100g unsalted butter , melted and warm
500g white onion , sliced
1 rosemary sprig
1kg Desiree or Maris Piper potatoes

Steps:

  • Heat about a quarter of the butter in a large pan, set over a medium heat. Sweat the onions with a little salt and the rosemary sprig. Slowly cook on a gentle heat with a lid on for about 20 mins. Remove rosemary and set aside.
  • Heat oven to 190C/170C fan/gas 5. Peel the potatoes and immediately cut into wafer-thin slices directly into a bowl containing the rest of the warm butter. Season with salt and pepper. The thinner the potatoes, the better the dish will be. Do not wash them once they are sliced, as you want all of the starch to stick the potatoes together.
  • Line an ovenproof, non-stick frying pan with a round of baking parchment. Layer potatoes neatly into the dish in a circle, slightly overlapping. The bottom of the pan will become the presentation side. Continue to pile in half of the potatoes, then add the melted onions. On top of the onions continue with the potatoes until all used up. Set the pan over a medium heat and gently begin to colour the bottom of the dish for 5 mins, then transfer to the oven and cook for 45-50 mins until the potatoes are soft.
  • Remove from the oven and leave to rest for 10 mins. Invert onto a serving plate, then slice into wedges with a very sharp knife.

200g butter , plus extra for the tin
drizzle of oil
3 large onions , thinly sliced
1 leek , sliced
1kg floury potatoes , such as Maris Piper or Désirée, peeled and thinly sliced (use a mandoline or the fine slicing blade of a food processor)
150g Caerphilly cheese, crumbled (or another sharp, crumbly cheese)

Steps:

  • In a large pan, heat a knob of the butter with a drizzle of oil. Once the butter is foaming, add the onions, leek and some seasoning and cook for 15 mins until the onions are soft and sticky, stirring occasionally. Butter a 22cm cake tin or baking dish (alternatively, you can assemble the cake in the pan you're already using if it's ovenproof).
  • In a separate pan, melt the remaining butter. Toss the sliced potatoes with the melted butter and plenty of seasoning. Heat oven to 200C/180C fan/gas 6.
  • Arrange the potato slices over the base of the dish in a spiral or in concentric circles. Top with some of the onion mix, sprinkle over a layer of cheese and continue layering, finishing with a final round of potato slices. Press down firmly with your hands to compact the layers. Bake for 45-50 mins until the potatoes are golden brown and tender; cover with foil if the cake starts to take on too much colour. Turn out onto a plate to serve.

1/2 c unsalted butter, melted and warm
1 lb onion, either sliced or finely chopped
1 rosemary sprig
2 lb potatoes, thinly sliced (desiree or maris piper recommended)
2 tsp fresh thyme, optional
salt and pepper
4 oz caerphilly cheese, optional

Steps:

  • 1. Heat about 1/4 of the butter in a large pan, set over medium heat.
  • 2. Sweat the onions with a little salt and the rosemary sprig. Slowly cook on a gentle heat with a lid on for about 20 minutes. Remove rosemary and set aside.
  • 3. Grease an oven proof dish and on the bottom of the dish, place a thick layer of potatoes, well seasoned with salt and pepper.
  • 4. Add a layer of onions.
  • 5. Dot each layer with butter and thyme (if using), and repeat this again, or until the dish is full, ending with a layer of potatoes.
  • 6. The top layer should also be dotted with butter, using more than given above, if necessary. Cover with a lid or foil and bake in a moderate oven (350F.) for about one and a half hours, removing the lid for the last half hour.
  • 7. Note: The variety of potato makes it difficult to give a precise cooking time: very floury ones can cook in 1 hour where as waxy ones will take longer. If using the cheese, sprinkle a little bit on each layer.

about 1 Tbsp vegetable oil (to grease baking dish)
2 lb potatoes, peeled and thinly sliced
1 tsp salt
1 tsp black pepper
1 cup grated caerphilly cheese (you can use cheddar if you can't find caerphilly)
1 medium onion, peeled and finely chopped
1/2 cup butter, cut into thin pats
1 to 2 Tbsp fresh chives, chopped

Steps:

  • 1. Preheat oven to 350°F (180°C). Grease bottom and sides of a baking dish with the vegetable oil.
  • 2. Place half of the potato slices in the baking dish, and season them with salt and pepper. Sprinkle the grated cheese over the potato layer. Layer the onions over the cheese, and dot onions with bits of butter. Add another layer of seasoned potatoes and dot with butter (use more butter for this, if needed). Distribute the snipped fresh chives on top.
  • 3. Cover the baking dish, and bake for 50 minutes. Remove cover and bake an additional 20 to 40 minutes.

800 g floury potatoes, such as king edwards or maris piper (approx 1 1/2 lbs)
100 g melted butter (approx 3 1/2 oz)
400 g white onions, sliced
2 racks of lamb, each with 6 bones
1 sprig rosemary

Steps:

  • 1. Preheat the oven to 200C/gas 6. (400F).
  • 2. Peel the potatoes and slice very finely with a mandolin or sharp knife.
  • 3. Toss with the melted butter and season with plenty of salt and black pepper.
  • 4. Brush a shallow ovenproof dish with a little a little more melted butter.
  • 5. Layer the potato and onion in the dish, starting with potato and finishing with a neat layer of overlapping potato slices.
  • 6. Drizzle any remaining butter over the top.
  • 7. Cover the dish with foil and bake in the oven for 1 hour.
  • 8. Meanwhile, take the lamb out of the fridge to come to room temperature.
  • 9. After the onion cake has had an hour in the oven, remove the tin foil.
  • 10. Sit the lamb racks on top with their bones interlaced and tuck the rosemary sprig in the middle.
  • 11. Return to the oven for 15-25 minutes, depending on the size of the racks and how you like your lamb cooked.
  • 12. By now the potatoes should be beautifully tender and browned on the top.

3 large all purpose potatoes (about 2 lbs total,) peeled and halved crosswise
2 medium onions (about 8 oz total), peeled quartered and ends cut flat
4 tablespoons unsalted butter, melted
1 teaspoon dried savory
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425F. Slice the potatoes and onions separately with the medium slicing disc of a food processor. Spread 1/4 of the potatoes in a greased 1 1/2 qt casserole dish 2 1/4 inches deep and top with 1/3 of the onions, 1 tablespoon butter, 1/4 teaspoon savory, and salt and pepper. Continue layering the ingredients, ending with a layer of potatoes drizzled with butter and sprinkled with the seasonings. Bake in the preheated oven until the top is browned and the potatoes are tender, about 1 1/2 hours.
