3/4 cup Gold Medal™ all-purpose flour
1/4 cup sugar
1/4 cup butter or margarine, softened
1/4 cup finely chopped pecans
1/4 teaspoon salt
1 egg yolk
1 cup sugar
1 tablespoon Gold Medal™ all-purpose flour
2 teaspoons grated lime peel
3 tablespoons lime juice
3 eggs
Several drops green food color
Raspberries or maraschino cherries, if desired
1/2 cup white vanilla baking chips
2 tablespoons butter or margarine
2 tablespoons light corn syrup
1 to 2 teaspoons hot water

Steps:

  • Heat oven to 350°F. In medium bowl, mix 3/4 cup flour, 1/4 cup sugar, 1/4 cup butter, the pecans, salt and egg yolk. Press on bottom and 1/2 inch up sides of ungreased square pan, 9x9x2 inches. Bake about 20 minutes or until golden.
  • In medium bowl, beat 1 cup sugar, 1 tablespoon flour, the lime peel, lime juice, 3 eggs and the food color with electric mixer on medium speed until slightly thickened. Pour over baked layer. Bake 25 to 30 minutes or just until no indentation remains when touched lightly in center. Cool completely, about 1 hour.
  • In 1-quart saucepan, heat baking chips, 2 tablespoons butter and the corn syrup over low heat, stirring constantly, until smooth. Stir in water until spreadable. Spread cooled bars with glaze. Refrigerate 30 minutes. For bars, cut into 6 rows by 6 rows. Top each with raspberry. Store covered in refrigerator up to 48 hours.

¼ cup butter
½ lime, zested
1 egg
⅓ cup white sugar
1 teaspoon vanilla extract
1 teaspoon fresh lime juice
⅔ cup all-purpose flour
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x8-inch baking dish.
  • Combine white chocolate, butter, and lime zest in a saucepan over medium-low heat; cook and stir until completely melted, 5 to 10 minutes. Remove from heat.
  • Beat egg in a bowl using an electric mixer until thickened and foamy; add white chocolate mixture, sugar, vanilla extract, and lime juice. Mix well. Fold 2/3 cup plus 1 tablespoon flour into mixture until batter is just mixed. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 15 to 25 minutes. Cool blondies before cutting into bars.

7 ounces high-quality white chocolate (such as Lindt), chopped, plus white chocolate curls (optional garnish)
27 chocolate sandwich cookies (about 11 ounces)
1/2 cup chilled whipping cream
1 8-ounce package cream cheese, room temperature
3 tablespoons sugar
3 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
Lime slices or lime twists (for garnish)

Steps:

  • Line 8x8x2-inch square baking pan with foil, extending over all sides. Stir chopped white chocolate in small metal bowl set over saucepan of barely simmering water until melted and smooth. Remove bowl from over water. Finely grind cookies in processor. Add 2 tablespoons melted white chocolate and blend until mixture clumps together. Firmly press mixture onto bottom of prepared pan. Chill while making filling.
  • Beat whipping cream in medium bowl until peaks form. Beat cream cheese, sugar, lime juice, and lime peel in large bowl until smooth. Beat in remaining melted white chocolate. Fold in whipped cream in 2 additions; spread over prepared crust. Chill until filling is slightly firm, at least 2 hours. Using foil as aid, lift cheesecake out of pan. Cut into 9 bars. Garnish with chocolate curls, if desired, and lime slices or twists.

1 1/2 teaspoons vanilla
1 egg
2 1/3 cups Original Bisquick™ mix
Green food color, if desired
1 package (6 ounces) white baking bars (white chocolate), cut into chunks
1 tablespoon grated lime peel

Steps:

  • Heat oven to 350°F. Beat butter, sugars, vanilla and egg in large bowl with spoon until well mixed. Stir in Bisquick mix. Stir in 6 drops food color, white chocolate chunks and lime peel.
  • Drop dough by rounded teaspoonfuls onto ungreased cookie sheet.

