With just a few ingredients, you can make a pizza that is simply spectacular. For an appetizer or a full meal (with a salad), just follow these easy instructions.

1 ball of pizza dough
1-2 tablespoons olive oil, spread over dough
3/4 cup grated mozzarella cheese (2 ounces/60 grams)
2 tablespoons freshly grated parmesan or romano cheese, divided
1/2 cup caramelized onions (4 & 1/2 ounces/122 grams)

Steps:

  • Preheat oven to 550 degrees F, with pizza stone set on middle rack while the oven preheats.
  • Toss or roll the dough into a flat, round shape, approximately 10-inches in diameter.
  • Spread the mozzarella and 1 tablespoon of the parmesan or romano cheese over the center of the pizza dough, leaving uncovered a ring of approximately 1-inch around the edge.
  • Add the caramelized onions, spreading them over the cheese. Sprinkle the remaining tablespoon of parmesan or romano cheese.
  • Slide the pizza onto the stone in the oven, either directly or using a pizza tray/cookie sheet. Bake for approximately 8 minutes until the crust is browning and the center bubbles. If you notice that bubbles develop on the ring of crust without cheese and onions, you should press them down or puncture them with a fork or knife. This keeps them from burning before the pizza is fully baked.
  • Once you remove the pizza from the oven, slice it into wedges for serving.

1/2 recipe basic pizza dough, recipe follows
All-purpose flour, for dusting
1 tablespoon cornmeal
6 ounces mozzarella cheese, sliced
6 ounces Taleggio cheese, diced
1/2 teaspoon fresh oregano leaves
Salt and freshly ground black pepper
2 tablespoons Parmigiano-Reggiano
2 tablespoons extra-virgin olive oil
1 package active dry yeast
1 cup warm water (110 degrees F)
Pinch of sugar
1 1/2 teaspoons salt
1 1/2 tablespoons extra virgin olive oil, plus more for coating bowl
2 1/2 to 3 cups all-purpose flour plus more, if necessary
Cornmeal, as necessary for dusting pizza peel

Steps:

  • Preheat oven to 500 degrees F and, if you have one, place a pizza stone on the bottom rack of the oven.
  • Place the rolled out pizza dough onto a pizza peel or the back of a cookie sheet, dusted with cornmeal and using flour, as necessary, to help facilitate moving the dough. Sprinkle the pizza with the cheeses, oregano, salt and pepper. Bake the pizza for 10 to 12 minutes, use the peel to turn the pizza around and back an additional, 10 to 12 minutes, or until the cheese has melted and the pizza is golden. Sprinkle the cheese and olive oil over the pizza and serve immediately.
  • In a large bowl combine yeast with water and sugar and stir well to combine. Set aside until foamy, about 5 minutes. Add the salt, olive oil, and half of the flour and mix well to thoroughly combine. Add all remaining flour except 1/2 cup and mix well with your hands, working to incorporate the flour little by little. The dough should be slightly sticky to the touch. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour, as necessary, to form a smooth and elastic dough that is not sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
  • Preheat oven to 500 degrees F and if you have one, place a pizza stone on the bottom rack of the oven.
  • Divide dough into 2 portions for 2 (12 to 14-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a 1/8-inch thickness. Transfer dough to a pizza peel (sprinkle with cornmeal to help facilitate moving dough) and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings and the thickness of the crust). Remove from the oven with a metal peel or spatula and serve immediately.
  • Yield: 2 (12 or 14-inch) pizzas or 4 calzones, serving 4 to 6

SWEET POTATO AND CARAMELIZED ONION PIZZA

This easy to make flatbread pizza features ribbons of sweet potato and a tangle of caramelized onions overtop a bed of ricotta cheese, and gets finished with fresh herbs and feta.

