1 1/2 c. fresh cranberries (or frozen and thawed)
3/4 c. unsalted butter, softened to room temperature
1 c. granulated sugar
3 large eggs
1 tsp. almond extract
1 c. sour cream
3 c. flour
1 tsp. baking soda
1/2 tsp. kosher salt
1 tsp. baking powder
1/2 tsp. ground cinnamon
1 c. white chocolate chips
1/4 c. heavy cream

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube or bundt pan.
  • Make batter. In a large bowl, combine butter and sugar. Using a hand mixer, whip until light and fluffy. Add the eggs and mix until smooth.
  • Add vanilla and sour cream and mix until evenly incorporated.
  • Add flour, baking soda, baking powder, cinnamon, and salt and mix until just combined. Fold in cranberries and transfer batter to the prepared pan.
  • Bake for 50 minutes. Let cool on a wire rack for about 20 minutes before inverting onto a cooling rack.
  • Meanwhile, make chocolate ganache. Place white chocolate chips in a medium, heatproof bowl and set aside. Heat heavy cream in a small saucepan over medium heat. When bubbles begin to break the surface around the edges of the pan, turn off the heat. Pour the hot cream over white chocolate chips, whisking constantly until the sauce is smooth. Pour over the coffee cake and let set for about 10 minutes.

1/2 cup unsalted butter at room temperature
1 cup sugar
2 large eggs
1 cup buttermilk
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup leftover cranberry sauce (whole berry sauce preferred)

Steps:

  • Preheat the oven to 350°. Generously grease and flour a tube pan or bundt pan. Set aside.
  • In a large bowl with a hand mixer, cream together the butter and sugar. Add the eggs one at a time, beating into the batter thoroughly before adding the second egg.
  • Add the buttermilk and beat to combine. Set aside.
  • In a medium bowl combine the flour, baking powder, baking soda and salt. Whisk together until well blended.
  • Add the flour mixture to the wet ingredients and stir until just combined. Pour half the batter into the prepared pan.
  • Spoon the cranberry sauce over the batter and top with the remaining cake batter. Smooth the top with a spatula and bake for 40-60 minutes or until a cake tester comes out clean. Remove from the oven and let the cake rest in the pan for 5 minutes.

2 tablespoons butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.

1 cup sugar
3/4 cup half-and-half cream

Steps:

9 oz. BAKER'S White Chocolate, divided
2 cups flour
2 tsp. baking powder
1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
4 eggs
3 Tbsp. zest and 5 Tbsp. juice from 1 orange, divided
1-1/2 cups cranberries

Steps:

  • Heat oven to 350ºF.
  • Chop 6 oz. chocolate. Combine flour and baking powder. Beat butter and sugars in large bowl with mixer until light and fluffy. Add eggs, orange zest and 3 Tbsp. orange juice; mix well. Gradually add flour, mixing well after each addition. Stir in chopped chocolate and cranberries.
