This recipe makes a great Christmas cookie. The white chocolate chips, chopped almonds, and dried cherry-flavored cranberries create the perfect combination in a simple soft sugar cookie dough. It just seems to taste like a 'mouthful of Christmas.'

1 cup shortening
1 cup butter, softened
2 ¼ cups white sugar
3 eggs
1 tablespoon vanilla extract
1 teaspoon almond extract
5 ¼ cups all-purpose flour
1 tablespoon baking powder
1 ½ teaspoons salt
1 cup slivered almonds, chopped
1 cup white chocolate chips
1 (6 ounce) package cherry-flavored sweetened dried cranberries (such as cherry-flavor Craisins®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sugar, shortening, and butter together in a large bowl with an electric mixture until smooth. Beat eggs, vanilla extract, and almond extract into butter mixture.
  • Whisk flour, baking powder, and salt together in a bowl. Gradually add flour mixture to butter mixture until dough just comes together. Stir almonds, white chocolate chips, and dried cranberries into the dough.
  • Drop rounded tablespoons of dough about 2 inches apart on baking sheets. Bake cookies until bottom edges are light golden brown, 10 to 12 minutes. Cool cookies for 5 minutes before transferring to a wire rack to cool completely.

These are a must for the holidays Use a good quality white chocolate such a Bakers or Lindt, or decorate with coloured frosting. Plan ahead the dough needs to chill for 2 hours, or freeze for up to 1 month. You can also sprinkle with very finely chopped almonds on top of the chocolate.

1 1/2 cups powdered sugar
1 cup butter (no subs!)
1 large egg
2 1/2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 -5 ounces white chocolate, melted
finely chopped almonds (optional)

Steps:

  • In a large bowl using an electric mixer beat sugar and butter until light (about 5 minutes).
  • Beat in egg and vanilla.
  • In a small bowl mix together flour, baking powder and salt; add to the creamed mixture JUST to combine.
  • Divide the dough in half and gather each pieces into a ball, then flatten into a disc.
  • Wrap in plastic wrap and chill for a minimum of 2 hours or more, or freeze.
  • Set oven to 325°F (second-lowest rack).
  • Roll out one disc on a lightly floured surface to about 1/8-inch thickness.
  • Using assorted cookie cutter cut out cookies and transfer to a ungreased cookie sheet, leaving 1-inch between cookies.
  • Gather dough scraps and re-roll.
  • Repeat with remaining dough disc.
  • Bake cookies until pale golden (about 13 minutes).
  • Transfer to racks and cool.
  • Melt the white chocolate and spoon into a pastry bag (1/16-inch tip size) or just drizzle with a small spoon.
  • Pipe the chocolate onto the cookies in a decorative pattern.
  • Sprinkle lightly with very finely chopped almonds if desired, then let stand until the chocolate sets.

1 4-ounce bar white chocolate, chopped
2 3/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon baking powder
1/2 teaspoon salt
2 sticks unsalted butter, at room temperature
1/2 cup sugar
1 large egg
1 teaspoon pure vanilla extract
Royal icing, for decorating
Holiday nonpareils, for decorating

Steps:

  • Put the chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted, about 2 minutes. Let cool slightly. Whisk the flour, baking powder and salt in a medium bowl.
  • Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in the egg until smooth. Beat in the melted white chocolate, then the vanilla. Reduce the mixer speed to low and beat in the flour mixture in three additions until just combined. Divide the dough between 2 sheets of plastic wrap and pat into disks; wrap and refrigerate until firm, at least 2 hours or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Roll out the dough on a floured surface until 1/4 inch thick. Cut out cookies using a 3- to 3 1/2-inch cookie cutter. Arrange 1 1/2 inches apart on the prepared pans. Freeze until firm, about 10 minutes. Gather the scraps and refrigerate until firm, then reroll once, cut out more cookies and freeze.
  • Bake, switching the pans halfway through, until the cookies are firm and the edges are light brown, 12 to 15 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.
  • Decorate the cookies with royal icing. Sprinkle with nonpareils. Let set, about 1 hour.

