Tonight I just couldn't get my act together for dinner! Came home and thought that I would have a quickie dinner - Mac and Cheese. No problem. OK...soon discovered there was a problem when I had no Mac...so off to the store I went to buy macaroni. Came home, boiled the water and macaroni and started the sauce. No milk ...or at least not enough....and no chicken bouillon. What to do? Triumph! A new Mac and Cheese recipe was born....so come share it.....it turned out surprisingly great! You can substitute chicken flavouring for the vegetable. I used what I had in the fridge....in fact I'll put this one up against my regular mac and cheese any day !

450 g macaroni (1/2 package)
4 -5 cups boiling water
2 cups extra old white cheese, shredded
2 tablespoons flour
3 tablespoons margarine or 3 tablespoons butter
1 -2 cup milk
1 (4 1/2 g) packet vegetable flavoring (I used Bovril packet)
1/4 cup white wine
1/2 teaspoon dry mustard
salt
pepper

Steps:

  • Bring water to a rapid boil.
  • Add salt to the water for taste.
  • Add the macaroni and cook until it is very tender - 10 - 15 minutes.
  • While the macaroni is cooking, heat a sauce pan on medium.
  • Add the margarine/butter to melt.
  • When melted add the flour and whisk until it is blended.
  • Add the milk (1-2 cups as needed), white wine, vegetable flavouring and dry mustard.
  • Whisk until it has thickened.
  • Add the shredded cheese.
  • Whisk them all together and turn off heat.
  • Drain the macaroni when tender, add it to the sauce, add salt and pepper to taste -- and enjoy your comfort food !

1 package (16 ounces) uncooked elbow macaroni
1 can (12 ounces) evaporated milk
1 cup whole milk
1 pound white deli cheese, cubed
8 ounces cubed white cheddar cheese
1-1/2 cups panko bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon dried parsley flakes

Steps:

  • In a large saucepan, cook macaroni according to package directions. Drain and set aside. , In same saucepan, combine the evaporated milk, whole milk, deli cheese and cheddar cheese. Cook and stir until cheeses are melted and mixture is smooth. Stir in macaroni; heat through. Transfer to a greased 13x9-in. baking dish. Combine bread crumbs, Parmesan cheese and parsley flakes; sprinkle over macaroni mixture. Cover and bake at 350° for 20 minutes. Uncover; bake until bubbly and golden brown, 10-15 minutes longer. 2 cups water
1 teaspoon garlic salt
½ teaspoon salt
¼ cup margarine

1 ½ cups shredded white Cheddar cheese
½ cup shredded Parmesan cheese, divided
¼ cup panko bread crumbs
¼ cup real bacon bits
1 tablespoon snipped chives

Steps:

  • Combine macaroni, milk, water, garlic salt, and salt in a Dutch oven on a stovetop over medium-high heat. Bring to a boil, stirring occasionally. Reduce heat to a simmer and cook, stirring frequently so noodles don't stick to the pan, until noodles are soft and most of the liquid has been absorbed, 7 to 10 minutes.
  • Remove pot from heat and stir in margarine and pepper until melted. Stir in Cheddar cheese and 1/4 cup of the Parmesan cheese until melted.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

Who doesn't love mac & cheese? I guarantee this recipe is tastier than the kind from a box. Grating the onions adds flavor without messing up the texture.

water
1 tsp. salt
1 tbsp. vegetable oil
1 1/2 c. dry macaroni
3 tbsp. butter
1/2 onion
3 tbsp. flour
2 c. milk
1 pinch nutmeg
4 oz. Monterey Jack cheese
4 oz. Cheddar cheese
4 oz. mozzarella cheese
Cooking spray
1/4 c. bread crumbs (optional)

Steps:

