This delicious summer grill recipe was printed in a recent magazine. I believe it was Cooking Light. We really enjoyed it and will make it often.

Number Of Ingredients 12

1 1/2-2 lbs boneless skinless chicken breasts
1/4 cup balsamic vinegar
1/4 cup frozen orange juice concentrate, thawed
1 tablespoon oil
1/2 cup chopped cilantro leaf
1 teaspoon salt
2 cloves crushed garlic
1/2 teaspoon ground black pepper
4 kiwi fruits, peeled and cut
1 cup chopped yellow bell pepper (1 small)
1 cup chopped strawberry (about 8)
1/4 cup minced red onion

Steps:

  • Whisk together vinegar, orange juice concentrate, oil, cilantro and salt.
  • Remove 2 tbsp of mixture and set aside for salsa dressing.
  • Add garlic and pepper to remaining mixture for marinade.
  • Place marinade in a 1-gallon sealable plastic bag or shallow glass dish with chicken; turn to coat.
  • Let stand 20- 30 minutes; turn chicken occasionally.
  • Meanwhile, prepare salsa.
  • Peel kiwi.
  • Cut crosswise into 1/4" thick slices; stack slices and cut into quarters.
  • Toss kiwi in reserved dressing with pepper, strawberries and red onion.
  • Set aside.
  • Heat charcoal 30 minutes until coals are covered with a light layer of gray ash, or heat gas grill 10 minutes with lid closed.
  • Grill chicken 5- 7 minutes per side over medium coals (375 degree grill surface temperature).
  • Remove from grill when a meat thermometer inserted horizontally into the thickest part of the the breasts reads 160.
  • Serve chicken with salsa, black beans and french bread.

1 cup thawed orange juice concentrate
1/3 cup butter, melted
4 teaspoons soy sauce
2 teaspoons salt
2 teaspoons ground ginger
1/4 teaspoon pepper
5 pounds bone-in chicken thighs, skin removed

Steps:

  • In a small bowl, combine the first six ingredients. Place chicken in a single layer in two greased 11x7-in. baking dishes; spoon sauce over the top. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 1 hour or until juices run clear, basting with sauce once with during cooking.

3 -4 ripe kiwi fruits, peeled, carefully chopped
1/4 cup pomegranate seeds (arils)
1/2 avocado, peeled and chopped
1 tablespoon green onion, thinly sliced
1 tablespoon chopped jalapeno pepper (fresh or canned)
1 tablespoon chopped fresh cilantro
1 teaspoon olive oil
salt and pepper

Steps:

  • Place the kiwifruit, pomegranate seeds, avocado, green onion and olive oil in a medium sized bowl.
  • Starting with just a teaspoon of chopped jalapeño, gently fold in and add more to your desired level of heat. Add cilantro. Add salt and pepper to taste.
  • Makes about 1 1/2 cups.

WEST COAST WHITEBAIT PATTIES

Whitebait is a bit of a delicacy in New Zealand, and whitebait from the West Coast of the South Island is the best. The idea is to have more whitebait than batter, however it you go to a restaurant you will probably find that it's the other way round! West Coasters also serve them with mint sauce which is very tasty. Another thing to do is heat the oven to 50degrees C, and butter 4 slices of white bread. Put these on a plate in the oven (butter side up) and as each whitebait pattie is cooked put them on the bread. Us kids used to fight over the bread at the end as it tastes yummy(strange but true).

3 eggs, beaten
1/2 cup milk
3/4 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
500 g whitebait
2 tablespoons light vegetable oil (for frying) or 2 tablespoons butter (for frying)

Steps:

  • Beat the eggs in a large bowl, then mix in the milk.
  • Season with salt & pepper to taste.
  • Lightly beat through the flour & baking powder to ensure there are no lumps. Add the flour slowly - the mixture should be thick & runny but not too gloopy.
  • In a colander, rinse the whitebait and pick out any river stones or other debris.
  • Drain, and mix into the egg mixture until well combined.
  • Heat a frying pan on medium-high heat, and once heated, add the butter/olive oil.
  • Drop in dessert-spoonfuls of the whitebait mixture, and cook until the pattie is set (& starts to go golden on the underside). The whitebait will normally have gone white at this stage.
  • Turn, and cook on the other side until golden.
  • Keep warm in the oven until ready to serve, in my house they get eaten as fast as they are cooked!
