Yield Makes 12 mini bundt cakes

Number Of Ingredients 11

Unsalted butter, softened, for molds
2 1/4 cups cake flour, plus more for molds
2 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups heavy cream, chilled
3 large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup plus 2 tablespoons superfine sugar
Nonstick cooking spray
Whipped cream, for serving (optional)
Berries, for serving (optional)

Steps:

  • Preheat oven to 375 degrees with rack set in lower third of the oven. Brush 12 mini Bundt cake molds with butter and dust with flour; set aside.
  • In a medium bowl, whisk together flour, baking powder, and salt. Sift flour mixture twice and set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, whip cream on low, until soft peaks form. Gradually increase speed to medium-high as cream thickens, and whisk until stiff peaks form, about 3 minutes.
  • In a medium bowl, whisk together eggs and vanilla. With the mixer on medium-high, gradually add egg mixture; beat until thickened (like mayonnaise) and well combined. Gradually add sugar, about 30 seconds.
  • Remove the whisk attachment from the mixer. Using the whisk attachment, gently fold half the flour mixture into the cream mixture until flour is dissolved and well combined. Repeat process with remaining flour mixture. Using a large pastry bag, pipe batter into prepared cake molds and run a small metal spatula or dull knife through batter to prevent large air bubbles from forming, avoiding bottom of the pan. Smooth surface evenly with a small metal spatula.
  • Transfer pans to oven and bake until cakes springs back when lightly pressed with your finger and a cake tester inserted into cakes comes out clean, 18 to 20 minutes. Transfer cake pans to a wire rack and let cool 10 minutes; cakes will begin to shrink from sides of pan.
  • Spray a wire rack with nonstick cooking spray. Using a metal spatula, loosen top edges of cakes and invert onto prepared wire rack. Let cool completely. Serve with whipped cream and berries, if desired.

A friend served these at a dinner party a few years back and I HAD to have the recipe. Given my friend, I'm assuming the recipe came from Bon Appetit at some point.

1 cup flour
3/4 cup unsweetened cocoa powder
6 teaspoons instant espresso powder
1/2 tablespoon baking powder
1 cup salted butter, melted
1 cup sugar
1 cup golden brown sugar, packed
4 large eggs
1/2 tablespoon vanilla extract
1/4 teaspoon almond extract
3/4 cup semi-sweet chocolate chips
1 cup chilled whipping cream
3 tablespoons powdered sugar

Steps:

  • Sift flour, cocoa, 5 teaspoons espresso powder and baking powder into a medium bowl.
  • Put butter in a large bowl. Add white and brown sugar and whisk to blend well. Whisk in eggs one at a time. Whisk in vanilla and almond extracts.
  • Whisk in dry ingredients.
  • Divide batter among six 1 cup ramekins. Top each with 2 tablespoons chocolate chips. Gently press chips into batter.
  • Cover and refrigerate for several hours.
  • Whip cream, powdered sugar and remaining espresso powder together into whipped cream.
  • Preheat oven to 350F, rack in center position. Remove ramekins from refrigerator and let stand at room temperature for 5 minutes. Bake uncovered for about 30 minutes, or until cakes are puffed and crusty but a toothpick inserted into the center comes out with a thick batter attached.
  • Cool cakes for five minutes and serve hot, topped with the whipped cream.

12 tablespoons semisweet chocolate chips (about 4 1/2 ounces)
1 cup chilled whipping cream
3 tablespoons powdered sugar

Steps:

  • Sift flour, cocoa powder, 5 teaspoons espresso powder, and baking powder into medium bowl. Place butter in large bowl; add both sugars and whisk until well blended. Whisk in eggs 1 at a time, then vanilla and almond extracts. Whisk in dry ingredients. Divide batter among six 1-cup ovenproof coffee mugs (about 2/3 cup in each). Top each with 2 tablespoons chocolate chips. Gently press chips into batter. Cover and refrigerate mugs at least 1 hour and up to 1 day.
  • Combine cream, powdered sugar and remaining 1 teaspoon espresso powder in medium bowl; whisk until peaks form. Chill up to 1 hour.
  • Position rack in center of oven and preheat to 350°F. Let mugs with batter stand at room temperature 5 minutes. Bake uncovered until cakes are puffed and crusty and tester inserted into center comes out with thick batter attached, about 30 minutes. Cool cakes 5 minutes. Top hot cakes with espresso whipped cream and serve.

1 1/4 sticks (10 tablespoons) unsalted butter
2 tablespoons all-purpose flour plus additional for dusting molds
1 cup dried cranberries (4 1/2 oz)
1/4 cup plus 2 teaspoons bourbon
7 oz fine-quality bittersweet chocolate (not more than 60% cacao if marked), chopped
1/4 cup pecans, toasted and cooled
3 large eggs, separated
1/2 cup packed light brown sugar
1/2 cup chilled heavy cream
1 teaspoon confectioners sugar plus additional for dusting
Special Equipment
parchment paper; 4 (4- by 1 1/4-inch) tartlet molds with removable bottoms or 4 (8-oz) ramekins (4 inches across and 1 1/4 inches deep)