  • Preheat the oven to 375 degrees. Fill the 4-quart pot halfway with water. Add the salt and oil, and bring to a boil over high heat.
  • Add the macaroni and boil over low heat. (The package directions will tell you exactly how long to let the macaroni cook. But you should reduce this time by 5 minutes, because it cooks more in the oven later.)
  • When the macaroni is cooked, turn off the stove. Use pot holders if needed to pour the cooked macaroni into the colander to drain. If the pot is too large for you to easily and safely handle, have an adult do this step.
  • Melt the butter in the sauce pot on medium heat. Then cook the onion in the butter for 2 to 3 minutes. Next, whisk the flour into the butter. This is called a roux (pronounced "roo").
  • Gradually add the milk, whisking to break up as many lumps as you can. Cook the sauce, stirring occasionally with the whisk, until it thickens. It should take 5 to 8 minutes.
  • Stir the grated cheeses into the sauce with the whisk until the cheeses melt. Next, stir the macaroni into the cheesy sauce.
  • Dump the mac and cheese into the greased baking dish. Sprinkle the bread crumbs on top if you want to. Bake for 30 to 35 minutes. Use your potholders to take the baking dish out of the oven.

1 pound medium pasta shells
2 tablespoons unrefined coconut oil
2 tablespoons all-purpose flour
2 cups unsweetened almond milk or whole milk
1/2 teaspoon freshly ground white pepper
1/4 teaspoon ground mustard
One 8-ounce block cream cheese, at room temperature
8 ounces sharp white Cheddar, shredded
8 ounces white American cheese, shredded if from a block, otherwise diced
2 tablespoons white wine, optional
Kosher salt

Steps:

  • Bring a large pot of water to a boil and cook the pasta according to the package directions. Set aside.
  • Melt the coconut oil in a high-sided 10-inch saute pan over medium heat. Stir in the flour and cook until golden brown, about 2 minutes. Slowly whisk in the milk. Reduce to low heat, bring to a simmer and cook until it becomes a thin gravy, about 5 minutes. Add the white pepper and ground mustard and stir to combine. Add the cream cheese and stir until fully incorporated. Stir in the Cheddar, American cheese and wine, if using, and cook until fully incorporated. Taste and add salt as needed.
  • Add the cooked pasta to the cheese sauce and stir to thoroughly combine. Taste again and salt as needed before serving.

1 pound elbow pasta
4 ounces sliced American cheese
4 ounces sliced Cheddar
1/2 cup chopped onions
1/2 stick butter
1/4 cup all-purpose flour
4 cups milk
6 ounces grated Romano
1 pound shredded Cheddar Jack
1 tablespoon salt
1 1/2 tablespoons ground black pepper
4 ounces hot sauce
2 pounds ground beef (80/20)
8 strips bacon, cooked until crisp
4 hamburger buns, large enough for a half-pound burger

Steps:

  • Boil the pasta until cooked, 10 to 12 minutes. Drain out the water and place the pasta back into the pot. Take the sliced cheeses and cube them.
  • In a separate saucepan, fry the onions in the butter until translucent and soft. Add the flour and whisk repeatedly, making a roux, until the mixture is golden brown. Add in the milk and let simmer, stirring occasionally so it does not burn or stick, until the sauce thickens. When the sauce starts to thicken, add in the American, Cheddar, Romano and 4 ounces of the Cheddar Jack. Stir until the cheeses melt and make a thick cheese sauce. Stir in the salt and black pepper, and pour the sauce over the pasta. Add the hot sauce, and mix thoroughly until the pasta is completely coated. Place in the refrigerator and let cool.
  • Shape the beef into 4 patties. (Sprinkle with salt and pepper if you wish.) In a fry pan or skillet over medium-high heat, cook the burgers to your desired doneness.
  • In a separate fry pan, make four 4-ounce portions of the mac and cheese, placing them flat in the pan, like little mac and cheese pancakes. Warm them up and cover them with the remaining Cheddar Jack. The cheese should melt and become crispy on the bottom. Using a spatula, place the mac and cheese discs on top of the burgers, and then top with 2 strips of bacon on each. Put the burgers on the buns and enjoy your very own Mac Attack!

OLD SCHOOL MAC N' CHEESE



Old School Mac n' Cheese image

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
  • Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate. Stir Worcestershire sauce, mustard powder, onion powder, and cayenne pepper into the mixture; season with salt and black pepper.

Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely.   • Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
  • Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
  • Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.