2 large sweet onions (peeled and cut in half then thinly sliced)
2 tablespoons butter
Kosher salt
2 store bought flat breads
1 15- ounce container whole-milk ricotta cheese
3-4 sprigs fresh thyme leaves (about 2 tablespoons)
1/2 tablespoon olive oil
1 small sweet potato (peeled)
3 ounces feta cheese
Flake sea salt

Steps:

  • Melt butter over medium heat and add onions to large skillet or pan. Stir gently to coat with butter, sprinkle with pinch or two of kosher salt. Stir onions every 5-10 minutes. Onions will begin to darken and caramelize the longer they've cooked, up to 1 hour.
  • Preheat the oven to 450°F.
  • To make each pizza: Mix ricotta cheese with olive oil and 1 tablespoon of fresh thyme leaves. Spread half of the ricotta cheese on one piece of flat bread. Top with half of caramelized onion. Using vegetable peeler, peel long ribbons of sweet potato from root to tip. Sweet potatoes will shrink as they bake so peel a few more than you think you'll need.
  • Layer sweet potatoes in ribbons then sprinkle with half of feta cheese. Top with leaves of fresh thyme and bake for 5-10 minutes or until potatoes have lightly browned. Remove from oven, drizzle with more olive oil and season with flake sea salt. Serve warm or at room temperature.

I've suggested in the box on page 141 that most of the pizza recipes in this chapter double easily if you need more servings, with the exception of this one. This is only because it would take an awfully long time to caramelize four large onions. Not that this can't be done, but it wouldn't be a particularly quick meal. However, if time is not an issue and you have a nice large pot for the onions, be my guest and make two of these amazingly delicious pizzas.

Yield makes 6 slices

1 1/2 tablespoons olive oil, plus more for oiling the pan
2 large onions, quartered and thinly sliced
3 to 4 garlic cloves, thinly sliced
1 portobello mushroom, stemmed and thinly sliced, optional
1 large sweet potato
One 12.3-ounce package firm silken tofu
1 teaspoon salt
One 12-to 14-inch good-quality pizza crust
Dried basil

Steps:

  • Preheat the oven to 425°F. Lightly oil a small baking pan.
  • Heat the oil in a medium skillet. Add the onions and sauté over medium-low heat until limp. Add the garlic and continue to sauté until the onion is deep golden, stirring frequently, about 15 minutes. If using the portobello, add it after about 10 minutes, continuing to sauté until the slices are softened and the onions golden, stirring occasionally.
  • While the onions are cooking, peel the sweet potato, quarter it lengthwise, and slice it 1/4 inch thick. Place the slices in the prepared pan in a single layer. Bake until just tender and lightly roasted, about 15 minutes. Stir every 5 minutes or so.
  • Puree the tofu with the salt in a food processor or with an immersion blender in its container.
  • Place the crust on a baking sheet or pizza stone. Spread the pureed tofu evenly over the crust with a baking spatula. When the onion mixture is done, spread it evenly over the pureed tofu. Bake for 12 to 15 minutes, or until the crust is golden.
  • Scatter the roasted sweet potato pieces over the surface of the pizza. Cut into 6 slices and serve.

This luxurious pizza is topped with tender caramelized onions spread over a creamy mixture of ricotta, Parmesan cheese and chopped Swiss chard.

2 tablespoons extra virgin olive oil
1 1/4 pounds onions, sliced
1 teaspoon chopped fresh thyme leaves
2 garlic cloves, minced
Salt
freshly ground pepper
1/2 pound chard, stemmed, leaves washed
1 14-inch pizza crust (1/2 batch pizza dough)
3/4 cup ricotta (6 ounces)
2 ounces Parmesan, grated 1/2 cup, tightly packed
1 egg yolk

Steps:

  • Thirty minutes before baking the pizza, preheat the oven to 500 degrees. Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.
  • While the onions are cooking, stem and wash the chard leaves, and bring a medium pot of water to a boil. Fill a medium bowl with ice water. When the water comes to a boil, salt generously and add the chard. Blanch for one to two minutes, just until the leaves are tender, and transfer to the ice water. Drain and squeeze out excess water. Alternatively, steam the chard for two to three minutes until wilted, and rinse with cold water. Chop the chard medium-fine.
  • Roll out the dough, oil a 14-inch pizza pan and dust with cornmeal or semolina. Place the dough on the pan.
  • In a medium bowl, combine the ricotta, egg yolk, Parmesan and chard. Spread over the pizza dough in an even layer, leaving a 1-inch border around the rim. Spread the onions over the ricotta mixture.
  • Place in the hot oven, and bake 10 to 15 minutes until the crust and bits of the onion are nicely browned. Remove from the heat, and serve hot or warm.
