PAM® Original No-Stick Cooking Spray
2 cans (15 oz each) Great Northern beans
1 pound boneless skinless chicken thighs
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 cup reduced-sodium chicken broth
3/4 cup chopped yellow onion
1-1/2 teaspoons ground cumin
1 teaspoon dried oregano leaves
Sour cream and lime wedges, optional

Steps:

  • Spray inside of 4-quart slow cooker with cooking spray. Place 1 can undrained beans in slow cooker; mash with potato masher or spoon until smooth. Drain second can of beans. Place beans, chicken, undrained tomatoes, broth, onion, cumin and oregano in slow cooker; stir to combine.
  • Cover; cook on LOW 8 hours or on HIGH 4 hours.
  • Remove chicken and pull into shreds with 2 forks. Return chicken to slow cooker; stir to combine. Serve chili with sour cream and lime wedges, if desired.

3 skinless, boneless chicken breasts
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (14 ounce) can corn, undrained
2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®), undrained
1 (1 ounce) package ranch dressing mix
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 (8 ounce) package cream cheese

Steps:

  • Place chicken breasts in the bottom of a slow cooker. Pour cannellini beans, black beans, corn, and tomatoes over the chicken in order listed. Sprinkle ranch dressing mix, chili powder, cumin, and onion powder on top. Place cream cheese on top. Cook on Low until chicken is fork-tender, 6 to 8 hours.
  • Remove chicken breasts and shred with two forks or cut into bite-sized chunks. Stir chicken back into the slow cooker; mix chili thoroughly.

1 (1.25-ounce) package chili seasoning mix
1 (16-ounce) can beans in chili seasoned sauce, undrained
1 (14.5-ounce) can diced tomatoes, undrained
1 (10-ounce) can diced tomatoes u0026amp; green chilies, undrained
1 (8-ounce) can tomato sauce
1 cup water

Steps:

  • In a large saucepan over medium-high heat, cook the ground beef and chopped onion, stirring occasionally, for 5 minutes, or until the beef is no longer pink. Drain.

This recipe was passed down from a friend, and now it is one of our favorites! It's great to make whenever there is left over chicken or turkey around! We pray for colder weather in California just so we can make this soup! You can substitute additional diced tomatoes for the tomatillos. If you would like the soup to be spicier, you can add some red chili flakes or salsa. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.

1 onion, chopped
2 cloves garlic, minced
