1 head escarole, torn into pieces
1 can drained and rinsed cannellini beans
1 tablespoon extra-virgin olive oil
2 teaspoons anchovy paste
Fresh lemon juice
Shaved Parmesan
Freshly ground pepper

Steps:

  • In a large skillet, saute escarole, cannellini beans, olive oil, and anchovy paste. Finish with lemon juice, Parmesan, and ground pepper.

Lemony White Beans With Anchovy and Parmesan image

These white beans, adapted from Alison Roman's cookbook "Nothing Fancy" (Clarkson Potter, 2019), could potentially be a whole meal, but they are also great alongside another protein since they pull double duty as both starch and salad. While this dish is beautifully seasonally agnostic, it is a summery dream with grilled whole trout or lamb shoulder, and lots of cold red or white wine, preferably in the sunny outdoors.

1/4 cup olive oil
4 garlic cloves, thinly sliced
4 anchovy fillets
2 tablespoons salted capers, rinsed, or 1 tablespoon brined capers
1 teaspoon red-pepper flakes
2 (15-ounce) cans white beans, such as cannellini, Great Northern or navy, drained and rinsed
Kosher salt and freshly ground black pepper
1 head of escarole or chard, trimmed and torn into large pieces
1/2 cup fresh mint leaves
1/2 cup fresh parsley leaves, leaves and tender stems
A hunk of Parmesan or pecorino cheese, for serving
1 lemon, halved

Steps:

  • Heat the olive oil in a large skillet over medium heat and add the garlic. Cook, swirling the skillet occasionally until the garlic is pale golden brown, 3 to 4 minutes.
  • Add the anchovies, capers and red-pepper flakes, swirling until the anchovies melt and sizzle, the capers pop slightly, and the red-pepper flakes toast and bleed into the oil, about 2 minutes.
  • Add the beans and season with salt and pepper. Reduce the heat to medium-low and toss to coat the beans in all the garlicky business. Let them cook until the flavors have melded and beans no longer taste like they came from a can, 8 to 10 minutes.
  • Add half the escarole and toss to coat, letting it wilt ever so slightly. Transfer the beans and wilted escarole to a large serving platter or bowl, and mix in the remaining escarole. Scatter with the mint and parsley. Use a peeler or box grater to shave some Parmesan over all. Squeeze the lemon over everything just before serving.

4 pieces good-quality pita bread, naan, lavash, or Buckwheat Flatbread, recipe follows
White Bean Hummus, recipe follows
Caramelized Onions, recipe follows
1 cup nicoise olives, pitted and halved
Spanish white anchovies
Fresh thyme leaves, for garnish
1/2-ounce fresh yeast
1 1/2 teaspoons sugar
1 1/4 cups water, at room temperature
8 ounces bread flour, plus more if needed
3/4 cup buckwheat flour
1 teaspoon salt
2 tablespoons olive oil
All-purpose flour, for dusting and rolling
3 cups white beans, cooked, or canned, drained and rinsed
6 cloves roasted garlic
1 tablespoon harissa
2 tablespoons fresh lemon juice
3 tablespoons tahini
1/2 cup olive oil
Salt and freshly ground pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
6 large Spanish onions, peeled, halved and thinly sliced
1 tablespoon sugar
1 tablespoon finely chopped fresh thyme leaves

Steps:

  • Spread each flatbread with some of the hummus, then top with the caramelized onions, olives, and anchovies. Garnish with fresh thyme leaves. Cut into wedges and serve.
  • In an electric mixer fitted with the paddle attachment, combine the yeast, sugar, and water. Mix for 1 minute on low speed and let stand until the mixture just begins to bubble. Attach the dough hook and add both flours and the salt to the yeast mixture. Mix until it forms a mass; the dough should be sticky. Continue to add additional flour, if necessary, until the surface is dry enough to handle and dry enough to roll.
  • Divide the dough into 4 pieces, roll into balls, and lightly brush with oil. Place on a floured surface and cover the balls with plastic wrap and a clean cloth and let proof for 2 hours at room temperature; or, place on a lightly greased baking sheet, cover, and let proof overnight in a refrigerator.
  • Preheat a grill or preheat the oven to 425 degrees F.
  • To form flatbread, pat each piece of dough out into a 5-inch disk and sprinkle liberally with flour. Roll each disk, on a floured surface, into a 10-inch diameter circle. Puncture the dough liberally with a fork to keep it from rising. Grill or bake each on a pizza stone or a lightly greased sheet pan for about 5 minutes or until dough starts to get crisp on the edges but still remains chewy.
  • Place beans, garlic, harissa, lemon juice, and tahini in the bowl of a food processor and process until smooth. With the machine running, slowly add the olive oil until emulsified. Season with salt and pepper, to taste.;
  • Heat oil and butter in a large pan over medium heat. Add the onions and sugar and cook slowly until deep golden brown, stirring occasionally. Remove from the heat and stir in the thyme.