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Cut out 4 rounds of parchment paper to fit just inside bottom of each mold, then set rounds aside. Melt 2 tablespoons butter, then brush molds with some of it. Line bottom of each mold with a round of parchment and brush parchment with some melted butter. Chill molds 5 minutes (to set butter), then brush parchment and side of each mold with more melted butter. Chill molds 5 minutes more. Dust molds with flour, knocking out excess, and set aside.
  • Simmer cranberries and 1/4 cup bourbon in a small saucepan over low heat until cranberries are tender and bourbon is absorbed, about 5 minutes. Remove from heat.
  • Melt chocolate and remaining stick butter in a small heavy saucepan over low heat, stirring constantly, until smooth. Remove from heat and cool 10 minutes.
  • Pulse pecans with flour (2 tablespoons) in a food processor until finely ground, being careful not to process to a paste.
  • Beat together yolks and brown sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Add chocolate mixture and beat until just combined, then stir in pecan mixture and cranberries.
  • Beat whites with a pinch of salt in another bowl using cleaned beaters until they just hold stiff peaks. Fold one third of whites into chocolate mixture to lighten, then fold in remaining whites gently but thoroughly.
  • Divide batter among molds (they will be very full), then put molds in a shallow baking pan and bake until a wooden pick or skewer inserted into center of a cake comes out with tip wet and remainder of pick dry, about 25 minutes. (Batter will rise above rims but will not spill over.) Transfer cakes to a rack and cool in molds 30 minutes. (Cakes will continue to set as they cool.)
  • Beat cream with confectioners sugar and remaining 2 teaspoons bourbon in a small bowl using cleaned beaters until it just holds soft peaks.
  • Remove side from each mold, then slide each cake from bottom onto a dessert plate, discarding parchment. Lightly dust each cake with confectioners sugar and serve with a dollop of bourbon whipped cream.

I love Mexican Hot Cocoa and to have a "Cup" cake with it Fabulous..they make a great pair...These will be fantastic for a party on the holidays...Or great for single servings for people that are diabetic to switch and use Stevia, or Splenda..didn't have a picture on hand so used a stock photo till I do have one ....Enjoy

MEXICAN HOT CHOCOLATE "CUP" CAKES
1 c flour
1 c sugar, divided (opt) splenda/stevia
6 Tbsp cocoa powder, divided
2 tsp baking powder
2 tsp red chili powder
1 tsp cinnamon, saigon
1/4 tsp salt
1/2 c evaporated milk
1/4 c cooking oil
1 tsp pure vanilla extract
1 c water, boiling
COCOA WHIPPED CREAM
3/4 c heavy whipping cream
2 Tbsp confectioners' sugar
1 Tbsp cocoa powder
1/2 tsp pure vanilla extract
OR 1/2 TSP KALUHA

Steps:

  • 1. For the Cakes, preheat oven to 350°F. Generously spray 8 (6-ounce) oven proof coffee cups or ramekins with no stick cooking spray with flour or grease and flour cups. Place on large baking sheet.
  • 2. Mix flour, 2/3 cup of the granulated sugar, 4 tablespoons of the cocoa powder, baking powder, red chili powder, cinnamon and salt in large bowl. Stir in milk, oil and vanilla. (Batter will be stiff.) Spoon evenly into prepared cups. Mix remaining 1/3 cup granulated sugar and 2 tablespoons cocoa powder in small bowl. Sprinkle evenly over batter. Spoon 2 tablespoons boiling water into each cup. (Do not stir.)
  • 3. Bake 15 to 20 minutes or until tops are dry to the touch. Cool cups slightly on wire rack.
  • 4. For the Cocoa Whipped Cream, beat cream and confectioners' sugar in medium bowl with electric mixer on high speed until soft peaks form. Add cocoa powder and vanilla or Kaluha; beat until stiff peaks form. Serve cakes in coffee cups while still warm. Dollop with Cocoa Whipped Cream. Sprinkle with additional cinnamon, if desired.
  • 5. Tips Make Ahead: Prepare and bake cakes as directed. Store in refrigerator overnight. To reheat cakes, microwave on HIGH 30 to 60 seconds or until heated through. Recipe for Cocoa Whipped Cream can be doubled. Serve remaining whipped cream on other desserts, hot cocoa or coffee beverages. Or you can serve it on Bonnie's Mexican Hot Chocolate

1 large whole egg
1 large egg yolk
1/2 teaspoon vanilla extract
1/2 cup granulated sugar
2/3 cup well-chilled heavy cream
3/4 cup cake flour (not self-rising)
1 teaspoon double-acting baking powder
1/4 teaspoon salt
confectioners' sugar for dusting the cakes
fresh peaches, peeled and sliced, for garnish
fresh raspberries for garnish

Steps:

  • In a bowl with an electric mixer beat together the whole egg, the yolk, the vanilla, and 1/4 cup of the granulated sugar until the mixture is thick and pale. In a bowl beat the cream with cleaned beaters, adding the remaining 1/4 cup granulated sugar, until the mixture holds soft peaks. Fold the egg mixture into the whipped cream mixture. Into another bowl sift together the flour, the baking powder, and the salt and fold the flour mixture into the cream mixture.
  • Divide the batter among 6 buttered and floured 1/2-cup muffin tins and bake the cakes in the middle of a preheated 350°F. oven for 18 to 20 minutes, or until they are golden. (The batter will flow over the rims slightly.) Let the cakes cool in the tins on a rack for 10 minutes and turn them out onto the rack, leaving them upside down. Dust the cakes with the confectioners' sugar and serve them with the peaches and the raspberries.
