaki sauce
3/4 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 tablespoon canola oil
1/2 cup chopped bok choy
1/4 cup minced chives

Steps:

  • Cook rice according to package directions. Meanwhile, drain oranges, reserving 1/2 cup oranges and 2 tablespoons juice (save remainder for another use)., In a small bowl, combine the cashews, broth, soy sauce, teriyaki sauce and reserved juice; set aside. In a large wok or skillet, stir-fry chicken in oil until no longer pink. Add cashew mixture; cook 1 minute longer. Add the bok choy, chives and reserved oranges; cook and stir for 2 minutes., Fluff rice with a fork; serve with chicken mixture.

Cashews give this classic treat an update to please all the sweet-toothed among us. If you like, swap in almond butter for the peanut butter.

Number Of Ingredients 4

1/2 cup brown rice syrup
3/4 cup natural peanut butter
3/4 cup cashews, toasted and chopped (or your favorite nut)
3 cups brown rice crisp cereal

Steps:

  • Oil a 9-inch square baking pan and set aside.
  • Bring rice syrup to boil in a medium saucepan. Lower heat and simmer for about 2 minutes.
  • Add peanut butter and turn heat to low. Mix thoroughly, about 3 minutes.
  • Combine cashews with rice crisp cereal in a mixing bowl.
  • Add peanut butter mixture to rice crisp cereal mixture and stir until thoroughly combined.
  • Scoop into baking pan, pressing firmly. Let cool completely, then cut into squares and serve.

Make Your Own Takeout Cashew Chicken or Pork with Orange Sauce and Scallion Rice image

Number Of Ingredients 12

2 cups chicken stock
2 tablespoons canola, vegetable or other high-temperature cooking oil
1 cup white rice
1 small bunch scallions, thinly sliced on an angle
6 chicken cutlets or chicken thighs or 6 thin pork loin chops
1 large bundle broccolini or 1 head broccoli
Salt
1 1/2 inches fresh gingerroot, peeled and finely chopped or grated
2 to 3 garlic cloves, finely chopped
3 tablespoons tamari (aged soy sauce)
1/3 cup orange marmalade
1/2 cup roasted unsalted cashews

Steps:

  • In a sauce pot, heat 1 1/2 cups of the stock and 1 tablespoon of the vegetable oil. Bring to a boil and stir in the rice. Lower the heat and bring to a bubble, cover, and simmer until the rice is tender, about 18 minutes. Fluff with a fork and add the scallions.
  • Meanwhile, thinly slice the chicken or pork.
  • Trim the broccolini or broccoli and cut into 2-inch pieces or florets. Bring 2 inches of water to a boil in a shallow pot or deep skillet over medium heat. Salt the water and cook the broccolini or florets until tender-crisp, about 3 to 4 minutes. Drain.
  • Heat a large skillet over high heat while the broccolini cooks. Add 1/2 tablespoon of the oil and when it begins to smoke or ripple, add the chicken and brown it for 5 to 6 minutes, turning once, then transfer it to a plate. Add the remaining 1/2 tablespoon of oil to the pan, stir in the ginger and garlic and cook for 1 minute. Add the tamari, the marmalade, and the remaining 1/2 cup of chicken stock. Slide the chicken, broccolini, and cashews into the pan and stir to combine with the sauce. Simmer for another 1 to 2 minutes.
  • Scoop the chicken mixture into serving dishes, top with a scoop of rice, and serve.

1 cup water
1 cup orange juice
2 teaspoons grated orange zest
1 tablespoon olive oil
salt, to taste
1 cup basmati rice
1/2 cup roasted cashew pieces
1/4 cup chopped yellow pepper
1/4 cup chopped red pepper
3 scallions, minced
1 teaspoon salt
fresh ground white pepper, to taste
8 ounces mandarin orange segments, drained well

Steps:

  • In a 2-quart sauce pot, bring the water, orange juice, orange zest, olive oil and salt to a boil, and stir in the rice.
  • Cover the sauce pot, and simmer the rice for 25 to 30 minutes, until rice is cooked through and liquid has totally evaporated.
  • Empty the orange rice into a large mixing bowl, and add the cashew pieces, peppers and scallions.
  • Just before serving, season the rice with the salt and white pepper, and add the drained mandarin orange segments, folding them in gently to prevent the oranges from breaking.

Bok Choy, Edamame, Cashew, and Orange Rice image

1 1/2 cups long-grain brown rice, rinsed
1 tablespoon light olive oil
1 cup frozen edamame (fresh green soybeans), completely thawed
1 medium red or orange bell pepper, cut into short, narrow strips
6 stalks bok choy, sliced thinly on the diagonal (leaves included)
3 to 4 scallions, thinly sliced
1 teaspoon dark sesame oil
2 to 4 tablespoons good-quality teriyaki or reduced-sodium soy sauce
1 to 2 teaspoons grated fresh or jarred ginger
Freshly ground pepper
2 small oranges, such as clementines, peeled and sectioned
1/2 cup toasted cashew pieces

Steps:

  • Combine the rice and 3 1/2 cups water in a medium saucepan. Bring to a boil, then lower the heat. Cover and simmer gently until the water is absorbed, 30 to 35 minutes.
  • A few minutes before the rice is done, heat the oil in a stir-fry pan. Add the edamame and bell pepper and stir-fry over medium-high heat for 2 to 3 minutes. Add the bok choy and scallions and continue to stir-fry for 1 to 2 minutes, just until wilted.
  • Stir in the cooked rice and sesame oil, mixing well. Season to taste with teriyaki sauce, ginger, and pepper. Stir in the orange sections and cashews and serve at once.
  • Menu Suggestions
  • Since this dish involves an abundance of diverse ingredients, I like to complete the meal with few additional recipes. Sautéed Tofu (page 62) can be prepared while the rice is cooking. A platter of grape tomatoes and baby carrots round out the meal nicely. If you want to add one more item, steamed broccoli would be just the thing. Or, if time is not an issue, may I suggest upgrading that to Spicy Sesame Broccoli (page 197)?