WHITE BEANS WITH ANCHOVIES

Offer thinly sliced serrano ham or prosciutto and bowls of stuffed olives and toasted almonds along with the beans.

Yield Makes 6 to 8 servings

1 pound dried Great Northern beans
7 cups water
2 small bay leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup extra-virgin olive oil
1/4 cup Sherry wine vinegar
1 2-ounce can anchovy fillets, drained, cut into 1/2-inch pieces
2 tablespoons chopped fresh parsley

Steps:

  • Place dried Great Northern beans in large pot. Pour enough cold water over beans to cover by 3 inches. Bring to boil. Boil 2 minutes. Remove from heat. Cover beans and let stand 1 hour. Drain. Return beans to same pot. Add 7 cups water and bay leaves; bring to boil. Reduce heat to medium-low; simmer 30 minutes. Add salt and pepper to beans; continue to simmer until beans are tender, about 30 minutes longer. Drain well. Transfer beans to large bowl.
  • Whisk olive oil and Sherry wine vinegar in small bowl. Add vinaigrette, anchovy fillets and chopped fresh parsley to warm beans and toss gently to blend. Season to taste with salt and pepper. Spoon onto plates and serve warm or at room temperature.

4 small red bell peppers
Coarse salt and freshly ground pepper
2 anchovy fillets packed in olive oil, minced
1 clove garlic, minced
2 teaspoons sherry vinegar
3 tablespoons extra-virgin olive oil
1/4 cup chopped fresh flat-leaf parsley
1 can (15 ounces) small white beans, drained and rinsed
1/4 ounce Parmesan cheese, grated (2 tablespoons)
1 cup packed spicy baby greens, such as watercress or arugula

Steps:

  • Char bell peppers over the flames of a gas burner, turning with tongs until blackened and blistered, about 10 minutes. (Alternatively, broil them 2 or 3 inches from heat source.) Transfer peppers to a bowl, cover with a plate, and let stand until cool. Scrape off skins with a paring knife and wipe flesh clean with a paper towel. Keeping stems intact, cut peppers in half lengthwise, then remove and discard seeds. Arrange on a platter and season with salt and pepper.
  • Whisk together anchovies, garlic, vinegar, oil, and parsley in a medium bowl. Add beans and toss to coat. Season with salt and pepper. Spoon over peppers and top with Parmesan and greens.

PENNE WITH CANNELLINI BEANS AND ANCHOVIES

This dish is very good but because it has anchovies, many people stick up their noses at it but you should try it, you might even like it.

2 garlic cloves, minced
6 flat anchovies, patted dry
1/2 teaspoon crushed red pepper flakes
1 small onion, chopped into small bits
1 small red bell pepper, chopped into small pieces
1/2 cup olive oil
1 cup fresh breadcrumb
1 teaspoon italian seasoning
1 cup cannellini beans or 1 cup other white beans, rinsed and drained
2 plum tomatoes, seeded and chopped
3/4 lb penne or 3/4 lb other penne pasta
1 (10 ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1/4 cup freshly grated parmesan cheese

Steps:

  • Combine first 3 ingredients and mince to form paste.
  • Set aside.
  • Heat 1/8 cup olive oil in a large(large enough to cook pasta, as well) nonreactive pot over medium high heat.
  • Add breadcrumbs and cook 3-4 minutes, until crisp, stirring constantly.
  • Stir in Italian seasoning and pepper, to taste.
  • Transfer to a bowl and set aside.
  • Wipe pot clean with a paper towel.
  • Heat remaining oil in same pot over medium high heat.
  • Sauté onion and red pepper, till soft(about 5 minutes).
  • Add garlic paste and cook 1 minute, stirring constantly, until garlic begins to soften.
  • Stir in beans, tomato, and salt & pepper to taste.
  • Cook about 1 minute until heated throughout.
  • Transfer to a large bowl.
  • Using same pot, cook pasta in boiling salted water 5 minutes.
  • Add spinach and cook another 5 minutes, or until pasta is al dente.
  • Drain through a colander, removing as much liquid as possible.
  • Lightly stir pasta into bean mixture.
  • Serve sprinkled with breadcrumbs and Parmesan cheese.
