Where I'm from, they're just called 'Wings.' I've made this recipe for as long as I can remember - hopping from my hometown of Buffalo, NY, to Raleigh, NC, now to Seattle, WA. This wing recipe has been sought after by many that have tasted them, and I've never given up the recipe or prep method...until now.

1 gallon peanut oil
25 chicken wings, segmented and patted dry with paper towels
⅓ cup unsalted butter, melted
½ cup hot pepper sauce (such as Frank's RedHot®)
1 tablespoon garlic powder
1 tablespoon coarse-ground black pepper

Steps:

  • Heat oil in a deep-fryer or kettle to 375 degrees F (190 degrees C).
  • Gently add the wings, one at a time, to the hot oil. Stir gently to assure the wings do not stick together. Fry the chicken wings in the preheated oil until cooked through and the are floating gently atop the oil, about 15 minutes. An instant-read thermometer inserted into the thickest part of the wing should read 180 degrees F (82 degrees C).
  • Stir the melted butter, hot pepper sauce, garlic powder, and black pepper together in a large mixing bowl until thoroughly combined. Add the cooked wings to the sauce and turn to coat; transfer to a serving platter.

1 cup LEA & PERRINS Worcestershire Sauce
1/4 cup pineapple juice
1/4 cup honey
2 lb. chicken wings, split at joints, tips removed

Steps:

  • Mix all ingredients except wings until blended. Pour 1 cup over wings in large bowl; stir to evenly coat all wings with Worcestershire sauce mixture.
  • Refrigerate 1 hour to marinate, turning occasionally.
  • Heat oven to 350°F. Drain wings; discard marinade. Place wings on foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 45 min. or until done, turning and brushing frequently with remaining Worcestershire sauce mixture for the last 15 min.

1 cup thawed orange juice concentrate
1/3 cup butter, melted
4 teaspoons soy sauce
2 teaspoons salt
2 teaspoons ground ginger
1/4 teaspoon pepper
5 pounds bone-in chicken thighs, skin removed

Steps:

  • In a small bowl, combine the first six ingredients. Place chicken in a single layer in two greased 11x7-in. baking dishes; spoon sauce over the top. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 1 hour or until juices run clear, basting with sauce once with during cooking.