2 cups gingersnaps crumbs
2 tablespoons granulated sugar
7 tablespoons unsalted butter, melted
1 large egg
4 large egg yolks
2 (15-ounce) cans sweetened condensed milk
1 cup bottled key lime juice
1 teaspoon freshly grated lime zest
Pinch salt
1/4 cup whole milk
1/4 cup heavy cream
8 ounces good quality white chocolate, chopped

Steps:

  • Preheat oven to 350 degrees F. Combine all ingredients in a bowl and press into a 9 by 13 baking dish lined with aluminum foil that extends 2 inches beyond the short end of the pan. Bake for 8 to10 minutes, remove from oven. Then reduce oven temperature to 325 degrees F.
  • Whisk all ingredients together in a medium bowl. Pour the filling over the prepared crust. Bake until the filling is almost set, about 20 to 22 minutes. Cool the bars completely in the pan set on a wire rack. Refrigerate the bars for at least 2 hours, until chilled.
  • In a medium saucepan, bring the milk and cream to a gentle boil. Add the chopped chocolate and let stand for 30 seconds to melt the chocolate. Whisk the mixture until the chocolate is completely melted and the mixture is smooth. Set the topping aside to cool to room temperature for 15 minutes, stirring occasionally, until cool. Pour the cooled white chocolate topping over the chilled bars and, using a small, offset metal spatula, spread it into an even layer. Freeze the bars in the pan for at least 1 hour before cutting.
  • Ginger Mint Syrup: 1/2 cup water 1/3 cup granulated sugar 2 tablespoons finely chopped candied ginger 1 tablespoon ginger liqueur, such as Canton 1/4 cup packed mint leaves
  • In a small saucepan, combine the water, sugar, and candied ginger and bring to a boil over medium-high heat. Continue to boil until the syrup is reduced to about 1/3 cup. Remove the pan from the heat and let the mixture cool for 5 minutes. Stir in the ginger liqueur and pour the syrup into a blender. Add the mint leaves and blend until the mint is finely chopped. Transfer the syrup to a squeeze bottle and refrigerate until chilled, at least 1 hour.

1 (18 ounce) package of refrigerated white chocolate chunk cookie dough (Pillsbury)
1 cup pistachios, chopped
1 cup shredded coconut
1 (14 ounce) can sweetened condensed milk
1/2 cup lime juice
3 large egg yolks
1/2 cup white chocolate chips, melted

Steps:

  • Preheat oven to 350°. Line a 9x13 pan with aluminum foil, leaving enough foil to hang just under the outside edge of the pan.
  • Combine the cookie dough with the pistachios and coconut.
  • Press into prepared pan and bake for 10-15 minutes.
  • Using a hand mixer, combine the sweetened condensed milk with the lime juice and the egg yolks.
  • Pour mixture over the baked cookie bar crust.
  • Bake 22-28 minutes until filling is set.
  • Drizzle the melted white chocolate over the bars.
  • Cool at least 1 hour. Refrigerate.
  • When ready to cut into bars, simply lift the aluminum foil out of the pan.
  • This step makes life a lot easier!

1 roll pillsbury create 'n bake refrigerated sugar cookie (16.5 oz)
1 cup chopped shelled pistachios
1 cup coconut
1 1/2 cups white chocolate chunks or 1 1/2 cups white vanilla baking chips
1/2 cup key lime juice, fresh lime juice or 1/2 cup thawed frozen limeade concentrate
3 egg yolks

Steps:

  • Heat oven to 350°F Grease 13x9-inch pan. In large bowl, break up cookie dough. Stir or knead in pistachios and coconut until well blended. With floured fingers, press dough mixture evenly in bottom of pan to form crust. Sprinkle 1 cup of the white chocolate chunks over dough; press lightly into dough.
  • Bake 14 to 16 minutes or until light golden brown. Meanwhile, in medium bowl, beat condensed milk, lime juice and egg yolks until well blended.
  • Remove crust from oven. Pour milk mixture evenly over crust. Return to oven; bake 20 to 25 minutes longer or until filling is set.
  • In small microwavable bowl, place remaining 1/2 cup white chocolate chunks and the oil. Microwave on High 45 seconds. Stir until smooth; if necessary, microwave 15 seconds longer. Drizzle over warm bars. Cool 1 hour. Refrigerate until chilled, about 1 hour. For bars, cut into 6 rows by 6 rows. Store in refrigerator.
