PISTACHIO-CRANBERRY-CANDIED ORANGE BARK

1 pound white chocolate
1/2 cup chopped pistachios
1/2 cup dried cranberries
1/2 cup chopped candied orange peel

Steps:

  • Line a baking sheet with foil, shiny-side up; smooth out the creases. Make sure all your tools are dry.
  • Chop the white chocolate into 1/2-inch pieces with a large knife. Place all but 1 cup of the chopped chocolate in a microwave-safe bowl. Microwave 30 seconds, then stir with a rubber spatula. Continue microwaving and stirring at 30-second intervals until melted, 3 to 5 minutes total. Immediately add the reserved chopped chocolate to the bowl; stir vigorously until melted and shiny. Don't worry if there are a few small unmelted pieces.
  • Pour the white chocolate onto the prepared baking sheet; use the rubber spatula to spread it into a 10-to-12-inch circle, about 1/4 inch thick.
  • Press the pistachios, cranberries and candied orange peel into the chocolate, arranging them so each bite has a mix of flavors and textures. Let the bark harden completely at room temperature, about 1 hour. (If the room is warm, you may need to freeze the bark for a few minutes.) Break into pieces and store in an airtight container at room temperature for 1 to 2 weeks.

12 ounces good-quality white chocolate, finely chopped
1/3 cup roasted salted shelled pistachios
1/3 cup dried cranberries
1/4 teaspoon flaky sea salt

Steps:

  • Line a rimmed baking sheet with parchment.
  • Put 9 ounces of the chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each, until just melted. Stir in the remaining 3 ounces chocolate and let stand 3 minutes. Stir until completely smooth. If there are still some lumps, microwave in 15-second intervals, stirring well after each, to melt any remaining chocolate, but take care not to heat more than necessary.
  • Pour the chocolate onto the parchment and gently spread to a thickness of 1/4 inch. Sprinkle the pistachios and cranberries on top, pressing very lightly so they adhere. Sprinkle with the flaky salt.
  • Refrigerate until set, about 20 minutes. Break into pieces and keep refrigerated until ready to serve.

I got the basic recipe from betterrecipes.com. It did not include orange. I wanted to kick up the flavor just a bit and had a container of candied orange peel in the fridge. Wow, the orange did inhance the flavor. The original recipe said to pour into a 11x17 pan . I decided to spoon into paper candy cups. These are going into my Christmas candy boxes this year.

2 - 20 ounce(s) pkgs vanilla candy coating (such as candyquick)
2 1/2 cup(s) dried cranberries
1 cup(s) shelled, pistachios
1/4 cup(s) candied orange peel, small dice

Steps:

  • If using paper candy cups, set cups out onto a rimmed cookie sheet; set aside. Measure out cranberries, pistachios and orange peel; set aside.
  • Break up and place vanilla coating in top of a double boiler. Over low heat begin to melt coating, stirring often. Do not let steam or water come in contact with the vanilla coating. Do not let the water in bottom of pan come to a boil.
  • Once coating is melted, stir in cranberries, pistachios and orange peel. Stir until throughly combined. Remove top pan from bottom pan, using a small bowled spoon (I like using 2 iced tea spoons) scoop a small amount and drop into paper candy cups. Candy can be refridgerated to set candy. Bring to room temperature for 30 minutes before removing lid or any covering. My candy firmed up before I was finished spooning into cups. Store in air tight container with waxed paper between layers.

Cranberry Pistachio White Chocolate Truffles are super cute, and a festive no-bake dessert. They look like little snowballs, and when you try one, you'll realize they're the best bite-sized treats out there! This is the tastiest, homemade Christmas truffle recipe ever!

11 oz. white chocolate - chopped into small pieces
5 Tablespoons unsalted butter
3 Tablespoons heavy cream
pinch of salt
1 teaspoon orange or vanilla extract (optional)
1/3 cup finely chopped dried cranberries
1/3 cup finely chopped toasted pistachio
1/2 cup powdered sugar

Steps:

  • First, in a small sauce pan over low-medium heat melt butter, add heavy cream and stir just to combine.
  • Then stir in salt (and orange or vanilla extract if desired) and set aside.
  • Over a double boiler melt finely chopped white chocolate, stirring casually until smooth and completely melted. But DO NOT over heat the chocolate!!! Although, it takes some time to melt completely, but do not heat above 105 F or the chocolate will separate and be unusable (if touched with finger, it will feel about the same temperature as your body)
  • Remove from heat and using a rubber spatula gently stir in lukewarm mixture of butter and heavy cream into melted chocolate. NOTES!!!Butter and heavy cream mixture should be approximately the same temperature as melted chocolate when you combine them.
  • finally, stir in chopped cranberries and pistachio and let it sit at room temperature for an hour, cover with a plastic wrap pressed on the top of the mixture so a film does not form. Then refrigerate for 2-3 hours (until firm).
  • When the mixture is firmed, using a small spoon or a melon baler scoop out the mixture and roll into an inch balls. It might stick to your hands so clean your hands with a paper towel after rolling each ball.
  • Finally, roll each truffle into powdered sugar to coat them well.
  • Store in the fridge in airtight container up to 1 week or freeze for longer storage.

2 egg yolks
½ teaspoon vanilla extract

1 (3.4 ounce) package instant pistachio pudding mix
2 cups white chocolate chips
¼ cup whole milk
1 tablespoon grated orange zest
2 ounces roasted, salted pistachios, finely chopped

Steps:

  • Combine butter, sugar, egg yolks, and vanilla extract in large bowl. Beat using an electric mixer until well mixed. Add flour, salt, and pudding mix; beat well. Chill dough in the refrigerator for 30 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • Shape dough into 1-inch balls and place on the prepared baking sheets. Make an indentation in the center of each cookie with your thumb.
  • Bake in the preheated oven until lightly golden around the edges, 10 to 12 minutes. Remove from baking sheet and allow to cool on a wire rack, about 30 minutes.
