- Line 56 mini-muffin cups with paper liners. In a large bowl, combine butterscotch and white chips. Microwave, uncovered, on high for 30 seconds; stir. Microwave in additional 30-second intervals, stirring until smooth., Stir in extract, Rice Krispies and raisins. Drop by rounded tablespoonfuls into prepared mini-muffin cups. Chill until set. Freeze option: Freeze treats in freezer containers, separating layers with waxed paper. Thaw before serving.

- 1. Preheat oven to 350-375 degrees. Lightly grease baking sheet or use parchment. (Recipe says 375 degrees, but my oven bakes hot, so I bake at 350 degrees.)
- 2. Beat together butter,sugars, baking powder, baking soda and salt. Beat in the eggs and vanilla.
- 3. Using a blender or food processor, process the oats with the white chocolate until the oats are finely ground and the white chocolate is mostly ground.
- 4. Add the oats and flour to the butter mixture. Then stir in the peanut butter or butterscotch chips, chocolate chips and chopped nuts.
- 5. Drop by tablespoonfuls, 2" apart onto prepared baking sheets.
- 6. Bake the cookies for about 11 minutes until they are just set. They may be barely starting to brown around the edges, but the tops won't yet be brown. Don't over bake! Remove from oven and cool.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, baking soda and salt; stir into the creamed mixture. Fold in the white chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
