1 tablespoon green bell pepper, chopped
1 tablespoon scallion, chopped
1 tablespoon red bell pepper, chopped
1/2 cup liquid egg substitute
3 tablespoons low-fat cheese, shredded

Steps:

  • Lightly coat a medium skillet with cooking spray.
  • Saute the peppers and scallions until they are tender-crisp.
  • Pour the egg substitute over the vegetables.
  • When partially set, spread the cheese over 1/2 the eggs, and fold the omelet in half over the filling.
  • Continue cooking until cooked through.

While on a diet, I was trying to find a recipe for a healthy alternative to a western omelet. I decided to try my own combination of eggs, ham, cheese, and vegetables. It was a delightful surprise, and very filling!

3 large egg whites
1/8 cup(s) chopped onions
1/8 cup(s) chopped bell pepper
1/8 cup(s) chopped tomato
1 slice(s) lean ham, chopped
1 - 2 slice(s) pepperjack cheese (or any other type)
- non-fat cooking spray

Steps:

  • mix egg whites, vegetables, ham in small bowl. Spray frying pan with non-fat cooking spray over medium heat until hot. Add egg mix to pan and let it cook on 1 side until done.
  • Flip omelet over to undone side, place cheese slice(s) in center, and roll edges up to cover. Cook over low heat until done.
  • Serve with fruit slices or hash brown potatoes.

A delicate omelet accented with red and green bell peppers, onions and cheese

PAMĀ® Original No-Stick Cooking Spray
2 tablespoons finely chopped green bell pepper
2 tablespoons finely chopped red bell pepper
1 tablespoon finely chopped onion
3/4 cup Egg BeatersĀ® 100% Liquid Egg Whites
3 tablespoons shredded reduced-fat Cheddar cheese

Steps:

  • Spray omelet pan or small skillet with cooking spray; heat over medium heat. Add bell peppers and onions; cook 3 minutes, or until vegetables are crisp-tender, stirring frequently. Spread vegetables evenly onto bottom of pan. Pour Egg Beaters over vegetables; cook 7 minutes, or until Egg Beaters are almost set in center, carefully pushing cooked Egg Beaters to center of skillet with spatula and tilting skillet as necessary to allow uncooked portion to flow underneath. Sprinkle with cheese; fold omelet in half. Slide onto serving plate.