3/4 cup granulated sugar, divided
1/2 teaspoons plus 2 tablespoons matcha
2 cups all-purpose flour
3/4 teaspoons baking soda
1/2 teaspoons kosher salt
1 cup (2 sticks) plus 2 tablespoons unsalted butter, cut into pieces, room temperature
1/2 cup (packed) light brown sugar
1 1/2 tablespoons honey
1 large egg
1 large egg yolk
2 teaspoons finely grated lemon zest
3 ounces white chocolate, chopped

Steps:

  • Whisk 1/2 cup granulated sugar and 1/2 teaspoons matcha in a small bowl; set aside.
  • Whisk flour, baking soda, salt, and remaining 2 tablespoons matcha in a medium bowl. Using an electric mixer on mediumhigh speed, beat butter, brown sugar, honey, and remaining 1/4 cup granulated sugar in a medium bowl until light and fluffy, about 4 minutes. Add egg, egg yolk, and lemon zest and mix until very pale, about 4 minutes.
  • Reduce mixer speed to low and, with motor running, add flour mixture; mix until no dry spots remain. Using a wooden spoon or rubber spatula, mix in white chocolate.
  • Wrap dough in plastic and chill at least 2 hours and up to 5 days. If chilling more than a few hours, let dough sit at room temperature 1 hour to soften before scooping and baking.
  • Preheat oven to 350°. Scoop the dough by the scant tablespoonful onto 2 parchment-lined baking sheets, spacing about 1" apart. (Or, for neat and tidy cookies with perfect edges, like the ones in our photo, portion same amount of dough into the cups of a mini muffin pan coated with nonstick vegetable oil spray.)
  • Bake cookies, rotating baking sheet halfway through, until bottoms and edges are barely golden and cooked (top will no longer look wet), 8-10 minutes.
  • Immediately-but gently-toss cookies in reserved matcha sugar and place on wire racks; let cool.

Steps:

  • Mix flour, zest and baking soda until blended. Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Gradually add flour mixture, beating well after each addition.
  • Shape into 2 (8-inch) logs; wrap in plastic wrap. Refrigerate 1 hour.
  • Heat oven to 350°F. Cut dough into 1/4-inch-thick slices; place, 2 inches apart, on baking sheets sprayed with cooking spray.

16 1/2 ounces Pillsbury sugar cookie dough
1/2 cup dried cranberries
1/2 cup chopped hazelnuts
12 ounces white chocolate chips

Steps:

  • Let dough come to room temp and pre-heat oven to 350 degrees.
  • Flatten dough out into a "rectangle" with your hands.
  • Pour the dried cranberries and hazelnuts over dough.
  • Combine the dough into a ball mixing the dried cranberries and hazelnuts into the dough evenly.
  • Once evenly combined make the dough back into a log.
  • Take a sheet of wax paper and place log onto it.
  • Roll dough up in the wax paper making the log about the same size as the orignal one you bought and then tighten the ends closed.
  • Place in freezer for 15 minutes.
  • Cut approximately 16 slices and place 2 inches apart on cookie sheet. Cook for 13-15 minutes, or until cookie are a light golden brown all over.
  • Cool cookies on rack.
  • While cookies cool melt the white chocolate chips in microwave safe dish on 50% power for 90 seconds. Take dish out and stir. Place back in microwave on 50% power for 1 more minute. Take out and stir.
  • Dip cookies in the melted white chocolate covering only 1/2 the cookie. Place on wax paper to dry.

  • 1.In a large bowl gently melt the white chocolate with the butter in a microwave, remove the chocolate and butter when it's begun melting and stir it until the melting is complete. 2.Add the sugar to the melted mixture and beat well to dissolve the sugar and then beat in the eggs one at a time. 3.In a separate bowl combine all dry ingredients and mix well. 4.Mix the dry ingredients in to the butter mixture. 5.Cover bowl or put dough in a plastic bag and put in the refrigerator to chill for at least 6 hours. WHEN READY TO BAKE: 1.Preheat oven to 375 degrees. 2.Remove from fridge and take approximately 1/5 of the dough and place on lightly floured surface. 3.Roll dough into balls of about 1-1 1/2 inch in size and using your hands. 4.Roll the balls in white sugar place on parchment paper lined cookie sheets and press to flatten to about 1/4 inch thick. 5.Bake for 6-8 minutes (oven temps vary so check around 6 mins). 6.Cool on the sheet for at least 3 mins and then remove to a wire cooling rack.
